2.) post 1 healthy holiday recipe daily -- -- Made my own version of a Mexican Enchilada Casserole for the family. Nothing about it is holiday-ish, but... :)

December 6th

4.) post (if applicable) how you avoided your personal holiday sabotage(s) -- -- went to a party after church. I did pretty good. Yay! There were lots of different foods to eat, but, about 75% of what I ate were greens. Other than that, I had a cup of red beans and rice, 4 chips and a half of a small cookie. I quickly shoved the other cookie half on my husband's plate. Now, what I avoided... the list goes on and on... guacamole, more chips, cake, more cookies, pasta dishes, bread, fried foods, etc.

4.) My holiday recipe is: Hummus and Cucumber Bites (easy to make and easy to carry to parties as a healthy alternative!)

Hummus and Cucumber Appetizer Bites with Sesame Seeds
(Recipe adapted from Cucumber Rounds with Hummus and Yogurt at Fine Cooking.)

cucumbers, as many as desired (One large cucumber will make 10-14 appetizer bites)
hummus (use purchased hummus, or see links to hummus recipes after the recipe)
black or white sesame seeds

materials needed: one small Ziploc bag or other thick plastic bag with one corner cut off

Peel cucumbers, either leaving strips of green (if the cucumber has thin skin) or peeling all the skin (if the cucumber has thick waxy skin. Slice cucumber(s) into thick slices about 3/4 - 1 inch thick. If the cucumbers seem watery, use a paper towel to press down on both sides to absorb some of the water and dry the surface of the cucumber.

Put hummus into a small bag made of thick plastic. (I used about 1/2 cup hummus to make 14 appetizers; you can always add more hummus to the bag as you're making them.) Cut off one corner of the bag so you can squeeze the hummus out, taking care not to make the hole too big.

Arrange cucumber slices on a plate or serving tray, then squeeze a mound of hummus on to the top of each cucumber slice. Sprinkle slices with sesame seeds just before serving.

Hi Emma! So glad you joined us! ...:::that's a serious dodge.... these emoticon are so tempting to me too!


....yesterday, I had 40 fitness minutes....didn't have time to post them as I was with my sister in the ER....now I am on the way to the hospital to care for her.

update - ....lots of steps at the hospital today. emoticon that means fitness minutes. My sister is better and I am headed back to the hospital to be with her....because she requested me. I love it that she asked for me! emoticon emoticon .

here's that recipe...

INGREDIENTS:
4 apples, cored & sliced
1/2 cup honey
3/4 tsp.nutmeg
3/4 tsp. cinnamon
1/3 cup plain nonfat Greek yogurt
1/2 cup oats
1/2 cup Grape-Nuts cereal


DIRECTIONS:
Preheat oven to 350F.
Spread apples evenly in the bottom of a 913 baking dish.
In one bowl, combine honey, nutmeg, and cinnamon.
In another bowl, combine yogurt, oats, and Grape-Nuts until crumbly.
Pour the honey mixture over top of the apples, and then crumble the oat mixture evenly over the entire dish.
Bake for 30-40 minutes, until apples are soft.

My Thanksgiving share is - I minimized on the food and maximized on the fellowship with others. It worked. I plan to repeat this behavior during the Christmas holiday.

I plan to drink my usual 10 glasses of water, make a wintry vegetable based soup to keep me full and satisfied, and I will be back to log those fitness minutes.

Yes, you guessed it - it's that time again. emoticon - time for our monthly team challenge. Our challenge begins December 1st and runs through December 7th..::::ALL are welcome - the more the merrier! emoticon


emoticon Tis' the season to be jolly! emoticon ....:::and we need a PLAN to jumpstart this glorious Christmas month off the right way. I don't know about you, but I need a 7 day strong start to help me stay consistent throughout all of December.
