Making A Few Changes

As you may have read recently, I make soups for lunch to eat during the week. It's nice because they keep it super cold in my office and I make sure they're around 10 grams of fiber+ per serving.

I have ulcerative colitis. It is an autoimmune disease related to chron's. What most people don't realize about most autoimmune diseases is that they don't attack just one part of the body. The biggest part of ulcerative colitis is that it attacks my colon (namely ulcers in my colon), which is what you would typically see if you randomly Googled it. It also attacks my joints, stomach, makes random abrasions show up on my shins, causes inflammation everywhere, the list goes on & on & on & on. Every time I have something wrong with me, the doctors almost immediately say, "Oh that's just your ulcerative colitis".

Part of the attack on my joints is my body building antibodies against the poison Humira that I take twice a month. I wake up every Friday morning almost unable to move. I force myself out of bed to go to work. Some time on Friday night after I get home, I take my second poison, Methotrexate, which stops my body from producing antibodies against the Humira (I had a fever, edema and high blood pressure and saw 6 different doctors for a year before a rheumatologist realized what was going on). I hate both poisons with a passion, but they are the first drugs that I've been able to tolerate that keep me in remission and that is always the ultimate goal with any autoimmune disease. There is no cure, there is no healing, there is only times of remission.

Typically, the Methotrexate takes away all my pain until the following Friday. It truly is a miracle drug for my situation. However, this week it didn't. Saturday I had a migraine starting in the early evening. Sunday I went out with my roommate and we met a friend later in the day and again I had the joint pain and a headache started blooming before I could take my migraine meds. I kept saying what in the world is going on??? I woke up this morning & it was like Friday all over again. emoticon I could barely move. I texted my boss and receptionist & told them I'd be late due to having to move so slow. The entire hour drive to work I kept wondering why I was in so much pain. When I was almost to work, I realized I knew what it was. Shrimp. emoticon

Before I was diagnosed with UC, they thought I had lupus. Come to find out, it wasn't lupus, but a reaction to uric acid in red meat. Most people get this same thing in the form of gout in their feet. I get it from my ribcage up in every muscle and joint and it freezes them to the point of not being able to move my neck. Good times indeed! She told me in 2010 to give up red meat (including pork because yes it really is red meat). She then said that I may start having issues with shrimp. I knew that day was coming. I knew I'd one day pass the threshold of too much uric acid and I would have to give up shrimp. Apparently that day is here.

I did some more digging online at different reputable websites and it appears that many people ask the question "are UC and Gout related?" So, I'm going to have to make a few changes. The biggest cause of gout is meat. Pretty much all meat is somewhere on the list. The next cause is alcohol. So, I'm going to go mostly meatless (don't worry, my doctors have me take iron pills and a b complex sublingual already, so I won't be deficient in vitamins) and limit my alcohol intake.

What does this have to do with soup? My roommate is a chef. Any time we have chicken or turkey bones, she makes amazing stock. You see where this is going, right? I then use that amazing stock for my soups. I will now have to limit how much of that I use in my soups. emoticon

An allergist once told me that it isn't necessarily one thing you're allergic to that causes you to have the reaction. It's the fact that they build upon each other so that when you have that one thing that causes a reaction. For instance, I'm allergic to dust mites, cats, juniper and pine (do you KNOW how many pine tree farms there are in Florida?? Those aren't woods where the trees just happened to line up in rows...they're pine tree farms LOL). So the allergic reaction comes in with cats after I've been outside near the pine trees, the cat climbs the juniper tree, then goes under a bed that hasn't been vacuumed under in a while and then the cat is in my lap. I then start sneezing because all these things hit me at once. Don't get me wrong. People with severe allergies to shellfish and peanuts & the like aren't in the same position as me. They MUST stay away from them. What I'm going to do is limit my actual meat consumption, alcohol consumption and then use 1/4 of the broth I would normally use in my soups to see if that helps with the constant pain. We'll see how it goes.

    I hope you have luck with limiting all those. I also have an autoimmune disorder, which thankfully has been in remission, without meds for a year. Keep your head up you're amazing!

    Wow. That is an awful lot to have to deal with. I'm sorry you have to give up so many things and I wonder how you'll make your broth. I will pray for you and also the scientists that they can find something that helps more with fewer side effects. emoticon
