On Sunday night I make steel cut oats in the crockpot. I spray the container with a lot of Pam (sides and bottom) and add 2 cups oats, 2 cups almond milk, 4 cups water, cinnamon and a splash of vanilla. I cook it for 4-6 hours. Once cool I keep it in the frig. and have it all week. I top it with berries and almond milk.

My favorite breakfast or lunch is whatever is left over from last night. I have a green smoothie when I wake up and don't really consider breakfast until I've been up a couple of hours.

make oatmeal with apples, raisins, cinnamon & vanilla if you like it in advance, portion it into single serving microwave safe bowls and then you can just nuke it in the AM. Much better than instant oatmeal and cheaper. I do the same with grits, turkey bacon, etc.-precook my own and then 30 to 60 seconds in the microwave and I'm eating. Also I portion milk into single serving tupperware that I can grab on my way out the door with a banana or apple. Cheap, nutritious and filling.

Afternoon,

For Breakfast I like frittata's. I'll make a big one on the weekend, cut it up, and have it all week. I can take it to work, and eat it there too.

Have you tried the recipe search on SP. I have found some wonderful ones there. You can plug in course, special occasion, ingredient numbers..all sorts of things. One of my new favs is a Mexican egg bake. I know your not a cheese person, but you could change it up a bit. 3 ingredients: spray a small ramikin or similar dish with non stick spray, pour in 1/4 cup salsa, top with egg and then 1 oz mexican shredded low-fat cheese. Microwave for 90 seconds. Times and amount might be a little off as I'm doing this from memory, but it is delicious.

man i wish i wasnt a cheesefan. because i am i have a cheese butt..and a cheese belly..but i digress!!

breakfast..my 2 favs:
1. 3/4 cup non sugary cereal with 2 tablespoons dried cranberries 1 tablespoon chopped walnuts and 3/4 cup skim milk
2. 1/4 cup 2% cottage cheese, 1/2 english muffin with a smear of jam (all fruit jam) and 1/2 cup grape or any no sugar juice

Lunch: if i'm going out to work, or if i'm in
out: 1/2 sandwich..any kind on lite wheat bread
1 yoplait lite any flavor
something crunchy..100 cal pack or celery and carrots
sometimes a pudding..the 60 cal jello ones.

if home:
broth based soup..vegetable, tomato or minestrone
or
salad with some meat and cheese cut into it..tomatos, carrots, black olives..dried cranberries. always an olive oil vinaigrette.

dinner:
whatever meat, pile of steamed or boiled veggies, and a starch...i love baked sweet potatos, baked potatos, plain rice, etc.

or casserole. i have to be careful i'm a noodle junkie and i od on these.

Looking for ideas of Quick and Easy things I can fix on the go. Not a lot of time to prepare. Not a cheese fan so any suggestions. Love Carbs and Protein.
