I'm hoping all of the Pittsburgh team buys the cookbook ~ there's a local girl in there - me!
I got to try some of the recipes last summer and enjoyed most every one I tried.

The recipes all sound delicious, and I love the beef stroganof recipe! I will have to try it with yogurt next time.

I'm thinking if you don't mind experimenting I bet you could reduce the fat and therefore the calories in the first by using half as much butter maybe even a third as much and drop the olive oil to about a tablespoon or a tablespoon and a half. Otherwise they look good.
Tonight I made the Better for you Beef stroganoff from the new cookbook - subbed plain greek yogurt for the sour cream but it was tasty AND filling. =)

Lemon Oregano Chicken (also from a magazine)

Cooking Time: 12 mins

Toss 8 trimmed boneless, skinless chicken thighs (2 lbs) with 3 tbsp of lemon juice, 3 tbsp olive oil, 2 tbsp chopped fresh oregano leaves, 2 tsp garlic paste, and 1/2 tsp crushed red pepper flakes and 1/2 tsp kosher salt. Cook on hot a stove top grill pan for 12 minutes, turning once or twice until completely cooked.

(I actually thought it was too much red pepper flakes),

Makes 4 servings

I love breaded chicken, so I tried this recipe last night. I found it in a food magazine at my mom's house!

Oven-Baked Parmesan Chicken

Prep time: 10 minutes Bake Time: 50 minutes

Ingredients:
1/2 cup all purpose flour
1/2 cup freshly grated Parmesan cheese (I didn't use fresh grated, it still tasted amazing)
2 tsp. dried basil leaves
1 tsp. dried oregano leaves
1/2 tsp. salt
1/2 tsp. pepper
6 split chicken breasts (I flattened them so they would cook evenly)
1/3 cup milk
1/4 cup butter, melted (which you can skip to lower the calories and fat)

Heat oven to 400. In pie pan or dish mix together everything EXCEPT chicken, milk, and butter. Dip the chicken into the milk, then fully coat in the mixture in the pie pan. Place the coated chicken breasts in a 13x9 baking pan. Drizzle with butter. Bake for 45-50 minutes or until chicken is tender and golden brown.

Makes 4 servings.

Okay, I know I'm localizing this a bit but I was wondering if anybody had a recipe for a low fat/low calorie version of Pizza Joe's ,( New Castle/Ellwood City/Beaver Falls,) veggie pizza. Being it's a veggie pizza it should be low fat already but it is dripping with ranch dressing and cheese.

I just made the most delicious turkey meatloaf!!! It was spicy but not too spicy and low calorie, high protein!

Search my recipes for turkey meatloaf, and below is a list of ingredients. It was really easy to throw together, but did take about 45 min to cook. I would suggest make it the night before and cook it the next day. I love doing that!

Ingredients:
1lb Ground Turkey
1/2 cup onions
1/2 cup bread crumbs
1/2 cup salsa (I love Ariba roasted pepper salsa)
cumin
cayenne pepper
1 egg
some sort of veggie- i added corn because my boyfriend doesn't like peppers, but the original recipe called for red and yellow bell peppers. Plus we did not have bell peppers in stock at our house.
flaxseed- i would add this for extra nutrients and omega 3 fatty acids. I forgot to add it to this recipe but I plan on adding it next time.

I have a great seasonal recipe posted on spark recipes

Whipped Pumpkin Dip - easy, low cal/fat alternative to pumpkin pie!

Check it out in spark recipes for the nutrition but here it is:

one can pumpkin
one box french vanilla pudding (I used the cooked, others have used the instant)
1/4 cup brown sugar (this can be left out - not really necessary)
your favorite pumpkin pie spices
1 lowfat/fat free cool whip tub.

Blend it all together and chill.
Serve with graham cracker sticks, ginger snaps or nilla wafers - whatever cookie you like to dip with. Great for kids.

I have an awesome recipe I wanna share! Someone gave it to me in WW years ago and to this day I still make it...it's high in fiber and really low in fat...My family alaways just called it simply:

Bean S*@T!

Make a package of spanish rice as the package instructs...

Add...
~1 can of black beans
~1 can of garbonza beans
~1 can of red kidney beans
~1 can of corn
~1 jar of salsa
~1 small onion chopped up

Simmer it all together! Easy! Awesome! Enjoy!

smoothie

1 cup frozen/fresh assorted berries
.5 cup skim milk
1 serving your choice flavored yogurt
splenda to taste.

I also used to mix my fruit wit ice to make a smoothie but making it with frozen berries worked out MUCH better, this is so smooth and creamy! :D

This is something I found in a magazine and now it's my favorite thing to make for breakfast or dinner if I'm in a hurry.

1 whole-wheat pita
3 eggs
1 oz. mozzarella cheese
salt and pepper
oregano

Scramble 2 egg whites and 1 egg and add salt and pepper to taste. Place pita in the oven on broil (high) for about 3 minutes or until crispy. Then pile the scrampled eggs onto the pita, sprinkle oregano (to taste) and mozzarella cheese on top of eggs. Place back into oven to melt cheese. Take out of oven and enjoy.

It so hardy you'll be full for hours. Also it's fun to play around with different spices or cheeses. It can be whatever you want it to be!
