My peaches on the tree are continuing to get bigger & turning golden-orange.... YUM I cant wait to start harvesting them!!! Thanks for all the peachy ideas!

What not to do with peaches? We ate them, made habanero peach preserves, one peach cobbler, froze some, and made peach pie mix for the freezer with some. Delicious!

I EAT mine! Also, last year I used my pressure canner for the first time and canned the peaches in extremely simple syrup. Liked that better than freezing them! However, peach marmalade still wins the "love it best" prize for me!

You will find it in the spice section or the canning sections. If you have a Walmart that is were it will be. Spice section in a grocery store

Thanks, I have used ascorbic acid before, just had not heard that name. It does a good job preserving things, just wish it did not make things taste more sour and then make us feel like adding sugar.

Recipes: I can peaches for pie and cobbler - sorta standard recipes you probably have, but I'm happy to share if you want one - and peach salsa or chutney. Peaches also make a decent butter (like apple butter, pumpkin butter, peach butter) and jam. Bunch of good recipes at www.scpeach.org/recipes

Fruit fresh: It's ascorbic acid (vitamin C) that adds a mildly tangy taste to the surface and the acid mostly stops the browning (oxydizing) of the fruit. Keeps your peaches peachy instead of brown and mushy.

...oooooorrr you could make peach salsa (which you can freeze or can, depending on your preference). I make some every year, and it's great with chips, or I use it on chicken or pork chops. I don't really have a recipe, but I usually make mine with peaches, tomatoes, red onion, bell pepper, a little diced jalapeno or other warm pepper, cilantro, and a little salt.

If you put them on a cookie sheet and freeze them, then you can put them in large freezer bags and they won't stick together as much. Then you can just take out the amount you want to use at a time.

I don't blanch mine. I dice them up, put some fruit fresh and sugar on them, let them juice up a little, and then package and put in the freezer. They are so good like that. You can leave out the sugar if you want to, but do not leave out the fruit fresh.

In july hubby & I finally moved into small hobby farm property in WV that has 5 small peach trees. In July you couldn't even tell what kind of fruit trees they were, but after some good rains the end of July and all of August they are now ripening & falling off the trees. I'll be picking them this week and thought I'd wash em, peal em, chop em & then freeze them for future consumption.

Anyway, I'd appreciate in put on how to best freeze peaches (should the be blanche? dipped in lemon juice?? etc.). I'm not sure I'll have time to can em, put will probably can peaches next year.

Also could use some quick & easy recipes for peaches.
