Reviving this thread in hopes more will participate and share their Lean & Greens and recipes so we can all benefit. :)

Today's Lean & Green: Asparagus Frittata

1/4 c. water
1 1/4 c. fresh asparagus - chopped
1/4 c. scallions - finely chopped
2 c. egg beaters

Saute asparagus in a large pan in water for 3-4 minutes - until just barely cooked. (salt/pepper as desired!) Add scallions and cook for 1 more minute. Add egg beaters and stir.

2 finishing choices:

"I'm hungry - just get it on the plate NOW"

Continue stirring the pan until all egg is cooked. Yes, it's scrambled eggs w. asparagus - but it's still pretty yummy. :)

"I want something a bit nicer and have the time"

Pour the entire mixture into a pie pan and bake at 350 F until cooked through. Serve in slices.


Note: this is a HUGE Lean & Green. MONSTOROUS. I'm seriously considering saving half for tomorrow and having a small complimentary second Lean & Green later tonight. I'm ready to explode - and I'm not even halfway through!

There is a Broccoli Cheese & Egg casserole that is really tasty....I will have to find the official recipe. I use egg whites as well and have varied it a touch. Will post it soon.

This is superb.....1 pack of Medifast Sour Cream & Chive Mashed Potatoes
1 egg; 1/2 TBSP Parmesan cheese; 1/2 TBSP fresh chives
1/2 cup water.......10 sprays of non-stick cooking spray

In a medium bowl, mix all ingredients well. Let stand 2-3 minutes.

Spray non-stick saute pan with spray and turn heat to Medium-High

Put 1/3 mixture in the pan and cook 3- 5 minutes on each side.

Repeat until you have three pancakes...

=1 medifast Meal, 2 condiments and 1/3 Lean!!!!!! Filling and delicious emoticon

I make this one EVERY week. It makes 2 servings of both Lean & Green. I got it originally from Sandy's Kitchen website in her MF food section, but have made some changes to make it easier & tastier: Enjoy!

Cheesy Chicken Spaghetti Squash Casserole

For Chicken: 6 to 7 oz raw chicken breasts - 4.5 oz grilled (3/4 Lean)
1/2 tsp garlic powder (1 Condiment)
1/4 tsp dried basil (1/2 Condiment)
1/2 teaspoon salt, or to taste (2 Condiments)
1/8 tsp black pepper, to taste (1/4 Condiment)
3/4 cup 2% Nonfat Greek yogurt (1/2 Lean)
1 tbsp grated Kraft Parmesan cheese (1 Condiment)
4.5 oz. Shredded Chicken
3 cups spaghetti squash, cooked (6 Greens)
3 oz. reduced fat cheddar, shredded and divided (3/4 Lean)

Directions:
Poke holes on all sides of the spaghetti squash with a metal skewer or a fork.
Place a paper towel in microwave and place squash on top of paper towel. Microwave in for 10 minutes, 5 minutes on each side (flipping) Let cool. Cut squash in half, lengthwise. Scoop the seeds and the middle strands out with a spoon and discard. Next, scrape the inside of the squash with a fork all the way to the skin. You should get strands that resemble spaghetti. Set aside.

Cook chicken in crock pot and shred. Weigh 4.5 oz. Preheat convection oven to 375 degrees (400 for reg. oven).

Combine yogurt and condiments. Add in shredded chicken, spaghetti squash and 1/2 of the 3 oz of cheese. Sprinkle in parmesean. Spray 8 inch casserole dish. Pour spaghetti squash mixture into dish. Sprinkle the remaining ounce of cheese. Put in oven and bake for 30 minutes.
2 Servings with 1 Lean, 3 Greens, 2.8 Condiments and 1/2 Healthy Fat per serving

*For 93% ground beef-3.75 oz cooked or Shrimp-5.25 oz cooked. Remember, the meat will be divided into 2 servings so you will actually be eating 1.8 oz of beef and 2.6 oz of shrimp per serving.
