Since my husband does all of the cooking, I can't really join in this conversation. I know he cooks from "in his head", but occasionally when he needs an inspiration, or wants to do something new he'll look somewhere on the internet or in one of his monthly magazines. I must have at least a dozen cookbooks from when I did all the cooking, but they're all probably 45 years old by now (I cook too bland for him, and I don't taste as I go along...just follow a recipe.) It never came out the same way twice! It's the main reason he does it all.

When I first discovered DH was preD, another SP member recommended a cookbook author named Marlene Koch. She has cookbooks. She has a blog. You can sign up for her free emails...receiving a recipe in each email. I ended up getting her EAT WHAT YOU LOVE EVERYDAY cookbook. She has a series of those with similar names as that (you'll see what I mean when you go to search them out.) I've found her recipes to be good without being weird, if you know what I mean. We're picky eaters at our house and really just wanted practical everyday types of recipes. I am happy with this book. I will prob end up getting more of hers.

We made a pot roast without potatoes and it was just as good as the full blown recipe! We just added sides of mashed cauliflower "potatoes" emoticon (I don't see an emoticon for a crock pot)

BARLEY SALAD • 1 cup pearled barley • 2 1/2 cups water or vegetable or chicken stock • 1 teaspoon grated lemon peel • 1 stalk celery, sliced • 1 cup frozen or fresh corn • 1 carrot, grated • 1/4 cup frozen peas • 1 teaspoon salt

LAYERS • 1/2 cup grape tomatoes, halved • 1 cup chopped fresh spinach leaves • 1/2 cup sliced button mushrooms

ADDITIONAL SUPPLIES • 6 mason jars

1. Add pearl barley to water or stock. Bring to a boil, lower to a simmer, and cover. Add lemon zest and simmer for approximately 35–40 minutes. Allow to rest for 10 minutes then transfer to a bowl, fluff with a fork and cool slightly. 2. Add celery, corn, carrot, and peas. Season with salt and cool completely before layering in jars. 3. Place a layer of barley salad on bottom of jar. Arrange half the tomatoes over salad. Arrange half the spinach, then half the mushrooms, and another layer of barley salad. Repeat process forming 2 layers of ingredients.

Here's a DIABETIC GOULASH recipe, shared in 2013, with WW points info :

Crockpot Hungarian Pork Goulash is a delicious recipe that is loaded with vegetables and spices. A one pot meal and it’s also healthy being low in calories, low in carbohydrates and low in sodium. It is also a Diabetic AND a WeightWatchers (7) PointsPlus+ per 1-1/4 cup serving size recipe. Crockpot Hungarian Pork Goulash will be loved by you, your family and guests alike.
INGREDIENTS:
1 (1-1/2 to 2 lb) pork sirloin roast
1 tbsp paprika
1 tsp caraway seeds, crushed
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/4 tsp salt
1 tbsp canola oil
1 cup thinly sliced celery
1 cup thinly sliced carrots
2 medium size parsnips, halved lengthwise if large & thinly sliced (1 cup)
1 cup chopped onions
1 (14-1/2 oz) can no-salt diced tomatoes, undrained
1/2 cup water
(4 oz) dried wide whole grain noodles (2 cups dried)
6 tbsp light sour cream
DIRECTIONS:
1. Trim fat from roast. Cut roast into 2 inch cubes. In a large bowl combine paprika, caraway seeds, garlic powder, black pepper and salt. Add pork cubes and toss to coat. In a large skillet cook pork, half at a time, in hot oil over medium heat until browned, turning occasionally. Transfer pork to a 3 1/2 or 4 quart slow cooker. Add celery, carrots, parsnips, onion and tomatoes. Pour the water over all in cooker.
2. Cover and cook on LOW 5 to 6 hours or HIGH 2-1/2 to 3 hours.
3. If using LOW setting, turn to HIGH. Stir noodles into pork mixture in cooker. Cover and cook on HIGH 30 minutes more or until noodles are tender, stirring once halfway through cooking. Top each serving with 1 tablespoon sour cream. If desired, sprinkle each serving with additional paprika.
Yield: 6 ServingsServing Size: 1-1/4 cups per serving.

Carb Choices: 1-1/2
Diet Exchange:1 Fat + 3 Meat (L) + 2 Vegetables + 1 Starch
