I’m planning a bowl. Greens, beans (likely chili seasoned), some roasted squash. Dressing undecided, but I might just use my hot sauce. It’s peppers and vinegar with onion and lime. Should suffice. Skipping rice because I made bread yesterday.
The sweet portion will be bread and blackberry chia jam.

Made veggie meatballs/burgers out of leftover lentils and a quinoa mix. They will be served today as sweet and sour meatballs (little rhubarb jam, little raspberry jalapeno jam, cornstarch, 1/2 can pineapple) over rice. Oh, I threw some peas in the sweet and sour sauce to get a small bit out of the freezer. On top of the sweet and sour meatballs I threw hg lettuce. No salad dressing needed. Like the asian way of eating greens.
Tomorrow the veggie burgers will be served as gyros on pita with lettuce, tomatoes, cucumbers, onions and oat yogurt taziki sauce. Air fried potatoes and baked beans on the side.
