A Different Feast This Year

My Thanksgiving feasts have always been the typical, fat laden Southern specialties. Turkey, of course; good, healthy protein. Side dishes included dressing made with chicken stock and butter, candied sweet potatoes (lots more butter), cheese soufle (butter), mashed potatoes (butter), cranberry sauce, gravy made with turkey drippings and yeast rolls (butter). Desserts included pecan pie, pumpkin pie and chocolate cake.

This year will be vastly different, but I promise you, just as good.

To go with the turkey we will have dressing made with homemade cornbread and fat free broth, mashed potatoes made with skim milk and fat free sour cream, cranberry sauce, green beans with herbs, steamed asparagus, homemade whole wheat rolls, and dessert will be ambrosia. I found Heinz makes a very good fat free turkey gravy - not as good, but considering the fat tradeoff, excellent.

My daughter and I will each do part of the cooking and since DD and SIL are avid Sparkers, the menu was a no brainer. No complaints!

There will just be the three of us so we will have lots of leftovers to make healthy homemade frozen meals and pack for lunchs.

We are all looking forward to our first healthy feast. Most importantly, we will spend the time talking about all we are thankful for and visiting by phone with far away family members.

    This is wonderful, Jean! I think Spark has enlightened many people to serve more healthy dishes for holidays and isn't that wonderful? I know it is for me!
