Day 2 of My Healthy Eating Challenge

I've started another whole 30 challenge. It's a challenge to eat only whole foods for 30 days. I've had little cheats (such as some hot cocoa in my coffee), but over all I've been pretty healthy.
Breakfast ~ 2 boiled eggs, 1 cup acorn squash, 1 cup blanched and seasoned kale
Post Workout snack ~ 1 banana, 1/4 cup almonds
Lunch ~ Chicken Pad Thai ~ 2 cups sauteed cabbage, 1 baked chicken thigh, 1/2 cup California mix and 1 cup sunshine sauce (peanut sauce made with sunflower butter instead of peanut butter)
Dinner ~ Zpaghetti ~ 1/4 cup ground beef, 1/3 container spaghetti sauce, zucchini noodles (made my putting a zucchini through an apple corer)
I feel amazing! It's nice to get away from the gluten and dairy. I'm also enjoying all of these fresh veggies. I'm excited for fall to start, but I will definitely miss all of the fresh produce.
