Awaiting Irene

I'm awaiting the arrival of Irene on the South shore of Long Island. I just had a second healthy breakfast, but a second meal, nevertheless. My faith and trust is in God, and my prayer partner and I have prayed already today, so I believe we're covered in the Lord's protective grace. I'm also awaiting the arrival of my daughter and grandson who are living on waterfront property a few miles south of me and are basically evacuating. We're all stocked up, including GS's bike, in case streets are impassible after the winds die down. The two cats (brothers Alex and Sebastian) will also be spending at least the weekend at my house. So far my daughter seems in a good mood and I hope that prevails for the time we're together. I'm going to make pumpkin brownie mini cupcakes after I finish writing. I need something to do and making comfort food should help everyone later on. The minis are only 2 points each, so I can enjoy them without guilt.

RECIPE: *Time adjustment since original blog; increase baking time 10 mins.
one box Brownie cake mix
one 15 oz. can real pumpkin(not pie filling)
a "few" Tbsps. water
one tsp pumpkin pie spice
****Stir ingredients in mixing bowl until moistened
Bake at 350*about 35 minutes; I use mini cupcake tins,( use any size cake tins but adjust baking time for size)

Hope all in the path of Irene come through safely. Praying for the safety and well being of all. emoticon

    I am in Queens, New York and the rain here just started to come down heavily. The worst part of Irene is supposed to hit tomorrow morning. Love how you are baking those brownies...they sound wonderful..think I'll give them a try. Stay safe....

    We're in the midst of the hurricane now...strongest winds I've ever experienced. The peak of it is supposed to be around 10:00 PM tonight...clear by tomorrow. Can't wait for that. I don't know how much rain we've had, but it's a lot. I have puddles in my yard.

    They say when it gets to you it'll be down to a tropical storm. It's a cat 1 now, and still mighty strong. You'll have LOTS of rain. I pray with you for safety. Long Island will surely take a hit.

    Hi Pattycake--our eldest daughter lives in CT but not far from Long Island Sound. She is near Lake Zoar and teaches in Stamford. I imagine she won't have school on Monday. I think up here in southern VT we are more likely to have heavy flooding, but high winds are a worry. I live in the woods!

    Thanks Pattycake for your blog. I am in North Carolina, roughly 1.5 hours away from the outer banks. We are getting a lot of rain and the wind has begun to pick up. Things are not too bad where I am now. Like you, I believe that the protective hand of God is on us, and although some will suffer, we will still be protected.

    Thank you, also for sharing the recipe. I had read that pumpkin was a good substitute for oil in recipes, but I had not come across a recipe as simple as this.
