47 days. . .

Well, our busy two weeks at work are up again. Thank goodness. It was especially brutal because we had another major deadline thrown at us smack dab in with our normal deadlines. It was an especially brutal couple of weeks.
I knew I wouldn't have time to workout this week on my lunch breaks, so I knew I'd really have to focus on my diet this week. So on Sunday I did a ton of meal prep.
While the kids were eating the homemade pancakes we made, I made egg muffins with egg, turkey and peppers for breakfasts. I froze them and have grabbed one every day. It's so easy to just pop them in the microwave for a minute and have a good breakfast!
Then when they were eating lunch before nap time I prepped 5 salads. I chopped up 5 romaine hearts, a ton of peppers, carrots and cucumbers. I had blueberries and raspberries on hand. And I put a bag of frozen chicken tenderloins in the crockpot.
After dinner I shredded the chicken from the crockpot and packed it in individual servings. I then packed toppings and dressings in 1 oz souffle cups and put them in the corresponding salad containers.
All of that prep made life SO easy this week! Every night I've emptied my lunch bag of the Tupperware from the day and loaded it up with the pre-prepped meals for the next day. I then just had to grab my lunch bag every morning! This is a SHARP contrast to my normal morning that involve toasting an english muffin, frying an egg, prepping a salad and snacks. And because the kids usually see me getting food, they want food so I have to make something for them and they usually eat something at home instead of, or in addition to, eating at daycare.
Additionally this week, I've been really focusing on cutting the typical processed carbs. Bread, pasta, rice, bagels, etc. Because I had my food prepped, I did awesome during the day and didn't have any before dinner all week. My husband cooks dinner, as I've mentioned before, which makes dinners tough. He knows I've been really trying to incorporate veggies though so this week he did a good job incorporating them into all of our dinners. I did eat some pasta and the tortilla shell, etc but because he had so many veggies, I loaded up on them instead of even more pasta or two tacos.
So, the FINAL bonus. . . I've dropped 2.8lbs since Monday morning!! Without exercising!!
I guess I know what I'll be doing this weekend! Food prep!!
