Meal preppin'

One of my favorite things about fall is the cooler weather. I can finally hang out in my kitchen for an hour or more and not get wilted and hot. This means more meal prepping, which I find to be healthier and cost efficient. I started out with a vegetarian chili today.

What's your favorite meal to prep for the week that usually lasts you three days of more?

    Having to cook just for myself now, unless I have company, my meals last for at least two to four meals. Sometimes, I freeze them, so I will always have a meal ready on days that are busy.
    My neighbor will be going into the Hospital next Monday for hip-replacement, so I know, I will be cooking more. I already am planning a chicken-vegetable-noodle soup, and a great chicken thigh dish that my youngest son sent me. He is the gourmet chef in the family, and loves cooking. Actually, my two sons do most of cooking at home. I have to add that their wives both work (as they do, of course).

    I made a really delicious cabbage soup!... emoticon it is a Spark recipe. I dolled it up though with a few changes. )lasts two days).....I love the cooler temperatures too!

    Not being a cook, grilling chicken is usually what we do. Grill a large batch and then eat it with various other food for meals for the next few days.

    Roast chicken and veggies, can't wait to cool off too, love cooking, but in the heat no thank you, my crockpot has been my bestfriend lol😁😊
