50th in 4th Cookery Challenge: Baked Breakfast Pancake

Another recipe from the Tray Bakes book my SIL bought while we were on holiday.

I used quark instead of ricotta, the author said that anything similar was ok. I used less milk as it was looking runny. I forgot the sugar! But it absolutely wasn't missed. I also lined the tray with baking paper instead of butter.
I didn't use her suggestion for topping it with a crazy amount of butter, we had raspberries, yogurt and a little bit of fancy lemon curd handmade in a town we visited earlier this year.

It is really high in protein for a pancake and it was great serving us all at the same time. No flipping, watching or more frying butter to rack up calories!

Would make again.
