Jicama, rediscovered. And grilled eggplant, although I like grilled zucc much better. Sweet onions wrapped in foil, cooked on the grill.

Nectarines are not new friends; they are old friends gone away for much too long and back for a short visit every summer! No recipe needed. A sweet and juicy nectarine is one of the pleasures of summer. Yum!!! Or do something "fancy" with them: slice and add to salads or salsa, cut in half and grill them for dessert.

Lately I've been roasting veggies and the whole family likes them this way.

My 16 year old actually ASKED me to make roasted asparagus. A tray of roasted cauliflower vanished as quickly as a bowl of potato chips in the "good old days".

I'm planning on roasting a variety of veggies to keep in my refrig ready for after-school snacks --- yes, one more week of school!!! They will be ready to grab for a snack while I'm preparing dinners. And I can toss them into dinner --- add to a salad, combine with a light sauce and top brown rice or pasta.

My recipe? Clean and trim the selected veggies. Cut into bite sized pieces if using a large veggie like a cauliflower head. Place on cookie sheet sprayed with olive oil spray, spray with more olive oil. Sprinkle lightly with sea salt. Bake 425 for about 20 minutes. Let cool.

not a new friend but a long standing summer VEGmance with Swiss Chard. A large pan of veggie lasagna was made last night. Using ground pine nuts instead of Ricotta (and any cheese really) makes it Vegan!!! emoticon

A couple of old freggie friends served in new ways:

A few strawberries added to a mixed green salad with balsamic vinegar --- yum!

I quartered and cooked about a half dozen beets. Add to a salad.

Or grab a beet and much on slices while cooking. I like to snack on freggies while preparing dinner.

Mango!!!

Last Night a surprise BDay party for me was a Luau and we got lots of leftovers to bring home. A whole bowl of fruit and in it were several pieces of Mango - had some today :) yum

Our commissary used to sell star fruit. I'd like to get back to enjoying that. It makes for a beautiful garnish, too!

When I was a little girl, my mom would serve a rhubarb relish. I remember it as rather stringy --- but it tasted good on a burger. It was kind of like a mild salsa but no one knew about salsa back in those days! Other than that vague memory, I've only had rhubarb in pie (also stringy -- but I couldn't turn down pie).

Yummy! Peppers, onions, and sausage --- I discovered an unbelievably tasty vegetarian apple sage sausage from Field Roast --- even my carnivore husband likes it!

The rhubarb really gives a tangy flavor to this creamy stew. a bowl is less than 200 calories and has low fat.

watermelon- first of the season. My boyfriend cut some up and puts it in ice cream. I love it with a little salt on it.
bought some green,yellow and orange peppers - put some onions,galic and a little olive oil - fry it up and put it on a sauage sandwich. Hummmm!

First CSA delivery of the season was picked up last evening. Rhubarb was in it. Although I have enjoyed .... Ummmm, I mean forced to eat my grandmother's delicious rhubarb pie, wouldn't want to disappoint grandmom, would we? emoticon .... I have never made anything Rhubarby myself. So, that is week's task. recipe will be posted.



[note: of course, I was sarcastically teasing about grandmom's pie. She was always baking homemade stuff when I was growing up and I ate all of it.]

Mango - I love the Mango/Peach? Salsa from Walmart - I know it's a canned food but really quite good.

Love Jicama and enjoy trying it various ways but LOVE it just cut and raw - may even go get some as I type.

Looking forward to trying brussel sprouts this week as they cooked them on TopChef - Sliced thin and sauteed with pecans. Interesting!

I bought a bunch of "komatoes" they are tomatoes that are deep red and brown. Pretty tasty!

We tried baby bok choy in a chicken and veggie stir fry. It has a different flavor than I expected, a little on the, I guess bitter side (raw) but when I cooked it with the other veggies and sauce, it mellowed out quite well.

We cut into the Athena Melon. It looks like a cantaloupe. It tastes like a nice sweet cantaloupe. I would have guessed it was a cantaloupe if I didn't read its little sticker!

The Confetti Eggplant was a big hit with the whole family. I sliced it leaving the red striped skin on and then grilled it with my indoor grill. I baked it in some of my ground meatless tomato sauce topped with thin sliced provolone. Sometimes off season eggplant is bitter and the skin can be tough. Not these. Yummy!

I LOVE mango! Unfortunately... I am allergic to it and my lips break out into tiny clear dots and then scale over when I eat it. So although it's delicious, it's also very painful. Sigh*

My friend made a salad last week with quinoa, chopped mango, blueberries and cucumbers. It was FANTASTIC! Until I realized that the scratchiness in my throat meant that I had consumed mangos and those orange specks weren't peaches as I'd initially thought. emoticon

I enjoy mango (when they are on sale). Sometimes I eat it just plain. They are really good cut into chunks and mixed with cottage cheese for lunch and breakfast. They add lots of flavor to a smoothie. Mango salsa is really tasty (use mango instead of tomato). Grilled mango is very nice with an entree and for a dessert. I tend to use mango in the same way that I use peaches or nectarines. Enjoy!

I'm still enjoying the giant pot of veggie & bean soup that I cooked early this week. I "sparked" it up by tossing in some fresh baby spinach leaves. Soup gets better & better!

Make a New Freggie Friend! Try A new one every day --- select one you’ve never tried before or try a new recipe for an old favorite. Goal: 1 summer veggie or fruit per day
