Forced to rest, again!

I think I may need to start actually planning a day of rest from working out in my schedule. I don't want to, because a lot of the "working out" that I do is fun. There's the beach body bootcamp, the MMA class, Krav Maga, and the training in general. The only thing I don't really like is cardio (on machines anyway, but running is too hard on my legs to do it every day), and that is probably the last thing I should be cutting.
But half this stuff doesn't feel like a workout. It's just fun. I know it strains my body, but I'm not sore. I'd prefer taking a break from actual work, since that's far more draining. I'm pretty sure it's the combination of 7 days a week of working out and 5 days a week of a tiring job that leave me feeling weak and tired.
However, I'm starting over to some degree in my workouts, focusing more on martial arts and fun activities, and less on being a gym rat. My time with my trainer is coming to an end, which means I have to restructure my week.
The person teaching my MMA class thinks I should try my hand (body?) at jiujitsu, seems to think it would be a good fit for me. I just want to learn new ways to kick ass, so I'm up for it.
Where will I find the time for all this, AND a social life and sleep? Who knows, but I'm gonna try anyway.
