Cookbook for one

Well, the cookbook from 1987 from Better Homes and Gardens is helping me with organizing my kitchen, especially the refrigerator and freezer with my food portions. I've heard others who say they cook and then freeze left overs for additional meals and I have done the same in the past with some success. But after a day or two of trying to think of other ways to fix left over chicken, I just wasn't good with the consistency of thinking of additional things to make and having the ingredients in my kitchen without spending all sorts of $ for flavorings, spices and other things. Or worse yet, throw food away.

My adventure began by spending longer than I thought I would in the grocery store choosing Glad freezer containers, protein, fruit, to go along with the veggies that I already had in the kitchen. Sometimes I have done that and then come home and put the things in the refrigerator only to forget some and then having to throw away spoiled food. There was a real price break if I bought two pounds of the hamburger instead of the one pound that was all that I needed for the recipe.

I only had only 45 minutes to cook at home and I was successful at making half of the raw hamburger into the mixture. Last night then, I followed a recipe for basic hamburger and then ate one fourth of the mixture and froze the other three portions. I added onion, garlic and Worcester sauce. I drained the liquid off the hamburger. To the supper portion I added some already cooked rice, and cooked a serving of brussel sprouts in the micro wave, added a serving of fruit, bananas and grapefruit, and a glass of milk. I was able to fix and eat my supper, freeze the three portions, stack the dirty dishes in the sink and arrive on time to my next appointment.

Later in the evening, I washed the cooking pot, and then made the second pound of beef into the basic mixture only this time, I took a moment longer to put this four portion size into the refrig to better get the fat off after it chilled for a bit.

If I look in the cookbook, it will give me other mini things to add to this basic mixture for a variety meal. I need to get additional freezer storage containers.

I've looked for this book for a long time, and I'm glad that I found it.

    Such organization and determination! I hate to cook, but when I do, it is always something I can refrigerate or freeze for another 3-4 meals. Such a luxury to have something to pop into the microwave and in a few minutes have a wholesome dinner of homemade chili or soup. I make most of my soups with scrambled hamburg, it is better than chunks of stew beef because it spreads throughout and gives a beefy taste to every spoonful of vegetables--stuffed pepper soup is my fave.
