Chilled carrot and summer squash soup


•2 C sliced carrots
•3 C reduced sodium chicken broth
•1/4 C chopped red onion
•1 clove garlic
•3/4 tsp ground cumin
•1/2 tsp salt
•1/4 tsp ground coriander
•1/4 tsp black pepper
•1 lg yellow summer squash, chopped
•3/4 C low fat plain yogurt
•fresh chives, cut in 1/4" lengths (garnish)


Directions
1.In large saucepan, combine carrots and broth. Cover and bring to a boil. Lower heat to medium and simmer until carrots begin to soften, about 7 minutes.
2.Add onion, garlic, cumin, salt, coriander, pepper, and all but 4 tablespoons of squash. Cover, raise heat to high, and bring to a boil. Reduce heat to low and simmer, covered, until vegetables are very tender and flavors are blended, 15 to 20 minutes.
3.In food processor or blender or with a hand blender, puree soup until smooth. Pour into bowl, cover, and chill 1 hour.
4.Stir yogurt into soup until combined. Divide into 4 bowls and garnish each with a tablespoon of reserved squash and chives.

There are a lot of healthy recipes here. Learn to use spices and herbs. I have posted a few of my favorite recipesthere Your imaginations is endless. I do not like bland food. I do a most of my meals from scratch. Hubby does not like eating out because he says our food is tastier and healthier. Fast food and prepackaged food is what is killing americans. We just all need to go back to basics. Cook like our grandparents. Fresh fruit , vegetables and chicken and fish. It is up to us to be healthy, we are responsible what we put into our mouths no one else.

The Sparks recipe book is good but if that can't be then use the recipes on line thru sparks.
Some things I DO NOT give up......olive oil, lots of fresh herbs and garlic. (not the dry).

Hello,
I would love to find great recipes that are easy healthy and still taste good. It seems like healthy food is bland to me but I know there are healthy and delicious recipes out there. I just need hlpe finding them. emoticon

Hi my name is Melanie. I'm the mother of a 14 1/2 year old daughter and a 25 year old stepson. I work in a special education classroom where the children have various disabilities. I've been a couch potato for a long time and now I think I'm ready to do something about the excess weight that goes along with being a couch potato.

Hey Carol and welcome once again. Sticking with something is ALWAYS hard. I truly hate working out but I do it every day.......I am in charge of that, with no excuses and just for me, Baby steps....don't get overloaded with too many things, work on one and then add bit by bit.
