When planning a meal for just two people can imho be somewhat of a challenge. I work at trying to have what I consider a balanced evening meal. I find now that the Plate Method really helps me a great deal. Both my husband and I enjoy eating fresh vegetables. I especially love the taste and texture of steamed vegetables.
For countless years, I have used the Foreman Grill in grilling meats and fish. I've discovered the joy of using the Land Of Lakes Saute Express and pan cooking the meats and fish. When it comes to the starches (i.e. rice, corn or potatoes). I now use the Hidden Valley Ranch packets in making roasted potatoes. One or two (depending on the size) of a Red Rose Potato is a perfect addition to our meal.
Of course, I don't want to feel deprived so while my husband has his dessert and incorporate fresh fruit (blueberries, strawberries, raspberries etc.) topped with Greek Yogurt.
Where before, I found meal planning to be somewhat of a chore, I now find it exciting to try to add new things to our menu.
