I made the vegetable curry but swapped out the sweet potatoes for butternut squash, added finely chopped mushrooms that where un-busy in the fridge.
It was super simplistic spicing, but I copied it and was surprised by the result. For a really quick midweek curry using frozen chopped veg and tinned chickpeas and tomatoes and easy spice it was rather nice.
That's my daughter's plate pictured. She wasn't a fan of the whole leaf frozen spinach. I kinda agree and think I prefer the chopped version.
