Amazingly Yummy Cold Cucumber Avocado Soup

2 cucumbers, peeled, de-seeded and sliced
1 cup Salsa Verde (I didnít have any on hand but was so very pleased with the results when I used Guacamole Salsa, which is simply Avocado and Salsa Verde! I'm guessing 1/2 cup of each would do nicely!)
1/2 cup Greek yogurt
I/3 cup Sour Cream, or more to taste
Garnish with a sprinkle of my new favorite spice called TAJIN (powdered chili pepper, sea salt and dehydrated lime)

Peel & de-seed 2 Cucumbers. Slice thinly and put in a blender.

Puree with 1 cup Guacamole Salsa (OR 1/2 cup Salsa Verde and 1/2 cup diced Avocado)

1/2 cup Greek Yogurt (OR Plain Unsweetened Yogurt)

1/3 cup Sour Cream

Taste. If itís a tad too spicy , stir in a little more sour cream.

Garnish with my newest favorite spice, TAJIN, or a sprinkle of paprika on top. Chill and enjoy!

This is so good! Another Home Run Recipe!

Tangy Cucumber, Onion & Tomato Salad

1/3 cup Cider Vinegar
2 medium Cucumber (peeled with seeds removed)
1 medium (2-1/2" dia) Onions, raw or a handfull of green onions diced
1/3 cup Water, tap
1 packet Stevia or Erythritol (Your Sugar Substitute of choice) or more to taste
1 cup cherry tomatoes, halved (optional) or any garden tomatoes, diced
1/4 tsp Pepper, black
1/2 tsp Salt
1 tsp Dill, dried
Garnish with fresh Basil leaves (optional)

* Cut cucumbers and onions into 1/8-1/4 inch slices. Alternate layers of sliced cucumbers and onions in a dish with a tight sealing lid.
* In a separate container mix Cider Vinegar, water and sweetener. Pour over cucumber/onion mixture.
* Cover and refrigerate at least 3 hours, shaking the container to distribute the liquid occasionally.
* Drain liquid.
* Mix in spices & tomatoes.
* Garnish with fresh basil leaves and serve.

That soup does sound good! So does the water. If you ever have cucumbers turn yellow on you and still don't know what to do with them they are great for heat rashes. Just cut one and rub it on the rash and it takes the itch or burn out. Something I learned from my mom and it works.

They have cucumber water at the Women's Clinic I go to, it is very refreshing. Is the soup recipe in Spark recipes or Pinterest? I always have both in the house, would like to try that for lunch on the weekend.

I'm on a mission to eat or preserve all the veggies I harvest from my garden. Rather than see the cucumbers stack up on the kitchen counter, I made some awesome Cucumber Avocado Soup. So yummy! Might be the best soup I've ever eaten.
