48th in 4th Cookery Challenge: Vegan Oven Baked Curry

Ok truth told this is my whole interpretation of a recipe in a book my SIL bought on holiday that I had a flip though!
It was a traybake recipe book, everything only meant to dirty one dish and be quick to prepare and it had some nice ideas. I took pictures of the titles of each chapter!
I think however my choice of dish was too small the onion especially wasn't cooked through, so I ended up having to boil it for a little to finish off. Also sweet potato, chickpeas, peas, coconut milk and spices.
Served with microwaved poppadoms for us and soft garlic naan for the smalls.
Everyone ate and enjoyed but I think was bit high calories for the amount you had. 4 servings of veg in one serving as well. Additional meal done to freeze for another day.
