Gave this recipe a try for frozen fudge pops. It uses gelatin. I really like these. At first they are "too hard" for my preferences but in this Texas heat it doesn't take long for the texture to get JUST right!

Just made a recipe which turned out lovely! I'm making this specifically for some low-carbers to enjoy with lamb at an upcoming social event, so I made homemade mint jelly. This recipe would work just as well making jelly with any herb, fruit (raspberries, blueberries, blackberries or other lower carb fruit works great) or indigestible pure essential (peppermint, orange, lemon, lime) or flavoring oil (almond, vanilla, maple flavorings, etc).

Sugar-Free Jelly

1 cup water
flavoring (see list above)
2 teaspoons unflavored gelatin
2 Tablespoons lemon juice
1/2 cup sweetener

Method:
In a small container, measure lemon juice into the container. Add to the lemon juice the 2 teaspoons of unflavored gelatin. Stir this mixture together and set it aside for later.

Put the water into a sauce pan and bring it to boil. If you are going to use a low-carb fruit or a whole herb as your flavoring, add it to the water now. Cover it with a lid. Turn off the heat. Let it steep. For either the berries or a whole herb, you can strain it when it has finished steeping so that the water is full bodied with the flavor. With berries, you can leave them or even blend them in the water.

Now that you have the flavored water ready, turn the heat back on. Add the sweetener and let it dissolve, stirring as needed. Once the sweetener is dissolved, add the lemon-gelatin mixture and stir to mix it in. While hot, it will be watery but you can taste it to see if you have the sweetener correctly mixed in--if not add a bit more to taste. Remove from heat and allow to cool. If you are using essential oils, and you want the oil to retain all of its properties (not just the flavor) add it after the mixture has stopped boiling and stir it.

Refrigerate. Homemade jelly like this does NOT freeze well. Since it has no preservatives, it also does not last more than about 4 weeks or so in the fridge (you will know--the scent changes and it gets watery when it starts to go bad). It also doesn't have any red-dye or green-dye or other dyes so it may look strange--but it tastes wonderful and if you are looking to avoid those added allergens--all the better. If you don't need to avoid additives--feel free to color it with food dye any color you prefer, after removing it from the heat.

This is a fabulous recipe which can really be switched up depending on your needs/taste buds, while giving you some flavor variety and lots of choices. It can be made clean for those who need or prefer that type of diet. It sets up without sweetner if you are like me and don't need that extra "sweet" beyond the fruit. Also, if you like seeds, you can use a strawberry or two for flavor and then add some chia seeds for the "feel" of it, without ruining your carb count for the day!

Unflavored stirs nicely into coffee without noticeable flavor difference, but can alter tea flavors. I like Great Lakes brand. Their orange can gelatin has the 'sticky', the green can collagen is an instant stir in. I've also sprinkled it in to thicken sauces or stews.

When I get serious about my nutritional macros, I often use gelatin. It softens and adds "chew" to my baked goods (cakes, tortillas, cookies, etc) and ice creams, and thickens my soups and stews, sauces and gravies. And it makes lovely lovely desserts and salads/congeals when I add fat in the form of cream and mayonnaise to it. It is so highly versatile! It's one of my basics!

I used knox for years making home made "jello" - now I use other commercial gelatin or collegen to add protein to most anything - I learned a lot about this reading "Trim Healthy Mama" books.

Nothing haven't found any sugar free without aspartame emoticon that stuff is really bad for you ! Sugar free pudding has it , diet coke !! emoticon let me know if you find any with suclarose instead , sure would help in losing .

It is excellent protein source - same thing as collagen you might be reading about in many diet articles - I stir a tsp into most any hot drink - try to get in a couple tsp per day - especially my home made mocha or hot tea. Good for joints, hair and nails.

Remember to add flavours of your choice before you let it set.

It is such a low cal and low carb support, also very good for nails, hair etc.
Coconut oil on a different topic is wonderful for hair and skin. I also cook with it.
It is hard, so I soften it in the microwave for my hair. comb about a tablespoon through, especially the ends. Leave it on for at least one day. Voila, hair looks bouncy and rejuvinated after washing.

Some people in the team call it by another name. Congeal maybe. I forget the word.

But you just make up the gelatin which is pure protein and use stock of any kind to give it the flavour you want. Then put in the ingredients and let it set like a jelly. It has no carbs.

For desserts same process. Makes a little fruit go a long way. I use natural fruit essence or add flavour and also sweetner. Dont think it would be very good with sweetener if you do not use that.
Makes mousses, jams etc. as well with sweetner. emoticon
