* Orange mash (potato, sweet potato, pumpkin, with a little bit of margarine and skim milk)
* A steamed piece of corn cob (approx 125 grams)

Last night, I had a filling dinner of roast lamb, roasted vegetables (onion, carrot, pumpkin with skin on, sweet potato with skin on) and steamed vegetables (choko, peas and cauliflower).

I made a low-fat meatloaf of ground turkey and grass fed beef and loaded it up with veggies - fresh corn, spinach, carrots, celery, peppers and summer squash. In fact, it had so many veggies in it I didn't bother making a side dish! It was so moist and tasty I don't think my hubby realized that it was low fat!

I eat 4-5 small meals/ day

But my last meal was a tuna melt.

Mix the ingredients below together and cook on frying pan:
1/2 can bumble tuna in water, very low sodium (2 oz or 1serving size)
1/4 cup shredded mozzarella cheese
1 egg white

After cooked put on a very small piece of whole grain tortilla, add tbsp of hummus, and 2 slices of tomatoes
