I chose the potato because it has gotten such a bad reutation with weight loss management...that is only because of what we put on it...leave off all the FAT, such as butter, sour cream, (use LF sour cream, and I use Brummel & Brown instead of margarine, it is yogurt based and is DELICIOUS!!).. Enjoy your potato with some feta cheese sprinkled on top, or a small amount of Mushroom soup....there are so many ways to have your potato and enjoy it too!! I always have on hand some red skinned potatoes..I pop 2 or 3 in the microwave, put on some sea salt, and Brummel & Brown and have them with a meal!! YUMMY!!

The good: This food is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber, Vitamin C, Vitamin B6 and Potassium, and a very good source of Iron, Copper and Manganese.

The Power of Potato Nutrition
The 2005 Dietary Guidelines for Americans recommends consuming sufficient amounts of fruits and vegetables
while staying within energy needs. In addition, the Guidelines recommend choosing a variety of fruits and vegetables
from all five vegetable subgroups (dark green, orange, legumes, starchy vegetables and other vegetables) several times
per week. This translates to 2 ˝ cups of vegetables per day for a 2000-calorie diet. Why not start with the vegetable
everyone already loves, the potato? One medium potato counts as one cup of vegetables.

Potassium

Potassium is a mineral that is part of every body cell. It helps regulate fluids and mineral balance in and out of cells and in doing so, helps maintain normal blood pressure. Potassium is also vital for transmitting nerve impulses or signals, and in helping muscles contract.

One medium potato (5.3 ounces) with skin is a good source of potassium, providing 620 milligrams or 18% of the recommended daily value (DV) per serving.

Potatoes rank highest for potassium content among the top 20 most frequently consumed raw vegetables and the top 20 most frequently consumed raw fruits.

A 2006 report from the American Heart Association indicates that almost 1/3 of Americans have hypertension and that potassium is a powerful dietary factor that can lower blood pressure. Unfortunately, few Americans are getting the potassium they need. Data from the most recently published National Health and Nutrition Examination Survey indicated that only 6% of men and less than3% of women are meeting the recommended potassium intake of 4700 milligrams per day!

Eating just one medium potato – about the size of a computer mouse – can get you well on your way to meeting your daily potassium requirement.

Vitamin C

Vitamin C is a water-soluble vitamin that acts as an antioxidant stabilizing free radicals, thus helping prevent cellular damage.

In addition, Vitamin C aids in collagen production; assists with iron absorption; and helps heal wounds and keep your gums healthy.

Vitamin C may help support the body’s immune system.

Potatoes are an excellent source of vitamin C (45% of the DV), which is more vitamin C than one medium tomato (40% DV) or sweet potato (30% DV).

Fiber

One medium potato (5.3 ounces) with the skin contributes 2 grams of fiber or 8% of the daily value per serving.

B6

Vitamin B6 is a water-soluble vitamin that plays important roles in carbohydrate and protein metabolism. It helps the body make nonessential amino acids needed to make various body proteins; it is a co-factor for several co-enzymes involved in energy metabolism; and is required for the synthesis of hemoglobin – an essential component of red blood cells.

Potatoes are a good source of vitamin B6 with 10% of the recommended daily value.

Iron

One medium potato provides 6% of the recommended daily value of iron.

Combining Potatoes with other Vegetables for Better Nutrition

Potatoes provide the perfect complement to many other vegetables and, because of their immense popularity, they can serve as a conduit for increasing overall vegetable consumption. For example, a baked potato topped with broccoli and cauliflower; mashed potatoes mixed with spinach and onions; roasted potatoes with onion, peppers, and mushrooms; or a tuna salad with asparagus, potatoes and lettuce each provide at least 3 servings of vegetables.

WOW, how KOOL is that....I am very thankful to these two SPARKERS who posted just before me..... They are dear and sweet friends. I enjoy them more than I can tell you...and cherish their team work with me!!

Part 1. I started this team as the direct result of my July 4th declaration. I made the declaration to KICK 5 pounds in 4 weeks, then I asked if anyone wanted to join me...it has been steadily growing ever since. We are now doing our 2nd KICK 5 to the curb in 4 weeks joint venture!! I have been keeping all 34 of us connected by SPARKMAILS and my BLOGS, hence, I felt we needed a HOME BASE, where we could all gather at the same place for support and encouragement...reason # 2...I like to SPARK on week-ends, sometimes. I had noticed that it is rather quiet at SPARK on week-ends, so I thought there were certainly others who would also like a team that is lively 7 days a week...so here we are....

Part 2. #1. I love to poke around in flea markets and can spend a couple of hours just looking.
#2. I love to decorate and arrange things, such as for parties, and flower arranging.
#3. I am a very enthusiastic individual, who believes in allowing everyone to be an individual...I am called an individualists!! I give GOD the GLORY for everything good that happens!! Without HIM I am nothing, have nothing, know nothing!! HE is my everything!!

Part 1- LACEEJO also invited me to joing this time, I am the co-leader of another team with her. I don't have as much trouble on weekends, but sometimes, I just don't have anything to do, so thought I would give this team a shot.

Part 2-
a) I love to read! I can sit down and read a whole book in one day...no tv or internet that day, as I get too involved in the book.
b) I enjoy going camping with my DH and also DS and his family when ever we can.
c) I worked as a secretary for 36 years and then lost my job due to downsizing. Had a great career; now work for minimum wage scooping ice cream!! also am a substitute teacher's aide. Got a call today to sub for 6 weeks while another aide is out on maternity leave. God is good!!!

If we saw all the difference even the tiniest of our prayers make, and all the people those...prayers were destined to affect...we would be so paralyzed with awe...that we would be unable to get up off our knees for the rest of our lives.

I'll go first, since this is brand new and I did the asking! emoticon

PART 1: LACEEJO11 invited me to join (Thanks, friend!!) and I am on her 'other' team, too. It sounded fun and exciting (and it IS!!)
It's maybe kind of silly for me to have a tougher time on weekends (I don't work) but I do find it challenging, sometimes more than others.
I hope to both give and get support here (so far, AMAZING!!!-- You folks ROCK THE HOUSE!!)
I hope to be a great co-leader and to help as much as possible when and where I am needed.
I am very inspired and encouraged since joining this team. You members are warm, friendly and welcoming!! You are also a determined bunch, which is AWESOME!! (Keep up the GREAT job you are doing!!)

PART2:
a) I LOVE to make handmade cards and create them as often as I have a chance.
b) I am well on my way to becoming a vol. locomotive engineer. (Yes, friends, you read that right. Don't adjust your computer screens. LOL If you are thinking, 'How odd for a woman,' you are right! As far as we can determine, there are about 100 or fewer females in the US who drive a train!!)
c) I've been involved with police, fire, EMS, disaster relief, etc, as well as teaching & environmental education to youth through games & activities.

PART 1: If you care to share with us, why did you join this team? What do you hope to get out of it and maybe give to it? Are there certain topics you are particularly interested in for this thread?
