I have already been making a meal plan / grocery list and buying groceries based on this. But this reason is more for finanical gains then for health gains. My goal this week is to make my meals healthier...to include more fruits and vegetables.

I made my menu out for the next two weeks (based on pay schedule). I have went shopping and completed 2 days of meals so far! I requested menu ideas from my friends and blogged about it too...I got lots of good responses but could always use more! If you have a TNT recipe/dinner menu please pass it along!! I have about 20 dinner menu ideas that I select from, but that gets boring, I think I need at least 50!!

My main goal is to plan and execute the plan. I will plan and find recipes, but then I don't ever cook anything. So, I'm hoping this will help me stick with it.

I need to just PLAN. I have been courting the idea and I need to just do it and work out the kinks later, I'm the type of person that I have to read everything about it and make sure I know everything about it before I jump in when I need to just get started and plan. emoticon

My goals:
1. Take my lunch instead of eating school lunches.
2. Only eat out 2 meals a week when I take my granddaughter to dance class and don't get home until 9:30 pm. Make wise choices whent I order.
3. Plan a rotational menu to avoid eating foods I am sensitive to any more often than once every 4 days: milk, egg, wheat, and soy.
4. Plan menu for the week on Sunday, shop after school on Monday, and prepare veggies and fruits for the week on Mondays.
5. Plan on some easily prepared HEALTHY foods for evenings when I am too tired to cook.



Wise choices each day will get me where I want to be.

1-Eat out only twice this week (gotta start small as I eat out every day for lunch due to my job!)
2-Cook dinner every night
3-Clean out my pantry/refrigerator of all sweets/unhealthy foods
4-Grill/bake my foods

1. Clean out junk food
2. try and work on pantry to take unwanted food to the food bank.
3. search for recipes for meals for next week that family will eat
4. learn a new way to cook food (not using a microwave)
5. Rejoice in saving time!

I find the biggest challenge is finding foods my family will eat. Some days if not most I end up as a short order cook. But lately now that the kids are older I tell them it's their choice if they eat what I make. I do try to get them to at least try it.

This is going to be a really hard challenge for me. I already try to cook meals that are more healthy than what I had been cooking, but planning ahead for meals and sticking with it is a big downfall. Since I really want to give this a shot, though, my goals are to plan meals rather than "wing it", save money at the grocery store, prepare more meals that include vegetables, and include at least 3 courses in meals (even if "mixed" together). I'm hoping to learn how to make over some recipes I already enjoy so this will be at least a little bit easier at first.

Goals:
1. No eating out.
2.Plan menu one week in advance and go shopping ONCE per week.
3.Save as much money as possible in planning the menu.
4.Freeze left overs in pie plates to make 'TV dinners'.
Due to both my husband and I having surgery in the past couple months we are vastly in debt. We will pay the bills and then save for a cruise!

Here are my family's goals for the Official Healthy Cooking Challenge
1) Eat 6 meals at home each week
2) plan and prep for memals on weekend so we aren't crunched for time during our busy work week
3) Introduce a wider vairety of vegetable and fruits into our meals
4) Learn how to cut fat and calories while keeping the taste in our favorite foods.
5) always shop with a gorcery list made after planning weekly meals
6) Find healthy snacks

Hi. I love a challenge. That said, I just joined and sharing a challenge goal for the first week of this challenge is a bit of a challenge because quite honestly I already sit down once a week and do a meal plan for the following week and from that I make our grocery list. We shop from the military commissary, Costco and a local market with local and sustainable items. I also make a conscious effort to support our local shops in an economy that is challenged at best. I am a foodie and I love to cook and it has been a goal of mine to cook more of our meals, cook more healthy meals, and save money by doing it myself which has meant in investing in good quality items in and for the kitchen so I think I am ahead of the goal for the week on items 2 and 3 as well. I am going to jump in and get to know the participants and see what I can learn from all of you to add to our plan! :) Oh! And I gave up coffee for lent which is a HUGE deal for me.

I joined this team in October but put off doing the action steps until this week. I want to focus on cooking healthy meals at home and carrying a balanced lunch to work. I think Lent has jump started me because I committed to scarifical eating. That means that I am eating for nutritional value not pleasure or entertainment. Alcohol and desserts are out, as is restaurant meals just because I don''t want to cook or so that I can indulge in my latest binge food.

Hi my name is Tessa. I have been cooking healthy meals now that I am trying to live healthier. I would like to cook quick/healthy/yummy on Wen & Thurs (going to the gym every night means I don't have as much time to devote to theses meals). I, too, have more than plenty of staples in my house to last probably close to half a year. I am working on NOT purchasing anything but fresh food to whittle down the stores. Come September my son will be off to college, so it will just be me in the house. One person does not need a lot of food (well, I do cook for my two big dogs, too). emoticon

HI Team- My name is Peggy and I joined this challenge to help motivate me to plan my meals better. I especially need to get into the habit of planning meals for the week and making a shopping list AND STICKING TO IT- I am too easily distracted by all the store specials. I could live off what I have in my pantry for weeks. This week when I went shopping I stuck to the outside rows- mostly fresh produce and dairy and meat. was quite proud of myself. Good luck to all.
