A few choices when I'm looking for one-handed are:

- breakfast "strata" baked in individual muffin cups (blend of old bread, veggies, and eggs); for example: recipes.sparkpeople.com/recipe-detail.asp?

- breakfast "cake" (or baked custard), which can also be baked in to individual muffin cups (3 per serving); for example: recipes.sparkpeople.com/recipe-detail.asp?

- muffins that are high fibre, low sugar, and with some protein (for example: recipes.sparkpeople.com/recipe-detail.asp?

)

- cheese slices, pickled or raw veggies, and meat chunks (with a toothpick as a utensil if you want)

- soups or stews, pureed to be easy to sip at, and kept in a well insulated thermos

Wraps / sandwiches of any kind are always good --- and I have found that I really enjoy the unusual mix of a twist on a PBJ: use favourite nut butter, thinly sliced meat of choice, add homemade fruit butter (apple, pumpkin, combination) or some stewed fruit (almond butter with sliced chicken or pork topped with some stewed prunes in a sandwich on 100% rye is surprising good - and holds together wonderfully in one hand).

Tostadas, hamburgers, sandwiches, pizza, empanadas, tacos, burritos, arepas, calzones, egg rolls, hard boiled eggs, potstickers, fried chicken ....

Many of these are regional variations of the same concept, basically containers with filling.

That’s what comes to my mind. But you want recipes too for handheld food too, right?
