I'm planning to give up beef for Lent, so tonight I'm finishing the other half of a piece of beef, eggplant parmesan for tomorrow night. I have 6 different recipes for eggplant parm on my laptop, so I'll try all of them the next 6 weeks & delete the ones I like less. Also plan to make various vegetable soups, at *least* one a week. Much of my portion distortion problem is that recipes make so *much*, and I live alone.
