Found this "lost" recipe:
and while I don't really like tomatoes, I keep adding them to things and am learning! Remember this as being really good on a light flaky broiled/baked fish.

Tomato Orange Salsa

4 ripe roma tomatoes diced (prefer to de-seed them)
3 green onions (green part only) chopped
1/8 tsp cayenne or ground red pepper
1 tsp orange peel, finely grated
1 orange, sectioned, seeded & cut in half (I prefer using several smaller, sweeter clementines)
1/2 tsp cumin
salt to taste (optional)

Combine all, stir lightly, chill for 3-4 hours. Serve over light flaky fish or homemade black bean burgers. Will keep in fridge for 2-3 days.

Roasted Garlic Mashed Cauliflower/Red Potatoes

roast the clove of garlic (cut off top 1/4 inch or less depending on size of clove, wrap in foil with a small drizzle of olive oil, bake low & slow @ 250 degrees for 1 hour)

cut the red potatoes with skin on about the same size as you cut the cauliflower.

I prefer 1/3 cauliflower to 2/3 potato ratio.

Boil water & place cauliflower, cook until well done. Remove and use same water to boil potatoes, adding more if necessary. Drain, reserving 1 cup of liquid.

After garlic cools squeeze as much as possible out onto a cutting board, mix with a touch of sea salt and mash out some more with fork.

Use a potato masher to mash the reds & cauliflower, mixing in the salt/garlic mixture. If needed, use the reserved liquid from the boiling process.

Should turn out just like creamy mashed potatoes. Bonus is the veggielicious cauliflower.

The original stuffed portabella recipe was for a stuffed bell pepper....I have an allergy with bell peppers, but it could still be done!

Stuffed Portabella Mushroom Caps

cooked whole wheat couscous (leftover orzo or rice would work well also)
fine chopped zucchini, yellow squash, green onion
tomato sliced at least 1/4 inch

mix the couscous with veggies with a squeeze of lime, dash of pepper and a splash of balsamic vinegar (or vinegar or choice).

place on top of the mushroom cap, place thick slice tomato on top and sprinkle a bit of your favorite cheese.

bake until heated through and cheese is lightly browned.

Add some of your chopped favorite fresh herbs to the couscous/veg mix such as fresh basil, parsley or even a bit of rosemary.

Garden Greek Salad

spinach & romaine torn
tomatoes
cucumber
red & yellow bell pepper
zucchini
green onion
red onion
feta crumbled
kalamata olives
chopped fresh basil

Vinaigrette:
1/4 cup fresh lemon juice
1 TBS olive oil
2 TBS fresh parsley fine chop
1 tsp each oregano, salt & fresh ground pepper

Make the vinaigrette in the morning & chill for a few hours. Shake well before pouring on salad.

Hi everyone.
Apple, celery, and walnut are a great combination. Can be eaten with cheese and a bread roll.

Cold rice or new potatoes (that were cooked the night before) are a good alternative to the carbs that you get in bread.

Vary flavour by adding olives, sun dried tomatoes, chopped herbs, a salad dressing.

Chopped hard-boiled egg can be added.

Now granted, the kale chips are not a total replacement for chips, believe me. But I was pretty amazed at how light and crispy they got. As I say, I can eat a whole head of the stuff at a time and I used to hate veggies. It's worth trying to see if you like it :)

Yeah, the chicken cordon blue is tasty! Using leftovers cut up on salad from when I cooked it the other day. Used the Buddig thin sliced ham this time, sometimes get a little shaved ham from the deli. Hardest part of this recipe is pounding the chicken boobs flat.

Now this kale chip thing...if it's a chip, it's gotta be good (in my world) but baked kale? Are you sure? I'll try anything, especially if it's that easy and healthy.

Chicken Cordon Bleu might have to be served this week at the Tomany house! My new favorite is Kale Chips. Preheat oven to 350F. Tear leaves off of a head of kale into 4 or 5 inch pieces (roughly) leaving the stems out as they are bitter. Coat the leaves with a quick spray of Pam or with a teaspoon of olive oil or sesame oil. Roast in the over for 10-15 minutes- shaking at least once to prevent sticking- until leaves are dried and crispy.
I can eat a whole head of this at a time... they taste crispy and light and almost salty, even though I don't add any salt.

Rhapsody in Bleu or Chicken Cordon Bleu

Warm chicken wrapped around melted cheese and juicy ham that won't break the calorie bank!? Sign us up...

Ingredients:
One 5-oz. raw boneless skinless lean chicken breast cutlet
1 wedge The Laughing Cow Light Original Swiss cheese, room temperature
1 oz. (about 3 slices) 97 - 98% fat-free ham slices
salt and black pepper, to taste

Directions:
Preheat oven to 350 degrees.

Put chicken in a large sealable plastic bag, squeeze out as much air as you can, and seal. Using a meat tenderizer or a can, carefully pound chicken through the bag until it is about 1/4-inch thick. Remove chicken from the bag, and season to taste with pepper on both sides.

Lay the chicken flat and spread the cheese wedge over it. Evenly layer the ham slices on top of the cheese. Starting with one of the longer sides (or any side, if it's square), tightly roll up the chicken breast cutlet, and secure with toothpicks.

Place chicken roll in a baking dish lined with foil and/or sprayed with nonstick spray, and then cover the baking dish with foil.

Bake in the oven for 20 minutes. Carefully remove the foil covering the dish. Continue to bake (uncovered) for an additional 15 minutes, or until chicken is cooked through. Enjoy!

MAKES 1 SERVING

Serving Size: 1 chicken cordon bleu (entire recipe)

Herb and Yoghurt Salad (serves 2 )

Mix together... 2 carrots grated, half a cucumber diced, 50-75g or 2-3oz celery chopped small, a few walnuts (easy on the walnuts as they are high in calories)
Make a yogurt dressing from... 225g or 8oz of natural yogurt, 1or2 cloves of garlic crushed, juice of one lime, coriander or mint chopped.

this is a salad for two, the grated raw carrot makes it filling and the yoghurt topping is tasty
230 calories a portion. 22g Carbs. 14g Fat. 8Protein

Watermelon Salsa
From: EatingWell

Sweet, savory and crunchy salsa accompanies grilled pork or chicken rather nicely. Try it with tortilla chips as a refreshing alternative to a tomato salsa.
Servings: 8 servings, 1/2 cup each
Prep: 20 mins
Total: 20 mins

Ingredients
3 cups finely diced seedless watermelon, (about 2 1/4 pounds with the rind) (see Tip)
2 jalapeno peppers, seeded and minced (see Ingredient note)
1/3 cup chopped cilantro, (about 1/2 bunch)
1/4 cup lime juice
1/4 cup minced red onion, (about 1/2 small)
1/4 teaspoon salt, or to taste
Directions
1. Place watermelon, jalapenos, cilantro, lime juice and onion in a medium bowl; stir well to combine. Season with salt. Serve at room temperature or chilled.
Tips:
Tip: Melon selection & storage: Look for symmetrical unblemished melons, without flat sides, that have a creamy yellow spot on the bottom indicating ripeness. At 92% water, this fruit should feel heavy when you heft it. Pre-cut melon flesh should be dense, firm and appear moist. Store in the refrigerator for up to a week or keep in a cool, dark spot. Cover the cut surface of melon with plastic wrap and refrigerate.
Ingredient Note: The seeds and surrounding membrane are the spiciest part of the chile pepper. To increase the heat of the salsa, use some or all of the seeds, depending on your preference, along with the flesh of the pepper.

Tracey, that sounds really good. As I sit here and eat my frozen strawberries, blueberries, raspberries, and blackberries that I nuked till they are warm and gooey. Kind of a berry soup after I eat all the pieces. Yummy!

Here's a WEIRD one for ya, but it was totally yummy.

12 large strawberries (cut up to bite sized) 65 cal
1/2 cup of your favorite frozen yogurt desert (I use vanilla something or other that has a swirl of granola going through it. 120 cal
1 packet of walnut, raisin date instant oatmeal. 140 cal

Melt frozen yogurt in microwave about 60 seconds.
Mix in packet of oatmeal - no need to cook it.
Heat strawberries about 60 seconds (warm, not hot)

Toss it all together. VERY quick, very filling and tastes like you're eating a cobbler desert of sorts for breakfast.

12 strawberries is a LOT of strawberries, fills a cereal bowl when it's all mixed up. Sometimes I make it and split it into two tiny bowls and have one as a desert after dinner. Sweet, savory, and chewy. The trifecta for me :)

Coconut milk tastes like sweet milk with a hint of coconut. Once you get all the veggies, mushrooms, water chestnuts, bamboo shoots, snow peas and anything else you can think of along with the curry paste, there might be a slight hint of coconut, but barely.

It's certainly not anything like the coco lopez used in pina coladas. Planning on making this in the next day or two and will make mental note to taste for coconut.....will report back!

Question about coconut milk, does it taste a lot like coconut flakes you eat or is it milder? My hubby isn't a fan of coconut so I'm hesitant about using the milk, but really want to try it. I love coconut!

I plan to try making some of the recipes here when the craziness of this week and next are over and I can relax and spend more time in the kitchen trying new things out.

I plan to make the black bean and corn salsa (saw several recipes) on here since I buy it quite often at Trader Joe's and wondered if I could save some money by making my own instead. I have most of the ingredients, just got to make the time.

Monster Lettuce Free Salad -

In a 4 cup container

zucchini, coarse chop
cucumber, seeded, coarse chop
yellow squash, coarse chop
carrots, I like grated
celery, 2 stalks chopped
red onion
raddish
snow peas
edamame, thawed
corn, thawed
green peas, thawed
black olives, sliced
black beans
kidney beans
cannelini beans
fuji apple, 1/2, chopped
avocado (added at the end, just before serving)
feta, sprinkled on top
green onion, chopped & sprinkled on top for bling


5 oz FF Wishbone Italian
1 oz balsamic
1/2 packet splenda



Had a bit leftover and added to cold WhWh penne pasta with a little more dressing for lunch the next day... with a little more avocado & feta...yummo!

Get the impression I do a lot of chopping & dicing? LOL, right tools make it a breeze.

Apple Pecan Pork Chops

4 boneless chops (3/4" or so thick)
Salt & pepper to taste
1TBS butter
1TBS EVOO (extra virgin olive oil)
1 apple, red fuji, cored & thinly sliced
1/4 cup pecans, chopped
2 TBS brown sugar, firmly packed

Sprinkle chops with S&P.
In lg skillet, melt butter w/EVOO until it is hot.
Add apples, cook & stir 2 minutes.
Push apples to side & add chops, cooking 4 minutes.
Turn chops over, place apples on top of them.
Sprinkle pecans & brown sugar on top.
Cook covered another 4-8 minutes until done.
Spoon cooking juices over top & serve.


I toasted the pecans for 5-6 min in the toaster oven to really bring the flavor out. Added fresh ground nutmeg to the top of the apples, sug & nuts.

My sister added a bit of cinnamon (I was wary for fear of tasting apple pie chops)

Wanted to mention - that the Sour Cream Enchilada Chicken was emoticon . I ate it with a spinach salad (trying to get in a veggie), salsa and chips. I used some of the salsa as the salad dressing for the greens. I boiled a whole chicken, so with the leftover chicken, I made chicken salad for this week's lunches (tropical - w/cranberries and pineapple)!! I will be burnt out on Chicken by the end of the week, but at least I have some good meals coming up. emoticon

THANKS Carol for the Hawaiian recipes - love new ideas. Trying new recipes and new foods, keeps it all interesting!! emoticon

Warm chicken wrapped around melted cheese and juicy ham that won't break the calorie bank!? Sign us up...

Ingredients:
One 5-oz. raw boneless skinless lean chicken breast cutlet
1 wedge The Laughing Cow Light Original Swiss cheese, room temperature
1 oz. (about 3 slices) 97 - 98% fat-free ham slices
salt and black pepper, to taste

Directions:
Preheat oven to 350 degrees.

Put chicken in a large sealable plastic bag, squeeze out as much air as you can, and seal. Using a meat tenderizer or a can, carefully pound chicken through the bag until it is about 1/4-inch thick. Remove chicken from the bag, and season to taste with pepper on both sides.

Lay the chicken flat and spread the cheese wedge over it. Evenly layer the ham slices on top of the cheese. Starting with one of the longer sides (or any side, if it's square), tightly roll up the chicken breast cutlet, and secure with toothpicks.

Place chicken roll in a baking dish lined with foil and/or sprayed with nonstick spray, and then cover the baking dish with foil.

Bake in the oven for 20 minutes. Carefully remove the foil covering the dish. Continue to bake (uncovered) for an additional 15 minutes, or until chicken is cooked through. Enjoy!

MAKES 1 SERVING

Carol's Almost Free Dill Dip

1/2 cup Light Mayo
1/2 cup FF sour cream

1TBS dill weed (heaping)
1/2 TBS parsley
- 1/4 tsp salt
1/8 tsp onion powder
- 1/8 tsp garlic powder
+1/8 tsp white pepper

+ or - use a little more or less.

Mix well, chilling overnight is best to get flavors to collide.

Great as a veggie dip or on a salad as dressing. It's almost fat free because I just can not handle the FF mayo.

In the past I've used soft tofu instead of or along with the mayo or S/C (end up with one measuring cup total). Use a mini food processor to smooth out the tofu and amp up the seasonings since tofu takes on the flavor of whatever it's mixed with.

PS - schmear this on sliced up chicken boobs, marinate for the day and put them on the grill. So very moist & tender.

Let's go tropical...go figure!

Sunset Mango Dip

1 medium ripe mango, seeded, peeled & cut to chunks
1 1/2 tsp firm pack brown sugar
1/2 tsp lime or lemon juice
1/2 cup nonfat yogurt (vanilla, pina colada, coconut)

Place mango into food processor or blender with sugar and lime/lemon juice. Process until smooth.

Place into a bowl and gently stir in yogurt. Chill well for 4-5 hours.

Top with a light sprinkle of nutmeg (fresh is best!!)


I usually double this one. It's great on any sweet fruit. Bananas, papaya, mango, grapes, pineapple too!

emoticon One of the things I do to help me with achieving my goals, is try new recipes. I make it a personal goal to try one new recipe weekly. This way I don't get bored with baked chicken and salad every day. emoticon

So in this forum - I want to encourage each of you to post a new recipe. You can enter the recipe here or just add the link to the recipe with the "add a link" button above. Also, mention what you ate with it - what your menu was. It doesn't have to be a spark recipe, it can come from other sites. It just needs to be something healthy, low in fat and low in calories. THANKS! emoticon
