What do I want Maintenance to Look Like?

When I am "done" with weight loss and ready to maintain, how do I want that to look? My brainstorm:
I don't want to be as focused on food and SP as I am now; I can't sustain this level of focus forever; see below for what I think I still need to be doing
I will be exercising still daily; I would really like to continue the 10 minutes of exercise a day forever - the best "spark" tool from the Sparkguy ever
I still think I will need to track food, though perhaps not every day; I would like to be able to "eyeball" portions and choose the right combination of food groups without worrying about it and still be able to maintain; I'm not sure how doable this will be; for now I will say that I will still need to track food most days of the week
I'd like to have a "day off" 1 day a week plus maybe a couple of other meals (currently I have a whole day off and 1 meal off)
I'd like to be exercising at least 30 minutes at a time 3-4 days a week
I'd like to be able to get back in control quickly if I start down a bad road; like within a week; I will need a plan for this
Weigh in once a week and stay within 3 pounds of my maintenance goal
So, I'm actually wondering if I should "practice" maintenance, to ensure I am comfortable with the behaviors, during my weight loss period. Like for example, perhaps after 20 pounds lost, do maintenance for a month and see how it feel (can I do this forever?), then go back to weight loss.
Hmmm... food for thought.
