Most of the food education the contestants receive comes from dieticians who plan a diet that is suitable to the contestant and their health and size. I expect the 500 pound contestants are taking in close to 3000 calories and still losing weight.

They also teach the contestants how to cook and monitor their intake through their BodyBugg entries. Food journaling is one of the principle ways that all diet instructors give feedback. I know we see Bob and Jillian doing it on the show, but they do not design the food plans.

I am sure they have to have classes on Nutrition and even what the change will do to them after the weight loss. There is only so much you can squeeze into a show. Know they need to start a show on the nutritional part of it. Maybe just a half hour after the original show would help.

They don't feature the nutrition aspect much on the show, but the contestants are taught how to eat. Below is a link about Cheryl Forberg, the RD for the show. Once you read that info about her click on the link and read about how she and Dr. H. helped the two contestants who went home.

Even though we don't get to see it, it appears that the contestants are given an education about nutrition.

I'm glad. It's hard to figure it out on your own. I'm glad SparkPeople exists.
