Yes, that does sound good. I guess I'm interested in ways to eat kale raw, no cooking for maximum nutrients. Maybe 'raw kale' is an oxymoron. Hope not.

If you want to make a kale salad try partially cooking it. Cook for half the time and it is tender enough for salads. Yummy.

I'm a huge kale fan and yet I'm no good at eating raw kale. It is too tough for me. This makes me sad. I do like green smoothies made with kale. Unlike juicing, one eats the whole plant. I add to the kale: Spirulina, a very small amount of fruit (mangoes!), and a little liquid stevia. The idea is to start with 50% fruit, tops, and work down to mostly kale. Being able to eat raw kale, in its entirety, is a delight.

Thanks for the recipeWillboywonder! I'll give them another try. And thanks for remembering about my kale attempts since it's been over a month. :)
She even talked about bitter kale being caused by overcooking.

For those who eat eggs, I sauté Kale with some onion and garlic in a skillet and put it into a quiche. Even people who don't like kale in my household will eat it. Works with Swiss chard, too.

Kale is also good when you mix them with collard greens and steam them. Mix in a little fresh garlic and some sliced red onions, and it is a great side dish. It's good boiled too instead of steamed.

Ursula,

I also use kale in stir fry. I use it in salads and instead of lettuce in a sandwich or wrap. It is tougher to chew, but GREAT fiber and vitamin C.

It is delicious in soups. My favorite soup when I was younger was a Portugese Soup that I would get in Provincetown, MA. It had sausage, but the main vegetable was kale.

A new recipe that I amde up today was kale with black eyed peas, onion, garlic, some carrots and mushrooms sauteed with a little oil and served with some noodles. It was great.

Kale is so good for us! It amazes me that most people just think of it as decoration for buffets and then throw it away!

Thanks everyone for those great replies. I'm going to have to try again then. It was bagged kale from the bagged salad section of the grocery store so maybe it had sat for a while and was past its prime.
Thanks for the good idea about adding it to soups, too.

I also put kale in soups and stews. If it calls for spinach, I usually substitute kale, because I like the cooked texture better. I also put it in smoothies, like you and I've made a raw kale salad that involves olive oil, garlic, lemon juice, and crushed red pepper. I'm trying to cut down on oil, so I haven't made it in a while, but it's good.

I usually just throw Kale in my soup -- adds bulk to my soup and fills me up. I have never tried Kale chips but I found numerous links when I entered the key words Kale Chips in Yahoo Search, so I going to have to try them! Thanks for the tip.

I make kale chips and add a dab of garlic powder and basil along with the sea salt. That gives it excellent flavor.

Ursula, follow what you already did then sprinkle with nutritional yeast, parsley flakes and any seasoning that you enjoy. Really kicks up the flavor.
Good luck!

I'm trying new ways to serve kale.
I like to add kale to my smoothies. It doesn't change the taste and really bumps up the nutrition.
I've cooked it in the skillet with water and seasons. That's fine.
Here's the thing, I've heard so much good about kale chips that I had to try it.
I cooked them in the oven for about 15 minutes at 350 degrees. First I sprayed them with a little spray oil and added some sea salt.
The crunch is wonderful but the taste: blech! They got so bitter and left the bitter taste in my mouth. Does anyone here have any advice on this. Any way to improve that flavor? I'd love to try again and like them this way because it seems like a great snack.
Thanks, Ursula
