I made a low-fat meatloaf of ground turkey and grass fed beef and loaded it up with veggies - fresh corn, spinach, carrots, celery, peppers and summer squash. In fact, it had so many veggies in it I didn't bother making a side dish! It was so moist and tasty I don't think my hubby realized that it was low fat!
