Roasted Farm Carrot Fries emoticon

Try them they are delish! The kids call them Orange French Fries!
Cut a bag of carrots to the size of string fries.

In a bowl add cut carrots, fresh garlic, lots of parmesan cheese, olive oil, Italian bread crumbs, salt & pepper. All ingredients add the amount to your personal taste.

Place on a cookie sheet spread carrots evenly place in oven at 325 for about 45 min. I check on them occasionally. Remove from oven when they are tender and golden. Enjoy with ketchup or your favorite dipping sauce!

These sound good. They remind me of how my Grandma use to fry carrots like friend green tomatoes. They were so good back then.

Slow Cooker Pumpkin Butter

You will need:
15 oz of pumpkin puree (canned if you don't have fresh will work)
1 cup of sugar
1 cup of brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp ginger
1/8 tsp ground cloves

Here is what youdo :
Combine all ingredients in your crock pot and mix well
Cover and cook on high for 3 hours... be sure to stir occasionally so it doesn't stick and burn!
VERY IMPORTANT do not can this.. it is not safe to can pumpkin....
You can store in in the fridge for 2-3 wks Or in the freezer for 6-9 months

This is far from a "farm fresh" recipe, but it is tasty and cute. Kids love it!

Sand Pudding

1 pkg Vanilla Wafers
3 or 4 Oreos
8 oz Cream Cheese
1/4 C Butter
2/3 C powdered sugar
2 small pkgs French Vanilla pudding mix
2 3/4 C Milk
12 oz Cool Whip

Crush Oreos and Vanilla Wafers in a food processor. In a separate bowl, cream together softened 8 oz cream cheese, butter, and powdered sugar. In another bowl, mix pudding with milk. Add to cream cheese mixture. Fold in cool whip. Layer into a sand bucket with sand, pudding, sand etc. ending with sand. Serve using the bucket shovel

1950s Chocolate Mayonnaise Cake

Mayonnaise Using mayonnaise in a chocolate cake recipe might seem a bit strange to you, but it's just one of those things you absolutely have to try. This vintage recipe is one of those recipes that will take you back in time. Using mayonnaise makes the cake incredibly moist, and the result will be possibly one of the best chocolate cakes you've made.

Ingredients

3/4 cup cocoa
3 teaspoons vanilla
3/4 teaspoon salt
1 1/2 cups sugar
1 1/2 cups mayonnaise
3 teaspoons baking soda
1 1/2 cups hot water
3 cups flour, sifted

Instructions

Preheat oven to 350 degrees F.
Mix first 5 ingredients. In a separate large container, add the baking soda into hot water. Water will rise and fizz so be sure container is large.
Slowly fold the soda water into the cake mixture and mix well. Add flour a little at a time while stirring, mix well but do not beat.

Pour into a greased and floured 11x15 or 9x13 cake pan and bake about 30-35 minutes.

I remember making this cake in the early 50's.

Carrot Potato Bake

6-8 potatoes
1 1/2 cups peeled and shredded carrots
1/2 cup finely chopped onion
2 cups whipping cream
1 - 2 teaspoons salt
dash pepper
1 1 Tbsp. melted butter or margarine
c1 Cup soft bread crumbs
1/2 tsp. Seasoned salt
2 Tbsp. chopped fresh parsley

Heat oven to 350°. Lightly grease a 9 x 13 inch baking dish.
Peel and shred into cold water enough potatoes to make 6 cups. Drain thoroughly and pat dry with paper towel.
In large bowl, combine potatoes, carrots, onions, cream, salt and pepper.
Spoon into prepared dish.
Melt butter; stir in bread crumbs, seasoned salt and parsley.
Sprinkle over potato mixture.
Bake at 350° F for 50-60 minutes or until vegetables are tender

Empty Tomb Crescents roll recipe, perfect for a fantastic Easter breakfast. Marshmallow rolled into a crescent forming an empty hole when broke open. Explain that each marshmallow represents Jesus' body which was wrapped (covered in sugar mixture) and placed in the tomb which was then sealed tight (closed up in the dough.) Read: Matthew 27:57-60.

When the "tombs" are ready to serve, have each person break theirs open and experience the emptiness of the tomb. Explain that Jesus was raised from the dead and His followers were amazed to find the tomb empty. Read: Matthew 28:1-9.

1 (2 1/4 teaspoons) package dry yeast
1/3 cup water (100-110 degrees F)
1 large eggs, beaten
1 tablespoon shortening
2 tablespoons butter
2 cups flour, divided
1/4 cup sugar
1/2 teaspoon salt
1 tablespoon butter, melted

16 marshmellows
1/2 cup melted butter
cinnamon powder to cover marshmellows

Oven Temp: 400°
Recipe Cooking Time: 12 to 15 minutes

Directions

Preheat oven and line cookie sheet with aluminum foil and spray with non-stick vegetable spray. In a large mixing bowl, dissolve the yeast and 1 teaspoon of the sugar in the warm water. Let sit until foamy - 10 minutes.

In a separate bowl, combine remaining sugar, salt and 1 1/2 cups flour. Once the yeast is foamy, stir in beaten egg followed by the shortening and butter. Combine the flour mixture with the yeast and egg mixture, stirring the dough until it forms a ball and pulls away from the sides of the bowl. Turn out onto a floured surface and slowly add the last cup of flour, kneading to achieve a smooth, elastic consistency. Be careful not to add too much flour. Use as little as possible - you may not need to add all the flour.

Place in a greased bowl, turning to grease the top of the dough. Let rise in a warm place (85 degrees F) until doubled, about 1 hour.

To form crescents:
When Empty Tomb crescent dough is done rising, rolling into a 12-inch circle 1/4 inch thick. Spread with the softened butter and cut each circle into 16 wedges. Lay the crescent rolls on a prepared cookie sheet about an inch and half away from each other. Roll the marshmallows in the warm butter and sprinkle with cinnamon powder to cover them. Place the marshmallow on the narrow end of each crescent and roll up each wedge leaving seam side down, on the baking sheet.

Curve to form crescents. Cover and let rise until doubled, approximately 45 to 60 minutes.

Bake in a preheated oven until rich golden brown.

Confetti Coleslaw

3 c. coleslaw mix
4 T. green onions, chopped and divided
1/4 c. red pepper, diced
1/4 c. green pepper, diced
3/4 c. frozen corn, cooked and drained
11 oz. can mandarin oranges, drained and divided
1/2 c. mayonnaise
2 T. sugar
1 T. raspberry vinegar
1 T. lime or lemon juice

Combine coleslaw mix, 3 tablespoons green onions, red and green pepper, corn and oranges, reserving 6 orange segments for garnish. Mix together mayonnaise, sugar, vinegar and juice; blend well. Pour over salad and toss to coat well. Garnish with remaining green onions and reserved orange segments. Transfer to a serving dish. Serves 8.

Avocado and Salmon Salad

This simple dish can be made a little more elegant with freshly poached salmon instead of the canned. But canned or fresh, salmon is delightful, refreshing and super healthy, in this salad!

Makes 4 1/2 cups
Juice of 1 lime
1 tsp honey
Pinch of cayenne pepper
1 (12-oz) can salmon, drained/broken into bite-size pieces
2 avocados, cut into chunks
1/2 red onion, sliced

Optional topping - 3 tbsp raw sunflower seeds

In a small bowl mix together the lime juice, honey and cayenne until well combined. Set aside. In a large bowl assemble the salmon, avocado and onion slices and gently toss with the lime-honey dressing. Refrigerate for about 30 minutes for all the flavors to come together. If desired, sprinkle sunflower seeds over salad before serving

I love this idea...I just don't have a waffle iron.

For a quick desserts, use cake mix batter in the waffle iron. Make enough for dessert that day and freeze extras for drop-ins. When needed just toast or microwave & top with ice cream, drizzle with a little chocolate syrup, or fruit & whipped cream.

Healthy Tuna Salad
There is nothing like a creamy tuna sandwich to cure the craving when it hits. The white beans gently break apart while mixing, creating a creamy texture.

Ingredients

6 ¾ oz tuna
3 green onions, minced
2 celery stalks, minced
¼ cup minced italian parsley ¼ small lemon, juiced
1 tsp piri piri or other crushed red pepper
1 Tbsp olive oil kosher salt, to taste
14 oz white beans, rinsed with water and drained

Drain the tuna.
Place into a mixing bowl with the onion, celery and white bean. Gently stir.
Squeeze the lemon over the mixture, stir.
Add the piri piri, parsley and olive oil. Gently stir.

Homemade Mayo

Making your own mayonnaise in the blender is super simple, and can save you a lot of money in the long run! Once you have all the necessary ingredients, you will be able to make batch after batch. Plus, you know exactly what’s going into it. While the store bought stuff is convenient and cheap, most of it contains hydrogenated soybean oil (which has been called one of the most harmful ingredients in processed foods – along with high fructose corn syrup) and preservatives. Homemade mayo on the other hand is packed with protein and good fats, and tastes way better than store - bought.

Ingredients:

2 egg yolks
2 tsp white wine vinegar
½ tsp Dijon mustard
¼ tsp kosher salt
¾ C light olive oil

Directions:

To make regular mayonaise, add the first 4 ingredients to your blender and start it on low. Then, pour the oil into the blender SLOWLY while it blends, allowing the mixture to emulsify. Once the mixture has reached the desired thickness, you’re done!

St. Patrick’s Layered Jello

Ingredients:

Layer 1:
2 cups pretzels, crushed
3/4 cup butter, melted
3 tablespoons sugar

Layer 2:
1 (8 oz.) pkg. cream cheese, softened
3/4 cup sugar
1 (8 oz.) container cool whip (about 2 cups)
Food coloring, green

Layer 3:
1 (6 oz.) box jello, lime
2 cups water, boiling
1 (20 oz.) can crushed pineapple, undrained

Layer 4:
1 8-ounce container cool whip (about 2 cups)

Directions:

Layer 1:
1. Preheat oven to 400 degrees.
2. Mix pretzels, butter and sugar. Press into 13×9″ baking dish and bake for 8 minutes. Remove from oven and cool.

Layer 2:
1. Beat together cream cheese and sugar. Fold in cool whip, and tint green with food coloring.
2. Spread over cooled pretzel crust and refrigerate until well chilled.
Layer 3:

Dissolve jello in boiling water. Add pineapple. Allow mixture to cool and set slightly before pouring over cream cheese mixture.

Layer 4:
Top with cool whip when layer 3 is completely set

Stuffed Peppers with Turkey and Vegetables

Ingredients Serves 4
4 green bell pepper, tops removed and seeded
1 lb ground turkey,
2 tbsp olive oil,
1⁄2 onion, chopped
1 cup mushrooms, sliced (optinal)
1 zucchini, chopped
1⁄2 red bell pepper, chopped
1⁄2 yellow bell pepper, chopped
1 cup fresh spinach,
1 can (14.5 ounce) diced tomatoes, drained
1 tbsp tomato paste,
1 Italian seasoning, to taste
1 garlic powder, to taste
1 salt, to taste
1 pepper, to taste

Directions
Preheat oven to 350 degrees F (175 degrees C).
Wrap green bell peppers in aluminum foil and place in a baking dish. Bake for 15 minutes in the preheated oven. Remove from heat.

In a skillet over medium heat, cook turkey until evenly brown. Set aside. Heat oil in the skillet and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in tomatoes and tomato paste and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.
Return peppers to the oven and continue cooking 15 minutes.

Carrot Cake Cookies

What You'll Need:
1 (18-ounce) package carrot cake mix
1 (8-ounce) can crushed pineapple, drained
2 carrots, finely shredded
2 eggs
2 tablespoons vegetable oil
1 cup chopped pecans

What To Do:
Preheat oven to 350 degrees F. Coat baking sheets with cooking spray.

In a large bowl, combine cake mix, pineapple, carrots, eggs, and oil; beat 3 to 4 minutes, or until well blended. Stir in pecans. Drop by teaspoonfuls 1 inch apart onto baking sheets.

Bake 14 to 16 minutes, or until edges are golden. Remove to a wire rack to cool. Serve warm, or allow to cool completely before serving.
Makes about 5 dozen cookies.


Notes
Some people think the best part of carrot cake is the cream cheese frosting, so you may want to frost these with prepared (or homemade) cream cheese frosting.

Cheddar Bay Biscuit Copycat

2-1/2 c. biscuit baking mix
6 T. chilled butter, divided
3/4 c. milk
1 c. shredded Cheddar cheese
3/4 t. garlic powder, divided
1/4 t. dried parsley
1/8 t. salt

Combine biscuit mix and 4 tablespoons butter in a bowl; mix with a fork just until crumbly. Stir in milk, cheese and 1/4 teaspoon garlic powder just until combined. Drop batter onto ungreased baking sheets by 1/4 cupfuls. Bake at 400 degrees for 15 to 17 minutes, until golden. Meanwhile, melt remaining butter; combine butter with parsley, salt and remaining garlic powder in a small bowl. Brush hot biscuits generously with butter mixture. Serve warm. Makes one dozen.

Oat Waffles with Banana Caramel Sauce (makes 4 deep dish Belgian waffles)

Ingredients:

2 cups biscuit mix
1 cup quick oats
1 1/2 cups buttermilk (or milk)
2 eggs
1 tsp vanilla
Banana Caramel Sauce
3 Tbsp butter
1/2 cup brown sugar
1/2 cup sour cream
2 bananas, sliced thinly

Method:

Preheat waffle iron. Spray iron lightly unless it is conditioned to not need repeat greasing.
Stir together biscuit mix and quick oats.
Stir in buttermilk, eggs and vanilla until well blended. Let sit for a minute or two.
Pour with ladle or measuring scoop onto centre of waffle iron, leaving room on the edges to spread. Do not peek until done signal. Keep warm on oven rack at 175 F
Sauce:

Melt butter in small saucepan. Add sugar and stir until melted.
On low heat, stir in the sour cream and cook one minute.
Stir in sliced bananas and serve warm.

Skinny No-Bake Peanut Butter Pie

Ingredients:

5 oz reduced fat cream cheese, softened
1/2 cups confectioners' sugar
1/3 cup Better n Peanut Butter (or regular PB)
8 oz fat free frozen whipped topping, thawed
reduced fat graham cracker pie crusts
3 tbsp Hershey's chocolate syrup

Directions:

Beat cream cheese and confectioners' sugar together in a medium bowl.
Mix in Better 'n Peanut Butter and beat until smooth. Fold in whipped topping.

Spoon into graham cracker pie shell; cover, and refrigerate until firm, at least 2-3 hours. Drizzle with chocolate syrup before serving.

Down Home Meat Loaf

Meat loaf is an easy put together dish, and it always seems to adapt well to added flavorings. This Down Home Meat Loaf is a perfect example!

What You'll Need:
1 1/2 pounds ground beef
2/3 cup plain dry bread crumbs (see Note)
1 cup milk
2 eggs
1 small onion, finely chopped
1/8 teaspoon rubbed sage
1 teaspoon salt
1/8 teaspoon black pepper
1/4 cup ketchup
3 tablespoons light brown sugar
1 teaspoon dry mustard
1/4 teaspoon ground nutmeg

What To Do:
Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray. In a large bowl, combine ground beef, bread crumbs, milk, eggs, onion, sage, salt, and pepper; mix well. Place in prepared loaf pan. In a small bowl, combine remaining ingredients and spread over top of meat mixture. Bake 50 to 60 minutes, or until no pink remains. Allow to stand 10 minutes then slice and serve.

Notes - This is a soft meat loaf, so if you like yours a bit firmer, use 1 cup bread crumbs instead of 2/3 cup

Strawberry Salsa

What a fun, different take on a traditional salsa. You'll surprise your guests (or valentine) when you serve up this sweet and spicy app!

Prep time: 15 Min Serves: 7-10

Ingredients -
1 pt strawberries sliced
1 medium sweet onion, diced
2 fresh jalapeno, seeded and chopped
1 lime, juiced
4 roma tomatoes chopped
1 tsp sugar
1 tsp mined carlic
3 pinch fresh cilantro

Directions- once you have prepped all the ingredients as listed above mix together in medium bowl and serve chilled.

Sautéed Brussels Sprouts With Apples

1 pound fresh Brussels sprouts
2 cups chopped onion
1 tablespoon butter
1 pound sweet red apples, cored and sliced
1 teaspoon dried thyme leaves
1 teaspoon salt
1/2 teaspoon pepper

Steam Brussels sprouts until fork tender but not soft, about 5 to 8 minutes; drain well. Meanwhile, cook onion in a skillet with butter, stirring frequently, for 5 minutes. Add apples and stir gently to combine. Stir in Brussels sprouts, thyme leaves, salt and pepper. Cook for 1 to 2 minutes. Toss gently to blend thoroughly before serving.

Chicken in Balsamic Cherry Sauce

Ingredients
6 chicken breasts
2 tsp salt
2 Tbsp olive oil
1 c thinly sliced onions
1/4 c balsamic vinegar
1 1/2 c chicken broth
1 jar cherry preserves

Directions
1. Pat dry chicken and season with salt.
2. In a heavy skillet heat olive oil. Sauté seasoned chicken until browned, 12-15 minutes. Remove chicken. Add onions to skillet and sauté until tender, 5-6 minutes. Add vinegar and reduce to just a couple of tablespoons.
3. Add broth, bring heat to high and reduce by half.
4. Add cherry preserves and cook for an additional 5 minutes until the sauce is thick.
5. Return chicken to pan to heat through while spooning sauce over chicken. Serve hot.

Barbecued Chicken Sandwiches: Pull meat into shreds and mix with your favorite bottle BBQ sauce; heat in microwave. Mound mixture and coleslaw on a sandwich bun.

Chicken Burritos: In skillet, heat shredded chicken with chili powder and rinsed, drained canned black beans. Place mixture, cooked rice, shredded Monterey Jack, and salsa down center of warm flour tortillas; rollup each tortilla.

Chili-Stuffed Baked Potatoes: Stir diced chicken into warm canned vegetarian chili. Split tops of potatoes and fill with chili; sprinkle with shredded cheddar. Serve sour cream on the side.

Mediterranean Chicken Couscous: Toss cooked couscous with olive oil, lemon juice, diced chicken, tomato chunks, olives, and feta. Sprinkle with chopped basil or mint.

Pasta with Chicken & Pesto: Toss steaming pasta, such as corkscrew or fusilli, with store-bought pesto sauce and diced chicken.

Crock Pot Cheesy Chicken & Rice

1 - pound boneless skinless chicken breasts
1/2 - cup chopped onion
1 - 8 oz package Zatarain's New Orleans Yellow Rice, cooked according to directions
1 - cup Mexican cheese blend or cheddar Cheese
1 - 10.5 ounce can cream of chicken soup
1 -15 ounce can whole kernel corn, drained
3 - tablespoons butter, melted

Place the chicken breasts in the crock pot. Add the chopped onion and spoon the soup on top of the chicken.

Cook on low 7 to 8 hours or high 3 to 4 hours. At the end of the cooking time, open the crock pot and break the chicken up in to small pieces.

Add the cooked rice, cheese, corn and melted butter to the crock pot. Stir until all is combined.

Put the lid back on and allow the crock pot to cook for about 10 to 15 more minutes until mixture is heated through and the cheese has melted.

Cook's Note: To add a little bit of a kick, add one 11- ounce can drained Mexicorn in place of regular corn.

Maple-Topped Sweet Potato Skins

6 sweet potatoes
1/2 c. cream cheese, softened
1/4 c. sour cream
2 t. cinnamon, divided
2 t. nutmeg, divided
2 t. ground ginger, divided
2 c. chopped walnuts or pecans
3 T. butter, softened
1/4 c. brown sugar, packed
Garnish: warm maple syrup, additional nuts

Pierce potatoes with a fork. Bake at 400 degrees or microwave on high setting until tender; cool. Slice each potato in half lengthwise; scoop out baked insides, keeping skins intact. Place potato skins on an ungreased baking sheet. Mash baked potato in a bowl until smooth; add cream cheese, sour cream and one teaspoon each of spices. Mix well and spoon into potato skins. In a bowl, mix nuts, butter, brown sugar and remaining spices; sprinkle over top. Bake at 400 degrees for 15 minutes. Drizzle with warm maple syrup; garnish as desired. Makes one dozen.

Greek Yogurt Biscuits

Yield: 8 large biscuits

Prep Time: 10 minutes

Cook Time: 12-15 minutes

Total Time: 25 minutes

Tender, flaky, and buttery biscuits that are made with a secret ingredient-Greek yogurt! These are our favorite biscuits!

Ingredients:
3 cups Gold Medal All-Purpose Organic Flour
1 tablespoons granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cold unsalted butter, cut into pieces
3/4 cup cold plain Greek yogurt (we use Chobani)
1 large egg, beaten
3 tablespoons cold water
1 large egg, beaten, for brushing on biscuits

Directions:
1. Preheat oven to 400 degrees F. Line two large baking sheets with parchment paper and set aside.

2. In a mixing bowl, sift together flour, sugar, baking powder, baking soda, and salt. Cut in butter, using your fingers or a pastry cutter. Work the dough until mixture resembles a coarse meal.

3. In a small bowl, whisk together Greek yogurt, egg, and water. Add liquid ingredients to flour mixture, stirring until dough barely comes together. Dump the mixture on lightly floured counter and knead until the dough comes together. Don't overwork the dough.

4. Using a rolling pin, roll out the dough into a 1-inch thick circle. Cut into rounds using a biscuit cutter or cut into 2×2-inch squares. Combine dough scraps and roll out again to make remaining biscuits.

5. Place biscuits on prepared baking sheets and brush with the egg wash. Bake for 12-15 minutes. Serve warm with butter, honey, or jam!

Christmas Blessing Snack Mix

Materials Needed:
* 2 cups Bugles brand corn snacks
* 2 cups small pretzel twists
* 1 cup red hots
* 1 cup peanuts
* 1 cup M&Ms brand chocolate candy (red and green)

Applesauce Cookies

Ingredients

1/2 cup shortening
1 cup granulated sugar
1 cup unsweetened applesauce
1 teaspoon baking soda
2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup chopped raisins
3/4 cup chopped nuts
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Directions

Preheat oven to 375 degrees F.

Cream shortening and sugar together.

Add applesauce and blend into mixture.

Sift flour, add baking soda, salt and spices to flour and sift again.

Add sifted dry ingredients to shortening and stir until smooth.

Stir in raisins and nuts.

Drop onto a greased baking sheet spacing approximately 2 inches apart.

Bake for approximately 12 minutes.

Cranberry Swirl Bundt Cake

What You'll Need:
1/2 cup (1 stick) butter, softened
1 1/4 cups granulated sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (1/2 pint) sour cream
1 1/2 teaspoons almond extract
1 teaspoon lemon zest
1/2 cup chopped walnuts
1 can (8 ounces) whole berry cranberry sauce, divided
1 tablespoon confectioners' sugar
What To Do:
Preheat the oven to 350 degree F.

In a large bowl, cream the butter and granulated sugar together with an electric mixer. Add the eggs and beat until smooth.

In a medium-sized bowl, combine the flour, baking powder, baking soda, and salt. Add to the creamed mixture and mix well. Add the sour cream, almond extract, lemon zest, and walnuts.

Pour half of the batter into a 10-inch Bundt pan that has been coated with nonstick vegetable spray. Swirl in half of the can of cranberry sauce and cover with the remaining batter. Swirl the remaining cranberry sauce on top.


Bake for 50 to 55 minutes. Let cool for 15 minutes, then turn out onto a plate. When completely cool, sprinkle with confectioners' sugar.

Notes
To swirl the cranberry sauce, drop out half of the sauce by tablespoonfuls onto the batter and swirl it through the batter with a butter knife.

7 UP BISCUITS

INGREDIENTS:
4 cups Bisquick
1 cup sour cream
1 cup 7-up
1/2 cup melted butter

DIRECTIONS:
Mix Bisquick, sour cream and 7 up.

Dough will be very soft - don't worry

Knead and fold dough until coated with your baking mix.

Pat dough out and cut biscuits using a round biscuit / cookie cutter.

Melt butter in bottom of cookie sheet pan or 9x13 casserole dish.

Place biscuits on top of melted butter and bake @ 425 degrees for 12-15 minutes or until brown

Brown Bag Roasted Turkey emoticon

1 (18 -20 lb) whole turkey
2 stalks celery (roughly chopped)
1 - small apple
1 carrot (roughly chopped)
1 onion (cut into quarters)
3 -4 crushed garlic clovesolive oil
1 - large brown paper grocery bag

Removing everything out of the turkey. (giblet bag and livers) Add UN peeled vegetables (onions, carrots, celery and apple if using) to the inside of the turkey. (the veggies are just for flavor).

They will be thrown away later. Don't forget the mashed garlic.
Rub the turkey all over with olive oil. Make sure the whole bird is covered in oil. Put the turkey in a roasting pan and cover it with a large brown paper bag.

Staple shut. If you have a huge turkey use two paper bags at each end. It wont stick to the bird because of the olive oil. Sprinkle water all over the bag.
Place the turkey on the middle rack of a pre-heated 375º F oven. Make sure that the bag does not make contact with the heating element of the oven.

Remember 451º and we're at 375º degrees. The advantage of the brown paper bag over a Reynolds cooking bag is that the paper breathes so the turkey ROASTS.

Roast for 13-15 minutes per pound. When the turkey is ready, poke a meat thermometer through the bag and into the Turkey and give
it a minute to register.

Make sure it doesn't touch the bone. The thermometer should register between 163-170 degrees. Remove from oven, cut away the bag and remove the Roasting pan. The turkey is golden brown and the meat is so tender.

Cinnamon-Sugar Apple Rings

Did you know that the Granny Smith could be called the perfect all-purpose apple? It's available year 'round, and stands up well to long cooking. You're going to wonder if our Cinnamon-Sugar Apple Rings are really a side dish, a dessert … or both!

Serves: 10

2 tablespoons light butter
1 tablespoon light brown sugar
3/4 teaspoon ground cinnamon
3 large apples, cored, and cut into 1/2-inch thick rings
1/4 cup chopped walnuts

1. In a large skillet, melt the butter over medium-low heat; add the brown sugar and cinnamon, stirring until blended.
2. Add the apple rings; toss gently to coat. Cover, and cook over low heat for 10 to 15 minutes, stirring occasionally.
3. Sprinkle with chopped walnuts, and serve.

Candied Pumpkin Spice Pecans
Ingredients
3 tablespoons butter
1/2 cup sugar
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
2 cups Pecan Halves

Directions
In a large heavy non-stick skillet, melt butter over medium heat. Stir in sugar. Cook until mixture turns an amber color, about 3-4 minutes, stirring occasionally (mixture will separate).
Stir in pie spice and vanilla; add pecans. Reduce heat; cook and stir 3-4 minutes longer or until pecans are toasted. Spread onto foil to cool. Store in an airtight container. Yield: 2 cups

Cranberry Tea

3 quarts water
4 cups fresh or frozen cranberries, thawed
2 cinnamon sticks (3 inches)
2 cups sugar (or equivalend agave, honey, stevia, etc.)
1/2 cup orange juice
2 tablespoons lemon juice
Directions:

In a Dutch oven (or on stove), combine the water, cranberries and cinnamon. Bring to a boil.
Reduce heat; cover and simmer for 12-15 minutes or until berries pop, stirring occasionally.
Remove from the heat.
Discard cinnamon.
Strain cranberry mixture through a cheesecloth-lined colander.
Return to Dutch oven.
Stir in the sugar, orange juice and lemon juice; heat through.
Serve warm. Yield: 12 servings (3 quarts).

Homestyle Chocolate Cake

What You'll Need:
2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking soda
1/4 cup unsweetened cocoa
1 cup mayonnaise
1 cup water
1 1/2 teaspoons vanilla extract, divided

Frosting:
1/4 cup (1/2 stick) butter, softened
2 cups confectioners' sugar
2 tablespoons milk

What To Do:
Preheat the oven to 350 degrees F. Coat a 9" x 13" baking dish with nonstick cooking spray, and flour lightly.

In a large bowl, combine the flour, granulated sugar, baking soda, cocoa, mayonnaise, water, and 1 teaspoon vanilla extract; blend with an electric beater on medium speed until well combined.

Pour the batter into the baking dish. Bake for 25 to 30 minutes, or until a wooden toothpick inserted in the center comes out clean. Let cool completely.

Meanwhile, in a medium bowl, beat the butter until creamy. Add the confectioners' sugar, milk, and the remaining 1/2 teaspoon vanilla extract; blend until smooth. Frost cooled cake.

Holiday Cranberry Salad

1 - 12 package Fresh Cranberries
½ - cup pecan pieces
3 1/2 - cups Mini Marshmallows
1 – 8 oz can Crushed Pineapple (drained)
1 – cup Sugar
1 - pint fresh whipped cream, whipped

Chop cranberries in food processor or blender.

Chop while frozen to prevent splattering.

Mix together cranberries, sugar, pineapple, marshmallows and nuts.

In a separate bowl whip whipping cream until stiff peaks form.

Fold into cranberry mixture and chill overnight.

Pumpkin Pie Monkey Bread emoticon

This pumpkin monkey bread tastes amazing warm from the oven, but it's so good for breakfast the next day.

1 1/2 cups cooked pumpkin, pureed
1 cup scaled milk
1/4 cup margarine
2 1/2 teaspoons dry yeast
1/4 cup lukewarm water
3/4 cup granulated sugar
1 1/2 teaspoons salt
5 – 7 cups all purpose flour

1/2 stick (2 oz) butter, melted
1/2 cup granulated sugar
1/2 cup brown sugar, loose–not packed
1 Tbsp cinnamon
1 tsp. pumpkin pie spice

Oven Temp: 375°
Recipe Cooking Time: 25 to 30 minutes
Pan Type: bundt pan

Directions

Preheat Oven.

Cook pumpkin until tender. Place into a blender. Scald the milk and the butter. Pour into the blender with the pumpkin. Blend until smooth. Let the mixture cool to lukewarm. Heat 1/4 cup of water till it registers 120° on a candy thermometer. Add the yeast and stir to dissolve. In a large mixing bowl combine 2 cups of the flour, sugar and salt. Stir to blend well. Add the milk mixture and the dissolved yeast; mix on low speed with an electric mixer until smooth. Add in the flour 1/2 cups at a time and beat with the mixer for as long as you can. Then add enough flour to make good soft non elastic dough that is easy to handle. (Use more flour if necessary). Grease a large bowl. Shape dough into a large ball and place into bowl turning once to coat both sides. Cover and let rise in a warm place until the squash rolls dough doubles in size.

Place the melted butter in one bowl and combine the sugars and spices in another. Punch dough down. Shape into rolls and dip each pumpkin roll in the melted butter, then into the sugar mixture rolling to coat, then stack into a greased bundt pan. Cover your pumpkin pie monkey bread with a kitchen towel and let them rise until double in size. Bake monkey bread in your hot oven for the allotted time or until light golden brown.

Quick & Easy Pumpkin Chili
{mommyskitchen.net}

1 - lb ground turkey or ground sirloin
1/2 - cup onion, chopped
1 - 14.5 oz can Zesty Chili Style Diced Tomatoes, undrained
1 - 8 oz can tomato sauce
1 - 1.25 oz packet mild chili seasoning
1 1/2 - cups water
1 - 16 oz can Bush's pinto beans, drained & rinsed
1 - 16 oz can Bush's kidney bean, drained & rinsed
1 - cup fresh or canned pumpkin, pureed


In a large skillet or dutch oven, brown the meat along with the onion. Drain off any grease.

Add undrained tomatoes, tomato sauce, chili seasoning, water, beans and pumpkin.

Gently mix everything together until combined. Cover and cook over medium heat for 20 minutes.

Ladle into bowls and serve with a wedge of cornbread. Garnish with sour cream, shredded cheese and cilantro.

Homemade Pimento Cheese Spread

1 1/2 - cups sharp cheddar cheese, shredded
1 1/2 - cups shredded Velveeta
1 - 2 - oz jar diced pimentos, with juice
3 - tablespoons mayonnaise (not miracle whip)

Make sure all the ingredients are well chilled. Add half of the sharp Cheddar cheese to a bowl and then add half of the Velveeta cheese.

Mix well, then add the remaining cheese in the same order. By adding half of each at a time it helps it mix together better. Add pimentos and juice, I use about half of the pimento juice.

Add the mayonnaise and mix well. If the pimento cheese is to thick you can add more juice or a bit more mayonnaise. If it is to thin add more cheese, mine was perfect with the above measurements. Let chill and serve on crackers, celery or make finger sandwiches. I like it on a sandwich with toasted bread.

Apple Oatmeal Cookies

Thanks to applesauce and chopped apples, these chewy oatmeal cookies have a delicious fruit flavor.

Note: Because there is enough sugar in the dough to sweeten things, be sure to use unsweetened applesauce.

makes 24 cookies

Ingredients

2 cups old fashioned rolled oats
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
4 tablespoons unsalted butter, melted
1 cup light brown sugar
1/2 cup sugar
1 egg
1/4 teaspoon vanilla
1/2 cup unsweetened applesauce
2/3 cup peeled apple pieces, cut into 1/8 inch pieces, from about 1 Granny Smith apple
1/2 cup roughly chopped toasted walnuts

Procedures
In a medium bowl, whisk together oats, flour, baking powder, salt, and cinnamon; set aside.

In a large bowl, whisk together butter, brown sugar, and sugar until smooth. Whisk in egg and vanilla, followed by applesauce. Stir in dry ingredients. Add apple bits and walnuts and stir to combine. Cover dough with plastic wrap (I do this in the bowl as it’s very wet) and let rest in refrigerator for 1 hour.

Adjust oven rack to middle position and preheat oven to 350°F. Line two baking sheets with parchment paper. Use a cookie scoop or a tablespoon to drop rounded tablespoons of dough onto prepared baking sheets. Bake until cookies are golden at the edges, about 15 minutes.

Let cookies cool completely on pan—they are slightly sticky but will dry out as they cool. Store in an airtight container, layering with wax paper.

Brussels Sprouts Slaw With Apples, Hazelnuts and Cranberries
Ingredients

1 pound Brussels sprouts
1 green apple (such as Granny Smith)
2 green onions, white and pale green part only
2 tablespoons apple cider vinegar
1/4 cup extra virgin olive oil
1/2 teaspoon kosher salt
1 teaspoon Dijon-style mustard
Freshly ground black pepper
1/2 cup dried cranberries
1/2 cup chopped and roasted hazelnuts
1/2 cup blue cheese crumbles

Instructions

Shred Brussels sprouts using mandolin or shredding blade in food processor. Thinly slice apple, then cut each slice into matchsticks. Thinly slice green onions and toss with shredded Brussels sprouts and apple pieces.

In small bowl, combine apple cider vinegar, olive oil, salt and mustard Toss dressing with salad, and season with freshly ground pepper to taste. Stir in cranberries and hazelnuts.

Allow to rest at room temperature for at least 20 minutes. Just before serving, top with blue cheese crumbles.

Cranberry Cake with Vanilla Sauce

Serve up a spectacular Cranberry Cake with Vanilla Sauce for your holidays. Taking advantage of the cranberry season. A little sweet, a little tart and very healthy for your heart.

Our Cranberry cake is egg free and made with Bob's Red Mill whole grain flour.

Recipe Ingredients
4 Tablespoons Margarine, melted
3/4 cup Sugar
3/4 cup Light brown sugar
2 cups Bob's Red Mill whole grain flour
1 1/2 tsp Baking soda
1 can (12 ounces) Fat-free evaporated milk

2 cups Fresh cranberries, chopped,
OR 1 1/2 cups dried cranberries

1/2 cup Chopped walnuts (optional)
Vanilla Sauce
1/3 cup Sugar
1/3 cup Fat-free evaporated milk
3 Tablespoons Margarine
1 tsp Vanilla extract

Oven Temp ~ 350°
Baking Time ~ 30 to 35 Minutes
Recipe Pan Type ~ 13 x 9 x 2-inch pan

Preheat the oven, coat a baking pan with nonstick cooking spray.
In a large mixing bowl, beat the margarine, sugar and brown sugar. In another bowl mix together the flour and baking soda. Gradually add flour mixture to margarine mixture alternately with the milk. Mixing thoroughly after each addition.
Fold in the cranberries and walnuts, if desired. Pour the cranberry cake batter into prepared baking pan. Bake cake until the top springs back when touched. Cut the cranberry cake into squares, serve warm with Vanilla Sauce.

Cranberry Cake makes wonderful cupcakes, or use two bread pans for holiday gift giving.

Vanilla Sauce Recipe Directions:

In a small saucepan combine the sugar, evaporated milk and margarine. Bring to a boil. Boil for 4 to 5 minutes or until slightly thickened. Remove from heat and stir in the vanilla. Serve warm vanilla sauce over cranberry cake.

Mozzarella Meat Loaf

2 lb lean ground beef
2 eggs, slightly beaten
1 cup Saltine cracker crumbs
1 cup milk
1/2 cup parmesan cheese
1/2 cup onion, chopped
1 & 1/2 tsp salt
1 tsp oregano
1 8 oz. can pizza sauce
3 slices mozzarella cheese, halved
Green pepper rings
Sliced mushrooms (optional)
2 Tbs butter (optional)
Mix beef, eggs, crumbs, milk, parmesan cheese, onion, salt and oregano. Shape into a loaf and place in a greased 9 x 5 x 3 loaf pan.
Bake at 350F for 1 & 1/4 hours or until no pink remains; drain.
Spoon pizza sauce over loaf and top with cheese slices.
Return to the oven for 10 minutes or until the cheese is melted.
Meanwhile, if desired, saute green pepper and mushrooms in butter and arrange on top of meat loaf just before serving.

Curried Cauliflower Gratin

Ingredients
1 head cauliflower (about 1 1/2 pounds), trimmed of leaves and stem
2 tablespoons peanut oil
1 1/2 teaspoons minced garlic
1 tablespoon minced fresh ginger
5 tablespoons minced shallot (1 large)
2 teaspoons curry powder
1/2 teaspoon ground cardamom
2 pinches ground nutmeg
1/4 teaspoon cinnamon
1/2 teaspoon ground cumin
2 tablespoons all-purpose flour
1 (14.5-ounce) can coconut milk
1 teaspoon kosher salt

Topping:
1 teaspoon cumin seeds
1/4 cup Panko or breadcrumbs
2 tablespoons melted unsalted butter

Garnish:
½ cup minced fresh cilantro

Preparation
1 Preheat the oven to 400° F. Butter an 8x8-inch baking dish and set aside.

2 Steam the whole cauliflower until tender but not soggy (about 15 minutes). Cool and slice the cauliflower horizontally.

3 Heat the peanut oil in a saucepan over medium heat. Add the ginger, shallot, and garlic; sauté for 3 to 4 minutes. Add the dry spices and sauté until aromatic, about 3 minutes. Sprinkle in the flour and stir to cook, about 2 minutes. Whisk in the coconut milk and salt and cook at a simmer, stirring, about 3 to 5 minutes (until thickened).

4 Layer the cauliflower slices and curry cream in the prepared baking dish.

5 Sprinkle the cumin seeds and breadcrumbs over the cauliflower and curry cream. Drizzle the breadcrumbs with the melted butter. Bake for 25 to 30 minutes until golden brown and bubbling.

6 Sprinkle the finished dish with the minced cilantro and serve.

Herbed Spaghetti Squash
by Emeril Lagasse
Yield:4 servings

Ingredients
1 small spaghetti squash, about 2 1/4 pounds
2 1/2 tablespoons butter
2 1/2 tablespoons finely chopped mixed soft herbs,
such as basil, chives, chervil, parsley and sage
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper


Directions
Preheat the oven to 375 F.

Using a sharp knife, cut the squash in half lengthwise and place, cut side down, in a baking dish. Add enough water to come 1/2-inch up the sides of the baking dish and cover with aluminum foil. Bake for 45 minutes, until the squash is easily pierced with a paring knife. Turn squash over and cover with foil again and continue to cook another 15 minutes, until the squash is very tender. Remove from the oven, uncover, and allow to cool slightly. Using a spoon, remove the seeds and discard.

Using a fork, gently pull the strands of squash away from the peel and place the squash strands into a mixing bowl.

Heat a skillet. Add the butter, spaghetti squash, herbs, salt and pepper and toss thoroughly but gently to heat and combine.

Serve immediately or cover and keep warm until ready to serve.

Make your own pumpkin pie spice--

4 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground nutmeg
1 tsp ground allspice

Preparation:
Mix all the spices together, and store in an airtight container.


This is good as one will still have thos four bottles to use individually.

HOMEMADE BAKING POWDER

Baking powder is a key ingredient in many cake, cookie and bread recipes; but that doesn't mean you have to pay someone else to make it. Here's how to make your own baking powder:

Ingredients:

1 teaspoon baking soda
2 teaspoons cream of tartar
1 teaspoon corn starch (optional)

Preparation:

Mix the baking soda and cream of tartar together until well combined. Use immediately.

Yield: One tablespoon of baking powder.

It's really best to make it as you need it but if you make enough to store, add a teaspoon of corn starch to the mixture, and stir. This will absorb any moisture from the air, and prevent the baking powder from reacting before you need it. Store in an air-tight container, preferably in the refrigerator.

Did You Know?
Most commercially produced baking powder contains aluminum-sodium --- aluminum-sulfate to be exact. Make your own baking powder, and keep your baked goods aluminum-free.

Pumpkin Upside Down Cake

1 cup Granulated sugar
3 Eggs, beaten
3 1/2 cups Canned pumpkin
2 tsp Cinnamon
1/2 tsp Ginger
1/4 tsp Cloves
1/2 tsp Salt
1 can (12 oz.) Evaporated milk
1 box Yellow cake mix
1 cup Chopped nuts
1/4 cup Sweetened whipped cream or whipped topping
1/4 cup butter or margarine (melted)
Oven Temp ~ 350°
Baking Time ~ 50 to 60 minutes
Pan Type ~ 9 x 13 inch pan

Preheat oven, line baking pan with parchment paper.

Mix together the sugar, eggs, pumpkin, cinnamon, ginger, cloves, salt and milk. Pour the mixture into pan. Sprinkle the dry cake mix on top, then sprinkle the nuts.
Pour melted butter evenly over the cake mix and nuts. Bake Pumpkin Upside Down Cake until a wooden pick or cake tester inserted in center comes out clean.
Cool pumpkin cake thoroughly. Flip upside down and remove from pan, remove the parchment paper. Top with whipped cream or whipped topping.

This recipe is not your standard Deviled Eggs but they are a huge hit with the family. You taste more than eggs with these.

Serves: 24

Ingredients
12 large eggs
1/2 c mayonnaise
2 Tbsp yellow mustard
6 slice bacon
1 small onion
1 tsp salt
1/2 tsp pepper
1/4 tsp cayenne pepper
1 tsp apple cider vinegar
1/4 tsp smoked paprika

Directions
1. Boil eggs, cool and peel. Split eggs lengthwise and put egg yolks in a large separate bowl. Place egg whites on serving dish and set aside. Fry bacon so it is extra crispy, drain off excess grease and set aside to cool. Mash egg yolks with a fork in large bowl. Mince onions so they are very small pieces. (I use a zester) Crush bacon.
2. Add onions and bacon to egg yolks and stir well. Add wet and dry ingredients to egg mixture and mix well. Taste to see if enough salt - easier to add some than to take away.
3. Two ways to stuff the egg whites: straight from the bowl with a spoon or you can transfer the egg mixture to a zip lock bag, cut off the tip and pipe it into the egg whites. Either way, once filled, place into the refrigerator for 30 minutes to chill before serving.

Country Cornbread Dressing

Ingredients:
1 - skillet cornbread, baked & crumbled (8 cups)
1 - cup chopped celery
1 - cup chopped onion
2 - 14 oz cans chicken broth
1 - 10.5 oz can cream of chicken soup
3 - eggs, beaten
2 - 3 biscuits, crumbled or any type of bread, toasted & cubed
1 - 2 small granny smith apples or one large (finely chopped)
1 - 2 teaspoons sage, to your taste
1 - 2 teaspoons poultry seasoning, to your taste
1 - stick margarine

Directions:
A day before making the dressing prepare and bake the cornbread, let cool and cut into cubes. Cut up the biscuits or toasted bread as well.

Place on a large baking sheet and let the cornbread & biscuits or bread sit out to dry a on the counter (about 24 hours).

Add the cornbread and bread into a large bowl and set aside. Sauté’ the apple, onions and celery in one stick of margarine until they are translucent and shiny. By now the margarine will have cooked down.

Add the vegetable mixture to the cornbread. Add one can of cream of chicken soup, the beaten eggs and begin adding the chicken broth start with one can and go from there. Usually it takes no more than 2 cans.

Add all your spices and mix everything really well. The mixture should be the consistency of cornbread batter, don't break up the cornbread to much you want some cornbread & biscuit chunks.

Pour into a greased 9 x 13 inch baking dish. Bake uncovered at 400 degrees for about 45- 1 hour until the dressing is cooked through and no longer jiggles. Insert a knife and it should come out clean.

Make sure not to overcook the dressing or it will be dry. The dressing should be brown around the edges and very light golden brown on top.

Pumpkin Oatmeal Cookies

1 cup Canned Pumpkin

1 cup Sugar

1 3/4 cups Rolled Oats

1 Egg (beaten)

1 1/2 cups Flour

3/4 cup Shortening

1cup Raisins or Chopped Nuts

1 /2 teaspoon Baking Soda

1/4 teaspoons Nutmeg

3/4teaspoon Cinnamon

1 teaspoon Salt

Preheat oven to 400 degrees.
In a mixing bowl, stir together flour, sugar, baking soda, cinnamon, nutmeg and salt.

Add and mix shortening. Stir until mixture is crumbly.

Stir in egg, pumpkin, oats and raisins(or nuts).

Drop teaspoonfuls of dough onto an ungreased cookie sheet.

Bake fifteen minutes or until done.

Crock to 3-Packet Pot Roast

This is simple and easy, and makes awesome gravy.

The Ingredients

-packet of ranch salad dressing
-packet of Italian salad dressing mix
--McCormick Grill Mates Peppercorn & Garlic
--3 lb beef roast
--1 to 3 cups of water

The Directions

Feel free to throw in some chopped potatoes, an onion, carrots, and celery.

Trim the roast of any visible fat and place it into the crock pot. In a small bowl, combine the contents of the 3 packets. Pour on top of the meat. Flip the meat over a few times to get it covered with seasoning on all sides.

Add 1 cup of water.

Cook on low for 8 hours, or on high for 4-5. The meat will be more tender if you cook it low and slow.

20-30 minutes before eating, add 2 more cups of warm water to the crock pot, and flip to high.

The meat only needs 1 cup of water on it to cook properly, but the spices are too concentrated to only have 1 cup of water in the pot when it's time to eat. Waiting to add the water until the end will help the meat retain it's shape, and the added water will make a nice juicy gravy.

Granny's Apple Pudding

Cake:
2 cups brown sugar
1/2 cup butter
2 eggs...
5 peeled and sliced apples
2 tsp vanilla
2 cups flour (all purpose)
2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1 cup cranberries, dried or any raisins
1/2 cup pecans, chopped, optional

Preheat oven to 350 degrees F.
Beat sugar, butter, eggs and vanilla until creamy. Dump in apples but DO NOT STIR YET. Sift flour, soda, and spices together over top of apples. Add dried cranberries and pecans. Stir all until blended; it will be thick. Pour into un-greased 9x13 baking dish. Bake about 45 minutes or until cake pulls away slightly from the edge of pan.

Pudding:
1 cup brown sugar
1 tsp vanilla
1/2 cup butter
1/2 cup whole or evaporated milk

Mix all together and bring to a boil …boil for 2 minutes and no more, stirring constantly. Poke holes in cake with skinny steak knife and pour hot pudding over hot cake. Serve warm or cold….may top with whipped cream or ice cream or not, it is wonderful all by itself.

Cheesy Scalloped Cabbage

Ingredients
1 small head green cabbage
2 c cheddar cheese, shredded
1 1/2 c medium white sauce
1/2 - 3/4 c fine bread crumbs, buttered
1/2 tsp salt
1 Tbsp butter

WHITE SAUCE:
3 Tbsp butter
3 Tbsp all purpose flour
1/4 tsp salt
1 1/2 c milk

Directions
1. Cut cabbage into wedges and cook uncovered until tender (about 25 minutes). Add salt to water just before cooking is completed. Drain cabbage, add butter.
2. For white sauce: in a saucepan, melt butter over low heat, add flour and salt, stir until combined. Gradually add the milk, stirring constantly until thickened.
3. Layer the cabbage, cheese, and white sauce in a 2-1/2 qt. casserole dish. Repeat layers.
4. Top with buttered bread crumbs.
5. Bake at 375 for 25 minutes, or until bread crumbs are browned.

Apple Plum Crisp

Ingredients
1/2 cup Butter, melted
1/2 cup firmly packed brown sugar
1 Tbsp. all-purpose flour
1 Tbsp. lemon juice
3/4 tsp. ground cinnamon
4 cups peeled and sliced tart apples (about 3 medium)
2 cups pitted and sliced ripe plums [or peaches or nectarines] (about 2 large)
1 cup quick oats [or old-fashioned oats ]
1/4 cup chopped walnuts
1/4 tsp. ground ginger

Directions
Preheat oven to 375°.
Combine 1/4 cup butter, 1/4 cup sugar, flour, lemon juice and 1/2 teaspoon cinnamon in large bowl. Add apples and plums; toss to coat well.
Arrange fruit mixture in 8-inch square baking pan.
Combine oats, remaining 1/4 cup butter, remaining 1/4 cup sugar, walnuts, remaining 1/4 tsp. cinnamon and ginger in small bowl until well blended. Sprinkle crumb mixture over fruit.
Bake uncovered 40 minutes or until fruit is tender and topping is crisp and golden. Serve warm and, if desired, with ice cream

Caramel Apple Spice Bread

3 eggs
1 cup canola or vegetable oil
2 cups granulated sugar
2 cups apple pie filling
1 tsp vanilla extract
1 tsp salt
3 &1/2 cups flour
2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
Cinnamon/sugar mix to sprinkle on top

1. Preheat oven to 325 degrees.
2. Grease 2 loaf pans- set aside.
3. Combine all ingredients (except the cinnamon/sugar mix) in mixer bowl & beat well until completely combined into a thick batter.
4. Spoon batter into your prepared pans
5. Sprinkle with cinnamon/sugar mixture
6. Bake 70-80 minutes or until toothpick test is clean
7. Cool in pan on wire rack
8. Remove from pan & store wrapped in foil at room temp.

Quakertown Crumb Pie

What You'll Need:
1/4 cup plus 1/3 cup firmly packed brown sugar, divided
1/4 cup molasses
1 egg, lightly beaten
1 1/2 cups water
1 cup plus 2 tablespoons all purpose flour, divided
1 1/4 teaspoons vanilla extract
1/2 teaspoon baking soda
1/4 cup (1/2 stick) butter, melted
1/8 teaspoon ground cinnamon
1 unbaked 9-inch pie shell

What To Do:
Preheat the oven to 375 degrees F.

In a small saucepan, combine 1/4 cup brown sugar, the molasses, egg, water, and the 2 tablespoons flour. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from the heat, cool for 5 minutes, then stir in the vanilla; set aside.

In a large bowl, combine the remaining 1 cup flour with the baking soda; add the remaining 1/3 cup brown sugar, the melted butter, and cinnamon, stirring with a fork until crumbly.

Pour the molasses mixture into the pie shell; top with the crumb mixture, sprinkling evenly.

Bake for 40 to 45 minutes, or until light golden. Cool before serving.

Here is a recipe that is a perfect mid week night dinner. It comes together quickly. Can be assembled ahead of time and baked when needed.

1 package of 6" tortilla (8 in a package)
2 pounds of lean ground beef or chicken / turkey
1 - 19 ounce / 540 ml can of black beans, drained and rinsed
2 cups frozen corn
1 jar (about 2 cups) of medium salsa
4 tablespoons taco seasoning mix
1/2 cup of sour cream or Greek yogurt (I used 1/4 cup of each)
2 cups low fat shredded Mozzarella, Cheddar Cheese or a combination of both (whatever kind you have on hand)

Brown the beef and drain the fat if needed.
Add the taco seasoning, beans, corn and salsa.
Simmer for 10-15 minutes.
In a 9 x 13 inch pan layer a bit of sauce, tortilla shells, sour cream mixture, cheese, beef, and continue with repeating the layers. It should give 4 layers.
Top with the final amount of cheese.

Bake in 350 oven for 20-30 minutes and all the cheese is bubbly and melted.
Let stand for 10 minutes before cutting into it.
Serve with a fresh crisp salad.

I know this isn't exactally "Farm Fresh", but I love cake mixes. I always get them when they are BOGO and use a coupon that is doubled. Something I came across is if you quickly sift the sake mix, it makes adifference, a good one.


Lemon Poppy Seed Bundt Cake-

Ingredients:
1 (15.25 oz) package lemon cake mix
1 (3.4 oz) box instant lemon pudding
1 cup sour cream
1 cup vegetable oil
4 eggs
1/2 cup warm water
1 tablespoon poppy seeds

Directions:
Preheat oven to 350 degrees F .
In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the poppy seeds and pour batter into a bundt pan sprayed with non-stick cooking spray.

Bake for 45-50 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan for about 90 minutes before inverting onto a plate. If desired, dust the cake with powdered sugar or top with lemon glaze.

Lemon Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon lemon extract
2 tablespoons lemon juice
Just whisk to combine.

Simple Cranberry-Citrus Relish

Ingredients
1 (10-ounce) package fresh cranberries
1 cupwater
3/4 cup sugar, or more to taste
1 3-inch orange rind strip
1/4 cupfresh orange juice (about 1/2 a large orange)
3 whole cloves
1 cinnamon stick
Preparation
1. Combine all ingredients in a medium saucepan. Bring to a boil, turn heat to low and simmer for 20 minutes, until cranberries pop and mixture thickens.

2. Remove the cloves and the cinnamon stick with a slotted spoon, transfer to a bowl; refrigerate until ready to use

I love easy crock pot things, especially in the summertime.

Crockpot Cranberry Chicken

What You’ll Need:

Crockpot
4 Boneless Skinless Chicken Breasts
1 can Whole Berry Cranberry
1 pkg. Dry Onion Soup
8 oz. Catalina Dressing {Russian Dressing can be substituted}
What You’ll Do:

Cook chicken in crock pot on high for 3 hours {covered}.
After 3 hours, drain juices from crockpot.
Mix together catalina dressing, cranberry sauce and dry onion soup.
Pour cranberry mixture over chicken, and cook on high for 30 more minutes {covered}.

Pear Muffins

1/2 cup butter, softened
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
1 cup all purpose flour
1 cup whole wheat flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/4 teaspoon nutmeg
1/2 cup buttermilk
3 cups pears, peeled, cored, and cut in small chunks

Cream together butter, sugar, eggs, and vanilla until fluffy.
Whisk together dry ingredients and add to the creamed mixture alternately with the buttermilk just until mixed.
Spoon batter into muffin tin.
Bake in 400º oven for 20 to 25 minutes, when toothpick is inserted in center of muffin and it comes out clean.

*Optional..you can sprinkle sugar and cinnamon on top of the muffins just before baking.
Yields: 12 regular size muffins.

Ooey-Gooey Crock-Pot Apple Goodness

8 cups sliced apples
1 tbsp lemon juice
1/4 cup brown sugar (not packed)
3 tbsp cornstarch
1 tsp cinnamon
1/8 tsp salt
1 cup old fashioned oats
1/2 cup whipped topping

Place apples in a crock pot sprayed with nonstick spray. Add lemon
juice and toss to coat. Add brown sugar, cornstarch, cinnamon, and
salt. Toss to coat. Evenly top apples with oats. Cover and cook on
low for about 4 hours, until apples have softened. Allow to cool,
about 15 minutes. Top each serving with 1 tbsp of whipped topping.

Yields: 8 servings.

I don't recall. I get fat free Italian dressing. I don't make ti much just for me, usually when one of the kids will be here and I can send left overs with them. I will check next time I get dressing. That is the only salad dressing I buy. I don't eat salads. And if I did I wouldnl' put salad dressing on them because I don't like it. When we go out to eat I will put a few drops (use my fork as to not get too much) on the lettuce of my salad and eat a little of that.

I've made this and we all like it. I use my crock pot more in the summertime to keep heat out of my kitchen. In the winter if I use my oven when the food is done I will take it out of the oven, I turn off oven and open the door wide to let the heat edcape and help warm the kutchen. Otherwise, it is wasted heat closed.


Easy Crockpot Italian Chicken!

What You’ll Need:

4 – 5 Boneless Skinless Chicken Breasts, thawed
1 bottle Wish-Bone Italian Dressing, 16 oz.
Crockpot

What You’ll Do:
Place chicken in crockpot and pour Italian Dressing over it.
Cook on high for 3.5 hours {covered}, or until done.
That’s it! Seriously… it doesn’t get any easier, and it’s oh-so tasty!

I came across this the other day and thought of your using corn meal. It sounds good.


Almost-Fried Chicken

If you're staying away from a lot of "fried", here's an oven version that has fried taste without all the fat.

Serves: 4

Cooking Time:50 min

What You'll Need:
1/2 cup all-purpose flour
1/4 cup cornmeal
1/2 teaspoon black pepper
1/2 teaspoon black paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
4 boneless, skinless chicken breast halves
1/4 cup olive oil
What To Do:Preheat oven to 350 degrees F.

Pour flour, cornmeal, pepper, paprika, garlic powder, and onion powder into a paper bag or shallow dish. Place cicken in bag and shake until coated, or place in a shallow dish, turning to coat. Place coated chicken breasts in a baking pan and pour olive oil over them.
Bake about 45 minutes, or until chicken is golden and no pink remains, turning several times.

Hi Haley, Have you ever coated chicken in egg and then in cornmeal and then baked it? I was for some reason out of flour this evening and I thought that I would try cornmeal. It turned out really good! I added the seasonings to the cornmeal like I would to the flour. We had the chicken and I had collards in the stock pot all day! Oh yummy good!!! That's funny. I had an automatic spell checker that my Daughter's ex BF set up for me. I switched browers so I don't have it anymore. My fingers either go faster then my brian, or vice versa. I can't tell you how many times I have to correct my spelling lol.

Roasted Beet And Watermelon Salad-

Ingredients:

1 bunch beets, roasted and chopped
6-8 beet tops with stems chopped
2 cups watermelon, chopped in 1” chunks
1/2 cup red onion, sliced
1/4 cup extra virgin olive oil
2-3 tbs balsamic vinegar
feta cheese to garnish

Directions:

In a large bowl add the beets, tops, stems, watermelon, red onion, and salt.
Toss all ingredients with the extra virgin olive oil and balsamic vinegar.
Garnish with feta cheese. Enjoy! emoticon
