We had hot turkey sandwich with mashed potatoes and gravy. I made peas, but I was the only one who ate them. I tried.

I'm at work till past dinnertime, so you can just forget my husband making anything more substantial than PB&J for our son...but tomorrow, I'll make tilapia ontop of basmati rice, probably with steamed broccoli. My son isn't always sold on fish, but broccoli on the other hand - he can never get enough of!! Works out perfectly! :)

Due to a heavy breakfast I had to lighten the rest of today's calories so we will be having grilled chicken breast with no skin and steamed brocolli. I will make the children smoothies with fresh strawberries.

A Greek dish, "Papoutsakia" translates into "little slippers". It's basically eggplant, either a slice or half of a small mostly scooped out then baked. After the eggplant is baked you fill it with a mixture of ground meat (we use turkey) with the scooped out eggplant and tomato with various spices and herbs. Then you top with either feta cheese, bechamel sauce (I do a lower fat version of this) or a tomato slice with parmesian cheese and bake it. It is very yummy and my kids (2 and 4) loved it!

We sat down as a family yesterday and went through what we had on hand in the pantry and freezer. tonight we decided on potato crusted cod with couscous and steamed vegetables. All of these are prepackaged with calorie information available. The boys have agreed to try it, but in case it's beyond their scope, we do have some corn dogs on hand or soup and a sandwich.

Tonight is game night. Some friends come over and we have a potluck dinner. We're doing breakfast for dinner this week, so pancakes, eggs, sausage, OJ. I'm going to try to have a light lunch and mind my portions tonight to make up for having less than healthy options at dinner. But at the same time, I'm not going to hate myself for having a fun meal once a week. :)

One small action is better than no action.

Last night was left overs from Johnny Rockets. Which I wasn't too happy to discover that their turkey burger is 700 cals with 22 grams of fat! It's a turkey burger for crying out loud!!!!

Last night was lo fat hot dogs, wheat buns, baked beans, corn on cob, grapes. Tonight is suppose to be soup and sandwiches. My kids really like simpler food and generally it is okay for me and my husband too. I'm going to try and give a little more adult flavors for next weeks meals.

Today I will track my food and exercise. This I will do for myself.

On Wednesdays, we usually have a fend for yourself night, but we still try and keep it healthy! If we eat soup and sandwiches, then we eat soup that is lower in sodium and we eat flatbread instead of the white bread that is loaded with fat. The flatbread can often times have less calories then the wheatbread. emoticon

Despite thunderstorms earlier we are still GRILLIN'!!

It was my 5 year old daughters night to pick the meal:

Hamburgers w/bun
Grilled Corn
Grilled Asparagus

All I told her was she needed to pick a vegetable we have never tried and she picked asparagus. SHe is so excited to try it. She has been talking about it all day. I hope she is still that excited after she tries it!!

We'll be having chicken on the grill using Tawook spices (Arabic spices like on the kabobs at Arabic restaurants) rice salad (brown rice, fresh sweet corn, black beans, red pepper, ff Italian dressing) and green salad.

Dessert is fat free 57-calorie pudding pops for the kids.

I made over a recipe of Pad Thai using Ramon noodles with green peppers, onion, mushrooms, and chicken. Yum Yum. I had a garden vegetable salad with it.

Tonight, it's stir-fry with left over steak from a grill-out. I use very little meat in my Stir-fry and plenty of crisp vegetables. I serve it over Jasmine rice cooked in a steamer and usually with slices of a citrus fruit.

We had burritos, tacos, or nachos how ever you want t fix them. Everyone helps get the items ready and lined up on the counter then after we pray they can fix whatever it they want but their dish must have 2 veggies or a veggie and a fruit

I wanted to make a healthy pork stir-fry but ended up with a sodium full pork fried rice. That was not what I had in mind.
