One of THOSE moments - MOVE IT!

I’m having one of THOSE moments. One of those “Who is this new healthy person I have become?!” odd self separation moments. One of those stop and notice the lightbulb over my head moments. I am currently eating a tofu veggie wrap that I not only cooked myself but find incredibly delicious. Who am I?!

I used to be the girl who couldn’t chop an onion.

Now I have chopped onions, green peppers, zucchini, carrots, and tomatoes in my wrap.

I used to be the girl who wouldn’t eat it if it wasn’t fried and/or chicken.

Now I have crumbled tofu IN veggies AND I made it myself!

I used to be the girl who wouldn’t eat a wrap unless it was part of some platter.

Now I have my home made wrap, with an apple, and I’m happy.


Who is this person?!?!?! It is ME!


Guess what folks? This spark recipe for tofu wraps was super easy. It wasn’t even all that expensive. It tastes wonderful. It makes enough servings that me and my hungry BF had them for dinner and can probably have a few more lunches off of these too. I found a winner and it is GOOD FOR ME TOO! It is also probably one of the most pretty dishes I have ever made. It has tons of colors and nature in one skillet. I will have to post a picture!

This weekend was tons of fun. BF’s cousin and my cousins were in town all weekend. Friday night all of us went out to dinner at this Irish place. My stomach was upset so I ended up eating half of a bowl of crab soup and some potatoes. We girls went home to watch Bridesmaids while the boys played poker, and I naturally fell asleep. Saturday we got up to make “egg mess” – egg beaters, veggies, and potatoes all in one skillet. I took my sister and cousins shopping, while the rest of them were running the Baltimore Marathon. We went to a pizza place for dinner and I allowed myself two medium sized slices. My stomach hated me all day yesterday for it!

Yesterday we got up super early to see BF’s cousin off. We got TONS of errands done before noon. Trader Joe’s trip for starters – where I loaded back up on veggie goodness! We went on a LONG four mile hike around the neighborhood trails (see previous blog’s pictures) and came back in time to shower and watch some football. I made pumpkin muffins from a Trader Joe’s combo. I had one for breakfast today: 150 calories and DELICIOUS! I am SO proud of myself as I have NEVER considered myself a baker. I also made this tofu veggie wrap stuff and cheered the Ravens to a WIN! Woo hoo!

I was supposed to run yesterday but woke up with some serious knee pain like I have never felt before. I iced it and took ibuprofen before our walk, but I never felt up to running. I am a bit worried. I woke up this morning and it still has a little tinge to it. Hopefully after my walk today it will feel alright for running tomorrow.

I saw this great quote on a friend’s facebook status today: “Dead last finish is better than did not finish which is better than did not start.” This is how I’m feeling about running today. I’m not the fastest, I’m not even super able to run yet, but I am TRYING and that has to count for something right?!

I’m feeling pumped for this week and I have a lot to do but hopefully won’t have a problem tackling it all. It is going to be a BUSY week at work as well, so I am a bit worried about that carrying over into the personal side, but no use crying over milk that hasn’t spilt yet.

Tonight is veggie burgers and healthy sides (broccoli I hope, yum!) which makes this an entirely veggie day. I catch myself in these moments where I can see just how much I have changed. I’m not perfect. I still want junk sometimes and I am not all that great at running. But I am DOING something and that is better than staying in one place. Let’s Move!

    Wow, you've really made some healthy choices. I've tried Tofu but haven't been comfortable with what I've made so far. I think I need to try more recipes.... if you don't mind, I'd love to know what recipe you used... Thanks Beth

    Sound like you did GREAT over your busy family weekend! Congrats & isn't it just SUPER taking control of your own eating??? Love it! And go you for baking and chopping and taking care of business. emoticon

    Be careful with your knee, there is NO hurry to run on it... especially if an extra day (or 3) will keep you in it for the long haul. I don't know about you but when I first started changing my eating & began walking, I pushed TOO hard and ending up setting myself back - I think it was self - sabotage but it's hard to recognize sometimes. Just coddle your knee until you're sure.

    You are awesome & I love your attitude girl ~ way to go building healthy habits!

    As always, I love your upbeat outlook on everything.

    Your tofu wraps sound great. I find that I enjoy vegetarian cooking so much more than I do non-veggie. The colors. The creativity involved. And I just feel happy and energized once I've eaten the final product :)

    Look at you!!! Way to go! How funny is it that at the beginning of our journey we sometimes think, "Is this lifestyle going to really stick? Are the changes going to make a real difference?" And then before you know it, you wake up one day and you are the person you were striving to be! Good job! Keep it up!
