Wednesday, December 15, 2010
Here's our recipe:
Fruit bottom:
6 big apples peeled, cored & chopped into bite size pieces
1.25 TBSP organic sugar
2.25 TBSP spelt flour
1 tsp cinnamon
3/4 cup raisins (can be left out if you don't want/like them)
Crisp top:
2/3 cup Earth balance margarine
1.25 cup organic rolled oats
2/3 cup spelt flour
3/4 cup toasted walnuts
1/4 cup light brown sugar, packed
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp anise seeds (optional)
1/2 tsp salt
For this recipe, I used a 3 Quart Corningware oblong baking dish.
This recipe makes a very large crisp.
Directions:
Preheat oven to 350 degrees for 5 - 10 minutes.
Put sliced & chopped apples into baking dish. Toss well with sugar, flour & cinnamon.
If the apples are dry, you might need a TBSP or two of water. If they're juicy apples, don't add water.
Sprinkle raisins over top.
In mixing bowl, combine rolled oats, flour, brown sugar, walnuts (after toasting & chopping), earth balance, cinnamon, allspice, anise seeds, salt. Keep EB out of fridge to soften for 15 minutes.
Put in a 350 degree oven for 35 - 40 minutes. Check apples with a fork at 35 minutes - if hard, keep in oven another 5 minutes.
ENJOY!
