This is a great selection of soups, Melissa - thanx for gathering these! One of my favorites is a Martha Stewart lentil soup:

I don't use the mushroom stock she recommends; I simply use a low-sodium vegetable stock. And while I usually have puy (French) lentils on hand, I have substituted brown lentils before.
