With this flu that I had, I am still not back to my old self by 100%.
I real-l-l-ly neeeeed to get to the grocery store, but I haven't felt up to it. My energy level has not come back.

So last night I had to get creative about a supper that would keep me within bounds. I had a job ahead of me to try to put something together, out of what we had and didn't require thawing out and would be low carb. Kitchen check revealed, leftover steak, 1 green pepper, 1 onion, 1 spaghetti squash, some cheese.

What to do? There could be some quesadillas made, I had a few low carb tortillas, but not enough for both of us. Those would also take alot of cheese. With that much cheese used I would definitely want to use the low fat stuff and there wasn't enough of that either.

The steak and the green pepper had me thinking of Philly Steak, but then there is the bun. Have I ever mentioned how I like scouring the internet for ideas and recipes? I think I might have mentioned that one time? ;)

I searched for the words philly steak and spaghetti squash. Well, guess what? That is a "thing". I wished I would have had 2 green peppers, but onion is a vegetable too and I had a nice big yellow sweet one. It turned out good. In a soup plate spaghetti squash topped with the onion, bell pepper, steak, all sauteed in olive oil and then topped with a little thin sliced baby swiss. It could have only been made better if I would have had low fat swiss. That is why we sliced it really thin with a planer. We wanted to spread that yummy swiss flavor as much as we could for as little bit of cheese possible. We didn't even miss the bun and we were stuffed for (what SP called) 398 calories.

Today after work I must make myself stop at a grocery store, because I don't think we can pull one of those out of a hat tonight.
