DAY 2 - HOW WILL I DO IT - VEGETARIAN

So now that. I have committed to increasing my veggies or decreasing my meat consumption how do I plan to go about this. Well for example we went over to friends for dinner last night and I was a little concerned as to what we would be having for dinner. It all worked out fine. I did have a grilled chicken breast but they had made a couscous salad which was yummy, fresh asparagus and fresh green beans. I loaded up on all three of these items and it was delicious. I am going to have to buy quinoa and make this for us. Today we are golfing with friends and going back to their home foe dinner so once again I am not doing the cooking. I hope I am lucky again. But I will just have to make good choices. So now for the rest of the week I will make sure I have lots of veggies I. The house and as I said yesterday I will be exploring my cookbooks and Chef Meg's. ideas. Wish we luck!!!!!

    Adding veggies is hard sometimes!!! But you've made some good choices. You mentioned (not in your blog) about carbonated water - do you have a brand? Or where do you buy it? Is it the same as sparkling water....just wondering - thanks!

    I love quinoa. I tried it for the first time at a Whole Foods market here in town. They make a black bean quinoa salad. It has quinoa, black beans, corn, tomatoes or bell peppers, I think and seasonings. It is delicious! I need to find a recipe that is similar so I can cook it myself. I'm sure a home cooked version would have less salt, etc. Anyway, good luck to you! Pass along any recipes or ideas you come across!
