Back on track!

Okay, so I disappeared for a little while.

I definitely got off track for the entire summer, but I am pleased to say that despite losing my healthy habits, the slightly-more-active season kept me from gaining back all of the weight I lost. I am only set back three pounds from my last weigh-in back in March, and I must say, I am pretty impressed with myself! I thought for sure I'd have broken 230 by now.

I'm taking small but sure steps toward a new, healthy me. Tonight I'm helping my mother cook dinner (something I haven't done in ages, can't wait) and we're trying something new. My boyfriend's on the Atkins diet, and even though I would never get into something like that, some of the low-carb tricks really are great ideas.

Tonight we'll be making chicken parmesan. We cut the chicken thin to make sure those portions are appropriate, and were sure to grill it in extra virgin olive oil instead of completely frying it. We used panko crumbs instead of regular bread crumbs, but I don't know if that makes a big difference. We're baking it with homemade tomato sauce (made from our own home-grown produce) and, instead of spaghetti, I am using an Atkins trick: grating zucchini into thin noodle-like strips. We'll cook it in a little olive oil with some parsley and black pepper and it should be a great compliment.

    Your recipe sounds really good! I used to use squash instead of pasta many years ago... i forgot all about it! I'm inspired to try it again! Thanks! emoticon
