Israeli Salad

I recently found this new delightful side dish a couple weeks ago & have made it twice already. It's perfect for a cookout/picnic setting or as a side dish at home. Last night I mixed it with a brown rice medley, black beans and it was a super supper!!!

Israeli Salad

2 extra large tomatoes
1 english cucumber
1/2 med red onion
1 orange bell pepper
1 yellow bell pepper
1/2 cup herbs ( italian parsley, mint, cilantro or a mix)
zest of one lemon & 1/2 of lemon
3-4 TBSP EVOO (extra virgin olive oil)
salt & pepper to taste

Chop the 1st 6 ingredients (the smaller the better)
Place items in bowl then drizzle with lemon zest, lemon juice, evoo & salt/pepper
Let chill

Very refreshing and offers an alternative to the traditional garden salad.
