This recipe is from Kathy's "Healthy Happy Life" blog - another favorite food blogger of mine.


Her burrito looks absolutely delicious! Beautiful presentation too.

Note to self.... Take Daiya peperjack out of the freezer

    Another great share. Denise! I love these nifty blogs you're finding. I always keep my Daiya in the freezer in a reclosable plastic container, and since they don't "pack" in the measuring cup or spoon as they do when thawed, I measure out a few more shreds when they're frozen. last night I tried Rising Moon "Primacotta"-filled stuffed shells, and sprinkled 2 TBS of Daiya Pepperjack on top before covering with foil and baking in the oven. That was the best meal! I'd forgotten how good this kind of Italian food can be, and it was vegan!
