I've been off the nutrition tracker since the middle of January, with no consequences that I can tell. I actually feel slightly better about food because I'm not thinking, I'm just doing, and I might even be eating less because I have what I want instead of taking and consuming what an estimated range allots me (which, now doing it differently, is usually more than I really want or can handle comfortably.) This wouldn't work for everyone, but we don't eat meals from packages, and just don't keep things like chips and cookies around, so there's not really anything dangerous to go crazy on.

Anyway, I had two slices of homemade bread with avocado, nutritional yeast, and ghost pepper salt, and a big mug of almond oolong tea for breakfast.

Made sweet potato dal yesterday (sweet potatoes, whole lentils, red onion, cherry tomatoes, garlic, ginger, curry spices) and had it again for dinner tonight, with some brown rice. It's so good and cozy-making!

Yesterday I bombed my calories with beer and pizza emoticon Today I am doing much better. i find that if I plan my meals out in advanced, then the day goes smoother. Here is today's menu.

Breakfast: Steel cut oats with almond milk and raisins

Lunch: Avocado Egg salad with spring mix and snap peas

Dinner: Pot Roast with potatoes and carrots

Snack: fat free plain greek yogurt with a 1/2 tsp raw honey and apple slices

I did eat a cocoa puffs cereal bar which was unplanned but hey I am not perfect. I did track it though and i am still within my caloric guidelines but towards the higher end for the day

Okay...I have tried some...I first tried coconut but really did not like that one...I have also had almond which I would have to say is my favorite. I do want to try soy milk. I like the almond milk with my Shakeology shakes and in my cereal. One of my recipes I am trying this week or next week calls for soy milk so I will be getting some of that to cook with and I will try it. I will definitely look for organic!

So my mom and dad are in Nebraska because my dad thought he needed heart surgery which the heart doctor wants to look at other things first. (we are from NE...lived there for 34 years so our good friend who is a doctor is there too) Since they are there my dad wanted my mom to get some tests done...her blood work came back and she has high cholesterol and blood in her urine. She was like ho well I have high cholesterol. I was like Mom high cholesterol is not something to brush off. I said you and dad should consider eating a plant based diet...not 100% but maybe 80% of the time. She said we need meat...I said really you don't because you can get protein from beans and other things. I said I am not completely cutting meat out of my diet but the meat we do eat from now on is either chicken & turkey meat and maybe red meat every now and then and it will be organic. (I could go to plant based completely but my hubby and kids are moaning and groaning about it) If I want meat I could go for turkey meat or chicken only. I am going to do some research so I can fight her on this. I just want my parents to be around for a long time and I will put together some research to show her that the plant based diet is a great choice. So Rheyn if you have any sites I could go to so I can get the facts together I would really appreciate it!

The usual suspects are soy, rice, and almond, with coconut becoming increasingly popular. You can also find hemp, multigrain, and sunflower occasionally. They are available in plain, vanilla, and chocolate flavors, sweetened or unsweetened. When I was a kid, I used to get Capri Sun-type pouches of mint chocolate flavored soy milk, but I'm pretty sure it's out of production now. (There used to be more interesting flavors!)

I try to stick with organic, especially when buying soy milk, since most soy in the U.S. is GMO. The business about soy interfering with estrogen and other hormones is a myth promulgated by the Weston Price Foundation, which is in bed with Big Dairy -- soy contains PHYTOestrogens which are not the same as human estrogen; the only thing they are guilty of is being unfortunately named. Still, it's a good idea to change up your milks to get different sets of nutrients.

Certain types of milk tend to be used more for specific purposes -- for example, baking vs. drinking vs. cooking savory dishes -- but it's ultimately about personal preference. Just try some different kinds and see what you like best.

So far today

Fiber cereal with almonds and a little 2% milk (I think I am lactose intolerant bc milk kills my stomach now)

Black beans, green peppers, tomato and brown rice bowl (super yummy..love it)

pizza (not really part of my plan but it is my youngest son's birthday and he wants pizza)

I also snacked on carrots, celery , a little bit of popcorn and brown rice and apples heated up together with some cinnamon and nutmeg on top and oh yeah Shakeology (tropical strawberry with more strawberries I added~love strawberries)

The apples and brown rice was really good...it tasted like a dessert so I will definitely being doing that one again!

Yesterday's bounty:

Breakfast - two slices of Ezekiel sesame topped with fresh peanut butter and nectarine slices. It's like a PBJ but better, if you can imagine such a thing! Also, green tea.
Had this same breakfast today, since the nectarines from our box are bordering on overripe -- they're just sooo juicy!

Lunch - green smoothie of spinach, a few scoops of my ginger-lime tropical fruit salad, and light coconut milk (the cooking kind from a can, not the drinking type.)

Snack - chocolate raspberry Luna bar (yes, it's kind of a vice, but I don't take a multi, and this is pretty much the equivalent of a supplement.)

Dinner - eggplant stew (eggplant [obv!], onions, garlic, tomatoes slow-cooked in veggie broth with Middle Eastern spices), raw hummus kale chips, and Ezekiel toast.

Banana nut Odwalla bar and actual banana for breakfast.
Toast with sunbutter for snack.
Hummus flavor baked kale chips for lunch. (Yes, it happened again.)
Parents took me out for dinner: double-decker mushroom, spinach, red pepper, onion sandwich on whole wheat with lots and lots of Frank's Red Hot, pickle, and broccoli.

Some people claim that it's too difficult to eat restaurant food when you're vegan, but to me it's a) not hard, and b) easier to end up with a healthy meal because I mostly just get vegetables.

I learned an interesting thing today: that historically, "dinner" has meant the most substantial meal of the day, regardless of what time it is eaten. The term originated around 1300, at which time it referred to lunch, since farmers and other laborers needed that midday energy to sustain them through the afternoon and evening. When big, fancy late meals came into fashion among the upper classes, that came to be known as dinner.

SO, today I had a breakfast-y "dinner" at noon! Tofu scramble with onions, broccoli, red peppers, and mushrooms, and French Toast Muffins from the Everyday Happy Herbivore cookbook by Lindsay Nixon. I whipped Earth Balance with maple syrup and cinnamon to put on the muffins -- definitely NOT "health food," but I wanted a treat for Dave and myself since he went back to South Carolina today for funeral #2, and I just get so damn sad when he's gone.

Luna bar a bit before working out.

Ginormous salad for dinner: romaine, baby spinach, tomatoes, cucumbers, and shredded carrots, plus a little leftover lentil and grain salad from the restaurant last night, tossed with a maple, almond butter, and cider vinegar dressing -- all in a comically oversized bowl, lol. Another bit of scramble, too.

Pineapple, papaya, and toast for late snack.

Mmm, cinnamon-y oatmeal is one of my favorite breakfasts, even in the summer.

Today I've had whole wheat waffles with ginger and allspice, topped with ginger-lime papaya purée, coconut, and chopped macadamia nuts; a romaine salad with strawberries, apples, blueberries and sliced almonds, and dressing of soy yogurt, lemon- and lavender balsamic vinegars, cider vinegar, miso, and almond butter; and a banana.

Dinner plan: kale (instead of the usual -palak-, i.e. spinach) and tofu "paneer" (instead of cheese, it's tofu marinated in cider vin, cumin, ginger, garlic, and nutritional yeast -- it's a pretty close match to the real thing) with brown basmati rice and peas.

Vegan "omelet" of silken tofu and garbanzo flour with carrots, zucchini, red peppers, and tomatoes, and toast for breakfast. Caramel brownie Luna, snow peas, and frozen grapes for lunch. Wasabi almonds and a pluot for snack. Cauliflower, bok choy, snow pea, and onion stir fry with pineapple-ginger sauce over brown rice for dinner. Pumpkin-maple muffins -- YES, that is plural: muffinS! -- for dessert. It sounds bad, doesn't it? Not really. Oil-free, whole-wheat, and mostly pumpkin purée and applesauce by volume. But the liberal smears of Earth Balance probably messed that up, lol.

Insanely delicious mushroom sandwiches two days in a row:

Yesterday, Fathers Day Dinner -- sliced mushrooms sautéed with spinach and onions, stacked double-decker on toasted rye.

Today, lunch at the Macy's Bistro with Dave (two clients in the morning and two in the evening, with a FIVE HOUR break in between, but I didn't want to use the gas or spend the time to drive back home, so he met me halfway for a meal) -- portabella "burger" topped with caramelized onions and roasted red peppers on a potato roll.

Mushrooms are so weird, but I love them!

I had a big breakfast -- two slices of Ezekiel with sunbutter and blackberry preserves, and two kiwis -- and only saw one client this morning, then Mom and I went to another farmers' market and I stocked up on lettuce. I ate a huge amount of veggies for lunch, then my parents and I had a graduation party to go to (I let Dave off the hook for this one) where I was mostly quite good, but did have this delicious roasted vegetable pasta salad made with white pasta (boo!) and significantly more oil than I would have used if I'd made it myself (also boo, but not as much boo!) Oh, and this caramel corn stuff that I'm sure had butter in it, therefore wasn't vegan, but, whatever -- the vegan police can come get me, and I'll deny it ever happened. Not really hungry for dinner, but had a banana, some veg, and hummus. I also made kale chips in the dehydrator, which we will probably eat ALL of tonight!

We are swimming in bread right now, because when I got down to about 1/4 loaf of Ezekiel bread, I bought a new one at TJ's. We finally finished that first loaf this morning, but last night after Grilled Cheese, my dad sent us home with a loaf of multigrain because he forgot he already had some when he went to the bakery in the morning. So, I am going bread-crazy right now.

Breakfast: two slices of toasted Ezekiel bread with mashed chickpeas and hot sauce, and a pear from the FarMar. A few glasses of unsweetened tropical iced tea.

I had the most bizarrely delicious sandwich for breakfast today. It was Ezekiel sprouted grain bread with super firm tofu slices, Kansas City style BBQ sauce, and sauerkraut. Weird, right?

Friday's dinner: sugar snap peas from the just-delivered organic veggie box, broccoli, green beans, and shiitake mushrooms stir-fried with a sauce of tamari, miso, ginger, dijon mustard, and garlic chili paste, over whole wheat couscous.

Yesterday's dinner: spinach, roma tomatoes, and green garlic from the box, and a little more garlic tossed with veggie pasta and red wine vinegar, and a big bowl of cherries for dessert.

It's been raining off and on since yesterday morning, and has cooled off to the 50s and low 60s. Feeling chilly, we combined three single-serving cups of Nile Spice soups (black bean, lentil, and split pea) in a giant bowl for Souper Soup lunch yesterday. Then in the evening, my parents took us and my youngest brother to Inn Season for a belated anniversary dinner. I had their amazing mushroom soup, a salad with lots of good veggies, nuts, seeds, and marinated tofu, and a slice of carrot cake with cashew cream and orange sauce. INCREDIBLE! I don't really like to go out to eat as much as we did this week, but we were pretty "good" with our choices, anyway. OK, now back to cooking!

Yesterday was our anniversary and today is Dave's birthday, so although we didn't got totally nuts, these two days did seem a little more food-y than usual. We got a cheeseless thin crust pizza with pineapple, black olives, and mushrooms last night for dinner. For his birthday lunch, I made sweet potatoes with onions and collard greens, black-eyed peas, and honey-cinnamon muffins. We went to a Mediterranean restaurant called Anita's Kitchen tonight and had baba, hummus, tabbouli, grape leaves, and my favorite, mujadara, then got vegan dark chocolate peanut butter ice cream cones from Treat Dreams. YUM to everything!

Don't remember what breakfast was, lol. Had a ginormous romaine, kale, and tomato salad with the vegan Caesar dressing for lunch, along with a peanut bar. Toast with black bean and avocado mash as a pre-massage snack. Dinner is in the oven: sweet potato, carrot, red onion, and celeriac with a maple-miso-ginger glaze. Plenty of room for a nice fruity dessert.

Monday night I made a Brown Rice Sushi Salad: brown rice (duh!), carrots, shelled edamame, shiitake mushrooms, avocado, dulse (a kind of seaweed), tamari, rice vinegar, ginger, white pepper, with sesame seeds and panko breadcrumbs on top. (Dave doesn't like cucumbers, so I added some only to mine.) Had it again for lunch yesterday.

Breakfast today was a whole wheat English muffin, veg baked beans, and broiled tomatoes. I pressed some tofu yesterday and will probably marinate it for another grain salad(!) for dinner tonight.

Seriously, going grain salad crazy, here!

Luna bar and apple for breakfast.

DELISHBALLZ Mother's Day lunch at the wonderful Inn Season Cafe in Royal Oak, MI. Tofu and chickpea "omelette" with broccoli, corn, onions, and Daiya (vegan cheese), roasted dill potatoes, fruit, tempeh "bacon" (one of my favorite foods in the whole, wide world!), mushroom soup, and all of us split an order of gluten free coffee-almond pancakes with raspberries and chocolate ganache for dessert.

Light dinner about to happen: millet salad with peas, spinach, onions, dressed with cider vinegar, Bragg's aminos, whole grain mustard, oregano, dill, and just a smidgen of olive oil.

Such a tasty day!

Breakfast: sprouted steel cut oats with vanilla almond milk, sliced apple, cinnamon, and a little maple syrup.

Snack: Health Warrior coconut chia bar.

Lunch: Indian buffet! Veggie briyani (rice), saag aloo (ginger spinach with potatoes, although I just took the spin because I had the potatoes from a different dish), chana masala (spiced chickpeas), aloo muttar gobi (cauliflower with peas and potatoes), and eggplant pakora (sliced, breaded).

Dinner: bulgur salad with lemon juice, Bragg's aminos, dill, cinnamon, red peppers, carrots, tomatoes, apples, raisins, and sliced almonds.

Dessert: nice big square of 80% dark with a smear of speculoos butter (it's like peanutbutter but made from cookies, if you can imagine anything so crazy-awesome!)

The highlight of my day was lunch, which I had to make and eat in a hurry due to an unplanned schedule change, but it was still good, and by far the healthiest thing I ate all day. (No comment on dinner. I gave up.)

Miso soup with tempeh, peas, and shiitake mushrooms. Two gorgeous organic tomatoes from our delivery box, sliced, with this KICKASS ghost pepper salt. I want the meal again, but, yes, we have no...tomatoes.

The first day of Dave's summer semester was today, so I made a nice breakfast: tofu scramble with kale, red pepper, onion, and mushrooms, and English muffins with fig and apricot jam. Light lunch of fruit and a chia bar. Toast with black beans and avocado, and veggies for dinner, and mangoes for snack. I have my eye on some organic blue corn chips and super-hot salsa, though...

Ughhhhhhh! I was not hung over, but I needed hearty recovery food in a major way today. I had brown rice tempura vegetable rolls from Trader Joe's for breakfast, left-over quinoa salad and cashew-creamed kale for lunch, and a mushroom and Daiya quesadilla and oranges for dinner.

We're going to a Cinco de Mayo party in a bit, and I made a salad: quinoa, black beans, green peppers, onions, tomatoes, and corn seasoned with lime juice, cider vinegar, agave, garlic, cumin, and oregano.

I had a wrap sandwich for lunch: tomato basil tortilla, kale, tofu, red peppers, and tahini. It was nice even though it leaked into my purse. (Eew.)

I am so relieved to have a little time to make real food again. We had a really nice, simple salad for dinner: whole wheat couscous, chickpeas, onions, bell peppers, and tomatoes tossed with Bragg's aminos, cider vinegar, agave, and dill. One of my favorite things about summer is all the salads!

I like your plan Rheyn, every day is a new chance to make it happen ;)
I'm pretty sure my nutrition is killing me... maybe I'm not eating enough, maybe not the right things, but the scale won't move and it's making me mad!
I'm replacing one meal with shakeology - usually with almond milk. I'm eating apples, bananas, strawberries as snacks. Lunch is usually a turkey sandwich on a whole grain sandwich thin with mustard, a slice of cheese, and baby spinach... for dinner I'm trying to do protein, veggies and some type of whole grain. I'm doing Turbo 6 days a week... I've lost a couple inches, and a couple % of body fat.... but I feel like I could be doing so much better! I need to track my intake more religiously. I'm usually good up until the evening, then for some reason I stop. hmph.

Sounds pretty good.

We had brats on the grill tonight with saute peppers and onion to put on top and baked beans. I also had oatmeal, cottage cheese and pineapple and fresh strawberries for a snack ( the strawberries were not in the cottage cheese just the pineapple). My lunch is usually out to eat with my oldest son. We go out every Saturday because my youngest goes to work with my hubby. So we each have our time with each boy. It is really nice to have that quality time with my oldest especially since he is 16 yrs old and will not be at home forever. My oldest is my boy and my youngest is my husbands. It is funny how they each cater to one parent. I know they both love both of us. But anyways I know my lunch and dinner are not the best but I did stay within my calorie range...just over on sodium. I guess I really do not worry too much about my sodium because I sweat a lot of it out. emoticon

I slow-cooked some black beans with onion, garlic, cumin, oregano, and bay yesterday, then did up some cilantro brown rice, so we've had Mexican bowls the last two nights:
Yesterday, lots of romaine, the beans and rice, cabbage with mushrooms, tomato corn salsa, avocado.
Today, rice, baby spinach, collards and yellow peppers, beans, pico de gallo, avocado, nutritional yeast.
The bowls were HUGE, but mostly filled with vegetables, so it was, nutritionally, a reasonable amount of food, but totally satisfying and, of course, delicious.

I will definately check out that scale because NO I have not bought one yet...I am really putting off grocery shopping...dreading it this time...

The older I get the worse my little friend is. I have no chance of any additions...thankfully my hubby took care of that for us. Two boys is definately enough...I would die if I got pregnant and have to start all over again with diapers and all of that.

It is okay if you have a treat every now and then. I allow myself to cheat on Sundays but I think I already had my cheat day this week...man that bites. emoticon

Sounds like you did a great job staying on track. Did you buy a kitchen scale yet? If you haven't, the one I have now (and really, really like) is by OXO, and the display panel pulls out of the front so you can use it if you're measuring in a huge bowl. It also has a high max, and is easy to switch between English and metric.

Last night I couldn't figure out why I wanted to eat the chips at Grilled Cheese Night (NOT the hot dog chips! -- there were salt and pepper baked chips from Target, too), and today it made so much sense when TOM stopped by for a visit. At this point in my life, with everything I have going on, I'm always a little glad when it happens because it means we won't have any additions to our very happy two-adult-humans-and-six-pets family in 9 months. However, it also means I have about a 25% chance of wishing for a swift death within the first 36 hours. Luck was on my side today, but I didn't get off completely free: I had two late massages tonight, stopped at Target on the way home, and in addition to what I actually needed, bought red licorice, which for some reason, I thought of in the middle of my second massage. It's a giant bag and I only ate a few, so it will last forever, but I just had to 'fess up!

That soup sure does sound good....hot dog chip...ick! I guess not too different than my sister dipping her potatoe chips in ketchup...she would say...you dip french fries in ketchup, what is the difference. She is only my half sister so I say she gets her weirdness from her mom's side of the family not from our dad. emoticon

So I did really good all day eating right...then my hubby got home really early and he wanted to go out to dinner. I had a greasy cheesburger...but only ate half. It was really good. I will be better tomorrow. We have not gone out to an actual sit down restaurant in forever so it was nice to go out together like that.

We had weekly Grilled Cheese Night with my parents and sister, and I brought cauliflower, leek, and red lentil soup, which everyone -- even my picky sis -- liked. It's just the previously mentioned ingredients, celery, carrots, cumin, turmeric, paprika, dill, and garlic and onion powders covered with water, left in the slow cooker all day, and blended smooth with the juice of half a lemon and S&P to taste.

Mom found the hot dog chips and I tried one. It tasted like ketchup, mustard, and relish, and my curiosity was satisfied, so I never have to have another one again, lol.

I am doing pretty good on fueling my body today...Kashi cereal, skim milk and coffee with cream and sugar. (I know that coffee with sugar and cream is not the best but I have to have it), my morning snack was cottage cheese, and lunch was a salad with a little dressing and more cottage cheese. I am planning pork tenderloin and a vegetable for dinner (i got the pork on sale~love sales on meat).

I have been snacking on this and that all day...none of it any good...ho well...dinner is steak with twice baked potato...still not too good but I have been wanting steak and twice baked potato and it is not everyday that I want red meat.

I know Rheyn...you dont do the meat thing. What can I say I am a carnivore! emoticon

Your day sounded like it was fun!! Mine has been so unproductive except I got alot done with my Nutrition test done so I guess that is good.

On Sunday mornings, I usually take my niece to Hebrew school and her twin brother and I go out for breakfast (most of the time, a new restaurant every week.) Today he wanted to see what Sunday school was all about, so he went with her and Dave and I went out together instead because I had a Groupon to a place I'd never heard of before. My breakfast "thing" is plain grits or oatmeal and sautéed vegetables from the omelette menu, so I had grits with green peppers, tomatoes, and mushrooms (it was just OK -- kind of skimpy on the veg) with hot sauce. Plus this restaurant apparently makes their own strawberry jam which you kind of can't say no to (right?), so I had a slice of rye toast with the jam, and it was so amazingly strawberry-y!

Huge salad of red lettuce and cabbage with a bit of tempeh and Bragg's aminos for lunch, a little peanut granola bar as a pre-workout snack, and just got back from dinner with my parents and sister where I had more salad (chickpeas, tomatoes) and some cheeseless pizza (broc, black olives, mushrooms, eggplant.) Today could have gone so much worse, considering how "off" I've felt since the moment I woke up. I think it's because we stayed with the kids last night and I hate not sleeping in my own bed.

I think I'm still full from last night, so I just had a mango and some toasted rice green tea for breakfast. Probably a smoothie or salad for lunch, then after work we have Grilled Cheese Night, featuring non-dairy cheese on whole-grain bread, potato corn chowder as described in the Heart Healthy Foods thread, and usually some type of hummus or baba. Oh, and a glass of wine. emoticon

We've been threatened with HOT DOG FLAVORED POTATO CHIPS by my parents, who got them on a recent trip to Ohio where they visited a chip factory. Assuming they're animal-free, I'll probably have a taste just because it sounds so bizarre! emoticon

We've missed you, too!

I just got home from a huuuge Ethiopian dinner of veggie samosas; spicy toasted injera; an assortment of amazingly delicious vegetarian dishes like yellow split peas, stewed cabbage, and my ///favorite///, fosolia (green beans and carrots), with, of course, some more injera; and a nice glass of honey wine.

I feel sort of like emoticon , but in a emoticon way, and definitely not as guilty as if we'd gorged ourselves on sweet things and fried foods!

***Do you follow the TurboFire meal plan, use SparkPeople menus, or do your own thing?***

I have never encountered a vegan-friendly workout program meal plan, and as much as I love Turbo, its recipes are no exception. I eat mainly whole, unprocessed foods like fresh produce, beans, and grains (often raw), but I love Luna, Health Warrior, and Larabars for when I need something quick, easy, and non-messy.

For breakfast, I enjoyed a spinach, parsley, carrot, and celery (yep, that's all) smoothie and a coconut chia bar. We're going out for Ethiopian tonight, so I'm keeping it light during the day.
