DAY 2 - HOW WILL I DO IT - VEGETARIAN

So now that. I have committed to increasing my veggies or decreasing my meat consumption how do I plan to go about this. Well for example we went over to friends for dinner last night and I was a little concerned as to what we would be having for dinner. It all worked out fine. I did have a grilled chicken breast but they had made a couscous salad which was yummy, fresh asparagus and fresh green beans. I loaded up on all three of these items and it was delicious. I am going to have to buy quinoa and make this for us. Today we are golfing with friends and going back to their home foe dinner so once again I am not doing the cooking. I hope I am lucky again. But I will just have to make good choices. So now for the rest of the week I will make sure I have lots of veggies I. The house and as I said yesterday I will be exploring my cookbooks and Chef Meg's. ideas. Wish we luck!!!!!
