Waiting for the cable guy...

Online. Or my husband is. Jerome. Somehow I don't think he looks like Jim Carey, but who knows? Dinner is in the oven on warm. Macaroni and cheeze, green beans with toasted onions on top, and some toasty corn bread.

So I sit at my computer, doing some Sparking. I've been trying to stretch dinner over 2 nights instead of eating it for lunch the next day. This is so I don't spend so much time in the kitchen. I love to cook, and like trying new vegan recipes. But I need time to paint and exercise. And then there's the kitties needing to be played with.

So I've made Pasta Fazool for lunch, or opened a can of this soup, and served with an antipasto salad and a small piece of bread made in my bread machine. That's actually Pasta Fagiole, or pasta and bean soup. Unless your hail from Southern Italy and then spent some time in Brooklyn, NY.

I also made a lunch of Amy's Non-dairy burritos with a salad with avocado and tomato.

I don't know why I feel I have to make restaurant-worthy meals all the time. I guess I have a Constance the Competitor inside me too, like ONEKIDSMOM. Competing with myself to see if I can knock it out of the park at the stove another evening.

Working from home really agrees with me. After my realization that I am, yes, indeed, a senior citizen now. There's no getting around that any longer. And seeing younger faces at work, not fitting in. Not wanting to be bothered, finally. My cohorts mostly retired. Change. It's a big thing. And it sneaks up on you, and when you turn around in shock, it whacks you in the face. So I really don't mind not being in the office since March.

But here I am, with my gray, curly locks. Dealing with things as they arise. Adjusting to the new abnormal, whoops I mean normal. Trying to make positive changes in myself and my daily life.

It's all we can do. That, and don't watch too much news.

Well, waiting for Cable Godot ended up not being productive. Mission of lowering bill not achieved. Endless yards of digital red tape and customer service incompetence.

But I managed to entertain myself by writing this blog. All is not lost.

On to dinner!

    Entertaining thoughts. emoticon I’m doing more cooking than I have in years and find it less of a chore if I make large batches to eat for a few meals and then freeze the rest. Really enjoy trying healthy recipes with lots of fresh produce, but definitely no baking. emoticon

    I really enjoyed your blog. I like the way you write. I can relate to the senior citizen's comments. It isn't fun to admit that we are...but it is true. Not fun but we do have some wisdom, unlike a teenager. Your food sounds really good.

    I love to cook, too, but have other parts of life that need attention as well. So, good that you have figured out ways to still do some of the cooking you love and do the other things in life you neeed to do.
