I have pleurisy, 2 types of anemia, macrocytic anemia, Iron deficiency anemia, from blood transfusions with wrong antibodies, causes blood to replace daily instead of 100 days, chronic pneumonia, pleurisy, chronic kidney disease, a partially collapsed lung, low blood pressure & blood clots in both lungs for 3 years. Now formed scar tissue.I am 56 years old. I had cervical cancer 6 years ago, no signs last 4 years as well. I have new blood clots now,2019.I am on P.S.T. time zone.

Chili w/beans

2 cans red kidney beans
1 lb. ground beef
1 large onion
1 can tomato sauce (Small can)
1 can tomato paste
1 can Rotel diced tomatoes
1 can diced petite tomatoes
1 tbsp. cumin
1 pkg. Chili seasoning.
salt and pepper.

Stir after you add each ingredient.

Saute onions until soft. Add Ground beef. Cook until brown. Add 1 pkg. chili seasoning.
Add one and one half cups of water. Add tomato sauce, tomato paste, can of rotel diced tomatoes, can of diced petite tomatoes. 1 tbsp. cumin, salt and pepper. Heat about 20 minutes on low or medium low.

Serve and add sprinkle of Cheddar Cheese. add 1 tsp. crushed red pepper (optional).

Chili - Ground Turkey Chili Stew + Halloween/Autumn Variation!

Introduction

This is a recipe that I have been experimenting with and tweaking for years. Always a family favorite and they didn't even notice the difference when I re-invented it using low fat ingredients and turkey instead of beef.

The best thing about this meal is how much fun you can have making it. Since it is more of a "stew" I have added all kinds of different vegetables and sometimes even put left over pot roast in with it. Have fun and be creative!

Halloween - Autumn Variation: Make this recipe just as described below but remove the potatoes and add one can (15oz) of pumpkin puree and 1 tablespoon pumpkin pie spice! 1 tsp of ground cumin is always nice also..







Minutes to Prepare: 15

Minutes to Cook: 45

Number of Servings: 12



Ingredients

1 Tablespoon Brummel & Brown
2 Large Onions, Diced in 1/4" Pieces
1 Pound Jennie-O Extra Lean Ground Turkey( I will be using a frozen turkey breast )
1 Teaspoon Salt
1 Teaspoon Chili Powder
1 Teaspoon Minced Garlic
1 Cup Diced Raw Potatoes, I even leave the skin on
1 Small Green/Bell Pepper, Diced in 1/4" Pieces
1 Cup Chopped Celery
1 Large Can Diced Tomatoes with Green Chiles, 28oz
1 Can Tomato Soup, 10.5oz
1 Can/Bottle of Light Beer, 12oz
2 Can Kidney Beans, 15.5oz each, (Do not drain)

(Optional)
If you want more flavor use a dark ale or lager for the beer and the calorie impact per serving is small.

Add tons of nutrition and kill almost all the sodium by substituting Hurst's 15 Bean Soup beans. You have to soak them over night but it is awesome! I also have gone to making this in the slow cooker so I have updated the cooking instructions.

Update: Since I have noticed some comments related to the beer I thought I would add what that is about and hopefully educate in the process. It "is" true that alcohol evaporates during the cooking process. If you simmer the chili or make it in a slow cooker it will take about 3hrs for all of the alcohol to be effectively evaporated. The primary ingredients that the beer adds to the chili is the hops, barley and especially the brewers yeast. It will add a deeper richer taste to ANY chili. So other than ethical or religous reasons... Go for it!


Directions

Melt the margarine in a large sauce pan. Add the onions and saute until they are tender and transparent. Add the turkey and cook until it looses its reddish color. Add the salt, chili powder, and garlic. Continue to cook and stir for a minute or so to allow flavors to blend.

If you wish to use a slow cooker like I always do now. You can even prepare the first step from above the night before then just put everything in the slow cooker the next morning. I typically put it on high for 6 to 8 hours.

Add tomatoes, tomato soup, beer, potatoes, green pepper, and celery. Simmer for 15 minutes or until the edges of the potatoes become transparent.

Add the kidney beans and simmer for an additional 15 minutes. Personally, if I have the time I like to let it simmer for several hours to let the flavors blend and I don't know how many times people have told me that this chili is actually better the next day as left overs.

Introduction

This chili is packed with flavor and fiber. Make a big batch for a crowd or freeze it in single-serving containers for up to four months.

Ingredients

1 T olive oil
2 lbs (32 oz) chicken breasts, boneless and skinless, diced into 1-inch cubes
1 onion, diced
3 cloves garlic, grated
1 t salt
1 t ground cumin
1/2 t chili powder
1/8 t cloves, ground
1/8 t cayenne pepper
4 (15.5 oz cans) cannellini (white kidney) beans, drained and rinsed
28 oz chicken stock, low sodium
2 c corn, frozen or fresh
2 (4 oz cans) green chilis
1 lime
3/4 c low fat, shredded monterey jack cheese


Directions

Heat oil in a heavy saucepan over medium heat. Add chicken and onion. Cook until chicken is no longer pink, about 5-7 minutes. Add garlic cloves and spices, continue to cook for 1-2 minutes. Add beans and stock. Stir and simmer for 25 minutes. Add corn and green chilis , continue to simmer for 5 minutes. Remove from heat and squeeze lime into chili. Serve with 1 tablespoon of cheese per cup of soup.
If you prefer a thicker chili, puree 1/4 of the soup before you add the corn.

Slow Cooker Turkey and Mushroom Stew



Introduction

After a long day, sit down to a hearty meal of tender beef, slow-cooked carrots, and melt-in-your-mouth mushrooms and onions.



Minutes to Prepare: 20

Minutes to Cook: 6 - 8 hrs.

Number of Servings: 4 1 cup



Ingredients

16 ounces beef stew meat, fat trimmed, cut into 3/4 inch pieces
1/4 teaspoon black pepper
2 teaspoons canola oil
1/8 cup red wine or red wine vinegar
1 tablespoon whole wheat flour
1 cup low-sodium beef stock
4 garlic cloves, sliced
1 bay leaf
1/2 teaspoon sweet paprika
1 medium white or yellow onion, sliced into 1/4 inch strips (about 1 cup)
1 cup baby carrots (or 1 large carrot, chopped)
2 cups baby portabella mushrooms, wiped clean and cut into quarters (8 ounces)


Tips


Serve with 1/2 steamed potatoes, brown rice or whole wheat noodles per person.

Garnish with fresh parsley or thyme, if desired.

No red wine in the house? Substitute 1 tablespoon red wine vinegar.



Directions

Pat the meat dry with paper towels. Season with black pepper.
Heat the oil in a large skillet over medium high heat. Add the beef to the hot oil and cook, stirring occasionally, until it is no longer pink, about four minutes. Add the wine and scrape the bottom of the pan to remove any stuck-on bits.
Stir in the flour and keep stirring for about two minutes.
Pour in the stock, bring to a boil, and cook for another two minutes. Remove from heat and pour into a slow cooker insert. Layer the remaining ingredients over the beef.
Cover and cook on low for six to eight hours, until the meat is fork-tender and the vegetables are cooked.
Serve immediately.
Serving Size: Makes 4 1-cup servings

3 BEAN CHILI
(1 C = about 229.8 calories)

1 sm onion, chopped (about 1/2-3/4 C)

2 cloves garlic, peeled & chopped

2 or 3 Tbl. chili powder

1/2 C chopped green bell pepper

1 C fresh zucchini, peeled & chopped

1 can (14.5 oz) diced tomatoes

1 can (8 oz) tomato sauce

1/4 C ketchup

1/2 tsp oregano

1 can (15 oz) black beans, drained & rinsed

1 can (15 oz) small white beans, drained & rinsed

1 can (15 oz) kidney beans, drained & rinsed

Put all ingredients in the crockpot; cook on High for 3-4 hrs, or on low for 6-8 hrs- checking for doneness. Soaking/cooking up your own dried beans, ahead of time, for this recipe - would make this all the better (if you have time to do that.)

2 jars spaghetti sauce
water
mushrooms
pepperoni
cooked small pasta (add last hour of cooking)
mozzarella cheese (garnish)

Combine first 4 ingredients. Cook for 4 hours on HIGH>
Add pasta the last hour.
Serve with mozzarella.

Today, I used a "Chicken Chili Kit" with:
1/2 Rotisserie Chicken
2 C water
14 oz can white beans, drained
14 oz can petite diced tomatoes

The chili kits have all the spices, and have instructions for cooking in a pan on the stove. I've found that everything blends together better when it's cooked in the slow cooker, instead. I cooked it on low for 6 hrs, since the meat was already cooked. I've used a beef chili kit a few times, but, this is the first time I've tried a chicken chili kit.
Also, the kits only required ingredients are meat, water & a tiny amount of oil used for cooking up the meat. There are optional ingredients to add; you pick & choose what you want to add to it. So, you're fixing it to your own tastes. emoticon I had never heard of a "chili kit" before, until a friend posted a pic on FB, once. They're right at your local grocery store aisle & easy peasy.

EXTRA THICK CHILI, to be used as a topping for potatoes:

3 1/2 lbs of ground beef, fried up ahead of time with a 1/2 chopped onion.
38 oz can no-bean chili
15.5 oz cans of dark red kidney beans, need 2 (drained)
28 oz can diced tomatoes with green chilis
15 oz cans of bean in chili mild chili sauce, need 2

MIx all these together in a 6-7 qt slow cooker. It will be very thick, but, makes a very nice potato topping for a crowd. Cooks on high for the first 2 hrs, then turned to low for another 2 hours. You can adjust the cooking & settings times to your particular slow cooker & your schedule.

This is a Weight Watchers recipe that a friend gave me years ago and my family loves it. The only thing extra that I add is bacon bits and just a bit of shredded cheese on top when I serve it. I don't know what the calories are but the WW points are listed here, as was given to me. Really delicious and so easy. I use the diced hash browns.


Crockpot Potato Soup for Weight Watchers.

Makes 8-10 cup servings
WW Pts+: 3.5 per cup

Ingredients:
1 26-30 ounce bag frozen hash browns (plain)
2 14 ounce cans non-fat chicken broth
1 10-3/4 can 98% fat free cream of chicken soup
1/4 cup chopped onion
1/4 tsp pepper
1 - 8 ounce pkg lowfat (1/3 less fat) cream cheese
1 cup fat free milk

Directions:

Add first 5 ingredients to crockpot and cook on high for an hour
Stir and then turn to low for another hour.
Add cream cheese, and cook another 1/2 hour or until cheese can be stirred into mixture.
Add milk and cook 10 - 15 minutes longer.

Optional: Garnish with chopped green onion and bacon bits. (Add 1 pt for garnish)
Variation: Use frozen Country potatoes or Potatoes O'Brien in place of the hash browns.

This was my version of the ham & beans soup. Mind you, I didn't measure all the ingredients, so am just giving guesstimates for the veggie amounts.

CROCKPOT HAM & BEAN SOUP

One 10 oz bag dried Navy beans (that have been soaked/boiled/prepared for cooking*)

One 16 oz. pkg diced ham

Approx 1/2 C chopped onion

Approx 1/2 C sliced celery

Approx 1/2 C sliced carrots

One 32 oz carton chicken broth (I used the non-gmo, no preservatives or artificial flavors, no msg kind)

Add all these ingredients to a 3 1/2 qt crockpot. Cook on low for 8-10 hours (or on high for 4-5 hours.) I did not add salt or pepper, in the recipe; but, I sprinkle a lil salt & pepper in my bowls of soup.

*My favorite way to soak beans: Put beans in large pot/dutch oven, cover beans with lots of water for boiling. Watch pot closely, bring to a boil. Boil for a couple minutes. Turn burner off. Put lid on pot & let beans soak for an hour. After 1 hr, you can add more water to pot (rinsing off and adding fresh water is fine, or not....whichever is your favorite to do.) Bring to boil a 2nd time. Boil for a couple minutes. (Watch pot, so there are no boil overs! Take lid off..) Once they've boiled for a couple minutes, repeat what you did, earlier. Turn burner off, put lid on pot & let beans soak for another hour. Once they've soaked for the 2 separate hours, you can add more water & just let them soak overnight. They should be ready to go, in the morning...adding to the crockpot with recipe. Enjoy!)

I actually used about half of a 2 lb bag of dried beans; so it's an approx 10-16 oz dried beans, in this recipe.

SLOW COOKER SUMMER MINESTRONE SOUP
You can make this totally vegetarian by using vegetable broth instead of chicken broth. Or you can add shredded chicken to it.

PREP TIME
25 mins
COOK TIME
8 hours
TOTAL TIME
8 hours 25 mins

Serves: 10
INGREDIENTS
• 1 small white onion, diced
• 2 cups cut green beans
• 1 red bell pepper, diced
• 1 (15.25-oz.) can whole kernel corn, drained
• 1 (15-oz.) can white beans, drained and rinsed
• 1 tsp. salt
• Ό tsp. pepper
• 2 garlic cloves, minced
• 1.5 tsp. dried leaf thyme
• 1.5 tsp. dried leaf basil
• 1 (15-oz.) can petite diced tomatoes
• 2 (32-oz.) pkgs. chicken broth
• 2 small zucchinis, sliced (add at the 6 hour mark)
• 2 small yellow squash, sliced (add at the 6 hour mark)
• 2 cups ditalini pasta, cooked according to package directions (add at the very end)

INSTRUCTIONS
Note: this soup has a 8 hour total cooking time, the squash gets added at the 6 hour mark
1. Add the onion, green beans, bell pepper, corn, white beans, salt, pepper, garlic, thyme, basil, diced tomatoes and chicken broth to the slow cooker and stir.
2. Cover and cook on low for 6 hours.
3. Add the squash, cook for 2 hours more.
4. Add the drained cooked pasta, and serve.
5. Enjoy!

CROCKPOT CORN CHOWDER:
4 potatoes, peeled & diced
1 can cream corn
1 can kernel corn
2c chicken broth
8oz diced ham
1c onion, diced

Put all ingredients in crockpot. Cook on low 7-8hrs. Add 1/4c butter and 2c cream. Cook for 30min longer

CROCKPOT TACO SOUP

Ingredients
1 lb Ground Beef, cooked and drained
1 can corn
1 can Great Northern Beans(white)
1 can Black Beans
1 can Red Beans
1 can Diced Tomatos
1 Hidden Valley Ranch packet
1 Taco seasoning packet
2 cups water
Tortilla Chips
Sour Cream
Shredded Cheese

Instructions
Combine all ingredients in Crockpot except Tortilla Chips, Shredded Cheese and Sour Cream.
**Do not drain any of the cans. Stir and cover with lid. Cook on low 6-8 hours. Serve with tortilla chips, cheese and sour cream.

Slow Cooker Beef Stew Recipe
(makes 6-8 servings)
Ingredients
•1 large onion
•2 medium carrots, peeled and thinly sliced
•2 large potatoes, cut into 1/2" chunks
•1 cup fresh green beans cut into bite-sized pieces
•1lb stew-meat beef chunks
•1 bay leaf
•1 teaspoon fresh thyme
•1 clove garlic, crushed
•3 cups beef stock
•2 tablespoons light brown sugar
•3/4 teaspoon salt
•2 teaspoons Worcestershire sauce
•pepper to taste
•3 tablespoons flour
•2 teaspoons tomato paste
Directions
1.Put the ingredients except for the flour and tomato paste into the slow cooker and stir to combine.
2.Cover and cook on low for 8 to 9 hours or high for 4 to 5 until the beef is tender and potatoes are fork-tender.
3.Stir the stew once or twice as it cooks if possible.
4.30 minutes before serving, transfer a ladle-ful of broth to a small mixing bowl.
5.Add the flour and tomatoe paste. Whisk until mooth, then stir the mixture back into the stew and cook for the remaining half hour.
6.Serve hot.

Slow Cooker Ham and Pea Soup

Yields: 6-8 servings | Serving Size: 1 cup |Calories: 269 | Previous Points: 5 | Points Plus: 6 | Total Fat: 3.7 g | Saturated Fat: 1.1 g | Trans Fat: 0 g | Cholesterol: 19 mg | Sodium: 906 mg | Carbohydrates: 39.8 g | Dietary Fiber: 16.4 g | Sugars: 6.8 g | Protein: 20.3 g |
Ingredients
16 oz. dried split peas
2 cups diced ham (I used Boar's Head Brand, which doesn't have nitrates or preservatives)
3 carrots, peeled and diced
1/2 cup onion, chopped
2 celery stalks, chopped
2 cloves of garlic, minced
2 tsp Kosher or sea salt
1/2 tsp black pepper
1/4 teaspoon crushed red pepper flakes
1 quart vegetable stock, low-sodium
2 cups water
Directions
Layer the ingredients in your slow cooker in the order listed above.
Slowly pour in the vegetable stock and water.
Cover and cook soup on low for 5 hours.
(If you the soup is a little too lumpy for your liking, gently mash out the peas with the back of your spot

Just doing some organizing, after noticing lots of soup recipes. Who doesn't like a good crockpot soup, especially this time of year??
