green cucumber
orange carrots
yellow pineapple
red tomato
blue blue berries (frozen)
purple lettuce

4/12's Rainbow
green lettuce
purple lettuce (not sure what it's really called)
yellow banana
red strawberry
orange orange juice (hope that counts)

I love smoothies!
I eat salads full of veggies everyday!

I had a strawberry banana berrie smoothie, using ice and vanilla low fat yogurt
I had cottage cheese with pineapple in it
I had broccoli and carrots in my salad

How about blue grapes? and some plums are kinda blue. There are also blue edible flowers but they're hard to find

Ok, I've got for Monday, so far-
green: honeydew melon
purple: purple onions and cabbage on my salad
red: watermelon
orange: cantaloupe
and yellow: bananas

For the life of me, I can't think of anything blue except blueberries and I'm not fond of those. Any ideas? Maybe something for dinner?

Most of us are trying to eat more fruits and veggies.
Your Challenge for the week of April 11 - 17th is to eat a rainbow everyday.
So for instance....
If I eat broccoli - I've eaten green
If I eat blueberries - I've eaten blue
If I eat grapes - I've eaten purple
If I eat strawberries - I've eaten red
If I eat pumpkin - I've eaten orange
If I eat bananas - I've eaten yellow
There's my rainbow and I've eaten 6 different fruits and veggies in one day!
What's your rainbow going to look like?
Please use this thread to document your rainbows so others can get inspiration for you.
Try a new recipe that has 3 or more fruits or veggies in it or add shredded veggies to pasta sauce, you won't even taste them but they will give you the nutrients anyway.

So many to choose from, so little time!!!
