So glad you asked! Yes, you can! Does it taste good? Oh, hell yeah! So what’s the trick? Chickpea flour. When whisked with a plant based milk, it gets custard-like. Use some good-for-you bread, and fry in vegan butter or coconut oil, and you got yourself a delicious plant-based breakfast!Chili Mac and Cheeze, but I used Aldi’s plant-based Queso rather than make my own.

I tried to lose weight so many times and failed. So what made this time different? Learning that if you fall off the wagon, you don’t have to give up. I would start off great, going in 110%, and feel deprived, so I would give in to cravings, and then just give up! But dust yourself off, and keep going!! I’m not special. I just hung in there. 1/2 c rolled oats
1/4 cup chopped dates
1/2 banana, sliced
2 TB toasted unsweetened coconut.

Just want to tell you guys to surround yourself with people that lift you up, that support you and your goals. You’ll always have that one person that tries hard to bring you down. It’s their own insecurities. Just block it out and do you! No one should EVER stop you from wanting to be healthy and happy if they care about you. Just get out there, and keep pushing!! ❤️Call me Queen of the Chickpea. Here are some ranch roasted chickpeas I made in the air fryer. Drain your beans (save that aquafaba), dry them on paper towels, drizzle in 1 T of olive oil, and coat with some ranch seasoning. I used a half a packet. Then roast at 360 for 12 minutes, shaking half way thru.Dinner tonight...creamy vegan corn chowder. Added a lot more veggies than the recipe called for, including red bell pepper, celery and shredded carrots.

One thing no one tells you when you start your journey is that maintenance in HARD! It’s easy to lose the weight, so much harder to keep it off. But after gaining back 50 of the 105 I had lost, I’m back down. Only 10 pounds to get where I was. The. Struggle. Is. Real. But I’m a fighter. And I feel really good. Don’t ever give up on yourself. I have to say, I’m really proud of myself. I was a chunky kid growing up. I wore “pretty plus” clothes from Sears. They’d give us these physical fitness tests every year and make us run around the school yard. I’d get that stitch in my side and fail every year. Yesterday, I ran my fastest time in 5 years. Pretty crazy to think I’m in better shape now than when I was 12 or 16! You can become physically fit at any age, guys! Just keep workin’ it!One of my contributions to the Thanksgiving table are my mom’s. Vegan pecan pie. Smells fantastic, so if they don’t want to eat it, I’ll bring it back home. 😛

Happy Thanksgiving, friends!! #runfirstthenpieWell, back to work today, and normal eating. Yesterday I ran a bit faster...seems like each run, I’m hitting a personal best, so I’d super happy about that. Then my daughter and I went for a walk together. In total, 3.75 miles. I cooked with my mom. Everyone noticed I lost weight. One plate that I could not finish, and one slice of pie. Now today, it’s Greek yogurt and an apple. Hopefully the scale won’t make me cry tomorrow. LOL. TGIF, friends!!The Fall 5% Challenge is OVER!! And this sums up how things went. My first weigh in was ok, and then I started hitting those weights! Ladies, it’s ok to lift heavy weight. You won’t “bulk up.” But my muscles were sore, and that’s why my weight increased for 2 weeks straight. But then guess what? Your metabolism goes up too! And the pounds come back off! I’m stoked about the end result. I’m running faster and my pants are falling off!

Wow, has this week been a long one, with lots of reflecting included. The last year was a bit rough but I’m grateful for new relationships with wonderful people, many of whom I met here on Spark. They have encouraged, supported, and pushed, giving me a clearer sense of who I am, and what I can accomplish. I am blessed.First run of 2020, and a personal best. I wish Miami had weather like this all year.First meal today is a lower carb vegan banana bread topped with chocolate expresso walnut butter. Great recipe I found on IG...Just mix together:
1 2/3 cup almond flour
1/2 cup coconut flour
1 cup quick oats
4 mashed very ripe bananas
1/4 Almond butter
1 cup unsweetened vanilla almond milk. Pour into a loaf pan and bake at 375 for 45 minutes. That’s it.. no refined sugar!Tonight’s dinner perfect for chilly weather. BBQ Crockpot Lentil Chili. I added a can of chili beans to bulk up the recipe a bit.
I’ve learned over the past decade that the scale is just a tool to help us on our health journey. We focus on being a certain number but how we get there is the key. Focus on long term health and healing, not quick fixes. Each day you make at least 3 choices on what to fuel your body with. If you mess up one, move on. If you mess up the entire day, forgive yourself. With the sunrise comes a new day to make better choices and start over. I’m still all hips. I got a lot of junk in my trunk. But the beautiful part is that I love my body for what it can DO! It doesn’t look perfect (but no one’s is) but it’s healthy and STRONG! So I’m going to embrace my curves that God gave me and run with it. Literally. LOLOk...I did my research and tested a recipe for my Princess Proteina, @stillsparkleigh. My favorite superhero, @gpalmer2019, is always getting on me to eat more protein, so I tried this high protein bread from a vegan bodybuilder on IG. I was skeptical it would taste good, but I LOVED it! Now, understand this is a mini loaf. I subbed poppy seeds for Dijon mustard. The mustard was just weird.

For those asking about halloumi cheese...it a a cheese from Cyprus. First time eating it, and I’m hooked. You fry it in a dry pan. It gets crispy, and chewy but doesn’t melt. It’s salty and briny, and wonderful. 🥰My cat is fascinated with sleeping on clothes, hats included.Beauty is in the eye of the beholder. The lady I care for tells me my overnight oats “look gross.” I think my oats and chia seeds soaked in vanilla soy milk and collagen, topped with orange Greek yogurt is just gorgeous. Packs in 25 grams of protein and does the body good. ❤️So excited they re-opened Aldi a day early afternoon remodeling. Got all my plant-based goodies!! I’m set for a couple of weeks!Bwaaah! Tofu scramble, avocado toast, and berries!Italian Wedding Soup for dinner.Quinoa, brown and red rice chicken salad with green beans.Made these healthy-ish cake bites (no bake!) for my after dinner treat, but really, they’re great as energy bites too.
1 cup almond flour
2 Tb coconut flour
2 Tb Coconut Sugar
1/4 Cup almond butter
1/4 cup almond milk
3/4 cup shredded coconut
1 tsp coconut extract
1/2 tsp almond extract
Roll into 1” balls and place in freezer for 10 minutes. Melt some dairy free dark chocolate with 1 tsp coconut oil and dip your energy bites in. Keep refrigerated.Happy Friday, Spark Friends!! Self-love is hard sometimes, especially when things in your world just isn’t going right. Yesterday was one of those days. But my two best gal pals, @stillsparkleigh and @texashsmomof3, taught me that laughter really is the best medicine. It cures almost anything! True friends see your value and remind you of your importance in this world. First step in self-love is to surround yourself with loving, supportive people.

The life challenges I’m facing has my weight bouncing around like a yo-yo. This is 2.5 pounds down from last week, mostly because I’m so stressed, I feel sick and can’t eat. But I’m so tired of the suffering. One day, things are going to be great, but they often get worse before they get better. We got our hair done and then out to lunch. She chose a little Jamaican restaurant that has the BEST jerk chicken Cajun pasta. Sometimes, we just need a reminder of how far we’ve come!!Just for laughs...Exercise has been lifting boxes and carrying them up stairs. This morning, I went for a walk around the new hood, and met some new friends along the way...just hatched ducklings, broken eggs still present, and a very affectionate tabby that loved belly rubs.Happy Hump Day! I’m still breathing. Trying to stay positive when you feel like you’re living in an episode of Netflix’s Black Mirror. But beauty still exists. I literally pulled my car to the side of the road to take pictures of those hot pink blossoms on the rocks. They are so stunning...and huge! Like the size of the palm of my hand. Gorgeous sunsets and Spring flowers are still a few of my favorite things. 🎶💜🌺🌕Not the typical Easter Sunday, but the power behind the day remains the same regardless of how we honor it.

I am SLOW, but will gradually get my physical strength back. 💪💪Just a beautiful sunset tonight, worthy of sharing.Vegan Chinese ribs. Not bad for my first attempt. Burnt the sauce, had to redo. Found the seitan was a little to elastic to roll out thinner, but still pretty tasty.

These are jerk chicken tacos, and pretty damn phenomenal. I coated my boneless thighs in jerk seasoning and cooked them in the crock pot rather than a grill.

Made the dressing with Greek yogurt and taco seasoning, thinned out with juice from pickled jalapeños. 😛😍Some yummy finds at Aldi today. The sweet corn hummus is crazy good! I bought an avocado, and when it ripens, I’m going to spread that hummus on some Knock Your Sprouts Off toast, and top it with 🥑. Maybe sprinkle some chili powder over the top? Or green onions? Both. 😍😛Pretty long day. I’m pooped. Have a great night’s rest, Spark friends! ❤️Today, my precious kitty, Mia is being put down. Less than a week ago, she started having seizures. Bloodwork has shown nothing, so the vet says she has a neurological disorder that is worsening by the day. Can’t stand watching her suffer any longer. 😭 Three weeks before, Cannoli, our pooch passed also. Too much heartbreak in one month. 💔Happy Friday, Spark friends!!
I saw this tiny mango tree, that was leaning over because it’s branches were so heavy with fruit. Despite its size, it was still capable of holding up those mangoes as they grew. Got me thinking how we can overcome any obstacle, no matter what are size. It’s all about attitude, my friends!! Thank you to every member that took the time to offer their sympathies. It made all the difference. ❤️Made some vegan ramen bowls tonight with cabbage and Beyond Meat. Love that I can buy it like bulk ground beef now.
