Yes, It's Worth It!

On Monday, I spent a few hours cutting and chopping cauliflower, broccoli, white onion, green onion, tomatoes, carrots, celery, peppers and mushrooms, and placing them in glass containers so I can see them each time I open my fridge. I also mixed a bag of mixed greens with romaine lettuce and placed in a ziplock bag. I prepared a baggie of veggies for a ground turkey vegetable soup, and one for a ground turkey veggie meatloaf. Wow, that time spent was so worth it! I've been able to make healthy salads by just opening the containers of the veggies I want and adding it to the already mixed lettuces. This helped me make healthier choices when it came time to eat lunch and dinner this week. I made the ground turkey vegetable soup last night and had some for lunch today, It's not only healthy, it's delicious.
Last night it was a delicious blackened salmon accompanied by a large healthy salad with a variety of veggies with balsamic vinaigrette dressing.
Tonight I'm baking the ground turkey veggie meatloaf, and will freeze a few potions for next week. I just prepared some fresh brussel sprouts for roasting to enjoy with it. I've not tried roasted brussel sprouts but have heard they are wonderful. Almost time to pop both in the oven!
Another vegetable I'm trying this week is spaghetti squash. I've heard good things about using this veggie in place of noodles so hey, why not give it a try! I'll let you know!
Planning and prepping for healthy meals takes time and effort and YES, IT'S WORTH IT! Why do I get off track from healthy eating when it tastes so good? Here's to this turning into a habit and way of life!!!
