The Benefits of Bulk Cooking

A month ago my precious Mum died aged 97yrs and 8 months. The last week I spent a lot of time with her in the Private Hospital she was in. The last day I was there from 7a.m. until she died, at 10p.m.
Last night my 24yr old grandson was acutely unwell and needed to be taken to hospital via ambulance. He was really stressed about the thought of being there by himself. His 21mth old son was asleep and loaded with a cold so g/son's partner stayed at home. At 10p.m. (seems to be something about that time) I left my home and drove an hour down to the hospital to be with him. We were there all night and when he was discharged I drove him back to his home town an hour away, and then to my house, 1/2hr away. I never got any sleep at all until 1:30p.m.

I always bulk cook. I have a lot of full, balanced meals in the freezer and I have a lot of casseroles/soups/cooked beef patties in the freezer. I also cook my veges every 3-4 days so I only have to reheat/eat. This technique saves power costs; saves money but taking advantage of bulk buys or specials; saves energy; and most importantly gives you something healthy to eat when emergencies such as the above happen.
I never cooked AT ALL for two weeks when I was with my Mum and after her funeral. I ate very healthily all that time and could have gone a lot longer than that. My meal was all ready to heat/eat for tonight, which was great because I had a 4 hr sleep and only woke at 5:30p.m. because my poor old cat decided she was hungry and lonely LOL!
Just prior to leaving last night I had my normal 'snack' (more a mini meal of Low Carb Soy & Linseed toast with cottage cheese, banana, a piece of apple, etc. When I left last night I took some cut up apple and pear, and a healthy protein nut bar with me and nibbled on that overnight. The Hospital gave me breakfast - I had a little banana and yoghurt, as well some hot drinks during the night. Not one unhealthy item of food passed my lips LOL! apart from ......
...... Only problem was, I forgot to take my soy milk. I am dairy food intolerant (yoghurt is fine) and the results of 3 drinks using about 1/2 cup of milk total over 8 hours, was starting to take effect on me even before II got home (gradually worsening) LOL! Just as well I wasn't there much longer
