Dinner for two:

2 - 6 oz filets of Orange Roughy. Brush on a little olive oil, a little sea salt, black pepper, smoked paprika and broil – approximately 6-8 minutes. 1 6 oz serving each.

Coleslaw prepared with lowfat dressing.

Vegetable Medley: 1 zucchini, 1 yellow squash, 1 onion, 1 red bell pepper. Julienne into 3” spears, toss in a wok with a little olive oil, a little sea salt & black pepper. (this makes more than enough for two people)

According to my nutrition tracker each serving of this meal contains 357 calories, 25g carbs, 14g fat, 36g protean.

About 20 minutes from cutting board to table.

South of the Boarder Shrimp and Pasta. I entered the recipe, try it. I'm sure you'll like it. It's a family favorite. Be sure to add the toppings, it makes a big difference.

Family had cooked white rice with a sauce made of cream of chicken and herb soup with diced up turkey added in. MY version was a cup of rice with 1 1/2 cups of steamed veggies (mushrooms, onions, zucchini, summer squash, broccoli) and 1/4 cup of soup with about 6 oz of meat. Felt good about it, so I splurged for desert on one small magnum bar!

If stress could burn fat, I'd be skinny and if chocolate could add brain cells, I'd be a genius!

Well I ended up having 1/4 of a duck with a cherry sauce. It was excellent. It was served with a side salad, sautéed beans and carrots, and a small serving of scalloped potatoes. It was so good.
